Beef stroganoff image

Make a classic beef stroganoff with steak and mushrooms for a tasty midweek meal. Garnish with parsley and serve with pappardelle pasta or rice.

1 tbsp olive oil
1 onion, sliced
1 clove of garlic
1 tbsp butter
250g mushrooms, sliced
1 tbsp plain flour
500g fillet steak, sliced
150g crème fraîche
1 tsp English mustard
100ml beef stock
½ small pack of parsley, chopped

Steps:

  • Heat 1 tbsp olive oil in a non-stick frying pan then add 1 sliced onion and cook on a medium heat until completely softened, around 15 mins, adding a little splash of water if it starts to stick.
  • Crush in 1 garlic clove and cook for 2-3 mins more, then add 1 tbsp butter.
  • Once the butter is foaming a little, add 250g sliced mushrooms and cook for around 5 mins until completely softened.
  • Season everything well, then tip onto a plate.
  • Tip 1 tbsp plain flour into a bowl with a big pinch of salt and pepper, then toss 500g sliced fillet steak in the seasoned flour.
  • Add the steak pieces to the pan, splashing in a little oil if the pan looks dry, and fry for 3-4 mins, until well coloured.
  • Tip the onions and mushrooms back into the pan. Whisk 150g crème fraîche, 1 tsp English mustard and 100ml beef stock together, then stir into the pan.
  • Cook over a medium heat for around 5 mins.
  • Scatter with some chopped parsley, and serve with pappardelle or rice.

We used a marbled, tender piece of ribeye as the star of this comfort food classic. Two kinds of mushrooms are cooked until crispy to add an extra element of flavor. The whole dish is brought together with a rich, tangy sauce made with sour cream and Dijon and served over egg noodles.

1 pound ribeye steak, trimmed of excess fat and cut into 2-by-1/2-inch strips
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
5 tablespoons unsalted butter
1 medium yellow onion, sliced
8 ounces white button mushrooms, quartered
7 ounces shiitakes, caps sliced (stems removed and discarded)
1 tablespoon chopped fresh thyme
1 clove garlic, minced
1/2 cup dry white wine
2 tablespoons all-purpose flour
3/4 cup sour cream
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth or beef stock
10 ounces medium or wide egg noodles
1/2 cup fresh flat-leaf parsley leaves, chopped
1 tablespoon chopped chives, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil.
  • Season the beef with 1 teaspoon salt and a generous amount of freshly ground black pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the beef and cook, untouched, until starting to turn brown in some spots, about 1 minute. Use tongs to flip the pieces and continue cooking until deep golden brown but still undercooked in the center, about 1 minute (the beef will finish cooking in the sauce). Transfer the beef to a bowl and return the skillet to the stovetop on medium-high.
  • Add 1 tablespoon butter to the skillet. Add the onion and 1/2 teaspoon salt and cook, stirring occasionally to scrape up the browned bits in the pan, until the onions are softened, 4 to 5 minutes. Add 2 tablespoons butter, the button mushrooms, shiitakes and thyme and cook, stirring occasionally scraping up any browned bits, until the mushrooms have released some liquid and are starting to crisp up, 5 to 6 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Pour in the wine and bring to a boil. Reduce the heat to medium and simmer until evaporated, about 5 minutes.
  • Sprinkle the flour over the vegetables and stir until incorporated. Fold in the sour cream, Dijon, Worcestershire sauce and 1/4 teaspoon freshly ground black pepper. Pour in the beef broth and stir until smooth. Bring to a simmer and cook, stirring occasionally, until the sauce has thickened, about 5 minutes.
  • Meanwhile, while the sauce reduces, cook the egg noodles according to the package directions for al dente. Drain and toss with the remaining 2 tablespoons butter, the chopped parsley and chives.
  • Fold the beef and any accumulated juices from the bowl into the sauce and cook, stirring occasionally, until the beef is cooked through but still slightly pink on the inside, about 1 minute.
  • Divide the noodles between 4 bowls and top with the sauce and beef. Sprinkle with more chives, if desired.

BEEF STROGANOV (STROGANOFF)

This has been a family favourite for more than 20 years. Lucky it's fast and very easy to make. Serve over mashed potatoes, wide egg noodles or rice so you don't waste any of the sauce. Please use good quality beef. In Australia, I use rump steak. The cooking time isn't long enough for cheap meat to become tender.

4 -6 tablespoons butter
2 medium onions, sliced thinly
12 ounces field mushrooms, sliced thinly
2 garlic cloves, minced
1 1/2 lbs good quality beef, sliced thinly across the grain
1/2 cup water
2 beef bouillon cubes
1/2 teaspoon salt (to taste)
1/4-1/2 teaspoon fresh coarse ground black pepper (to taste)
1 cup sour cream
1 -2 tablespoon Dijon mustard (I use 2)
1/4 cup fresh parsley, chopped (garnish) (optional)

Steps:

  • Melt 2-4 tablespoons of butter in a large pan (that has a lid). Then add the onions, mushrooms and garlic, and saute for a few minutes. Then cover pan, lower heat and simmer until tender (another 5-10 minutes).
  • Remove this mixture from the pan, including all juices, and set aside.
  • Melt the remaining butter in the same pan. Then add the beef strips, and saute until browned. This takes 5-10 minutes.
  • Add the water, stock cubes, salt and pepper, and bring to a boil.
  • Once this boils, cover the pan again, lower heat and simmer 10-15 minutes.
  • Remove lid and add onion-mushroom mixture.
  • Bring to a boil, then reduce heat and stir in sour cream and mustard.
  • Heat until everything is warmed through, but do not boil.
  • Garnish with parsley.

1 top round steaks (simmer about 1 hour and test meat for tenderness) or 1 chuck steak (simmer about 1 hour and test meat for tenderness)
2 tablespoons unsalted butter or 2 tablespoons margarine
1 lb fresh mushrooms, sliced or 2 cans mushrooms
1 medium onion, minced
1 can beef broth
2 tablespoons catsup
1 1/2 teaspoons garlic, minced
1 teaspoon salt (optional)
3 tablespoons flour
1 cup sour cream
1 package cooked wide egg noodles

Steps:

  • cut meat across the grain into 1/2" strips, about 1" long.
  • melt butter in large heavy skillet.
  • Add mushrooms (if using fresh- if canned do not add) and onion.
  • Stir until onion is tender, then remove from skillet and place on side.
  • In same skillet, cook meat until light brown.
  • measure 1/3 cup of beef broth and place on side.
  • Stir in remaining broth, catsup, garlic and salt.
  • Cover and simmer- time depends on cut of beef- see above.
  • Blend reserved broth and flour to make paste.
  • Stir into meat mixture.
  • Add mushrooms and onion.
  • Heat to boiling, stirring for about 1 minute.
  • Let mixture sit to cool down.
  • Slowly stir in sour cream and reheat over medium low flame.
  • Serve over cooked hot noodles.

This is wonderful when you have family that is always late. You can put almost anything you have in your kitchen in it and it will still come out okay. Can also be made by putting all ingredients in crock pot on low for at least 8 hrs.

1 1/2 lbs stew meat (tenderized works best)
1 onion, chopped
3 tablespoons butter
1 jar mushroom
1 can condensed cream of mushroom soup
1 container sour cream, divided
white wine (as needed for taste)
Worcestershire sauce (as needed for taste)
2 teaspoons garlic powder
1 teaspoon pepper
milk (if needed)
flour (if needed)
cooked egg noodles

Steps:

  • Heat butter in large skillet.
  • Add stew meat, cook on med heat until browned stirring often.
  • Take meat out of skillet and set aside.
  • Add onion and saute in the butter until almost clear.
  • Add mushrooms, and cook until onion is clear.
  • Put meat back into pan, add cream of mushroom soup, wine, worstichire sauce, garlic and pepper.
  • Stir constantly until soup turns to liquid.
  • Decrease heat to Low, cover and simmer.
  • This can simmer for 10 min to 4 hrs depending on taste.
  • You can add flour to thicken it or milk to thin it out as needed.
  • When almost finished at half of the tub of sour cream.
  • Serve over cooked egg noodles with the remainder of the sour cream as a topping.

Beef Stroganoff is a recipe that has been around for a long time. I have seen several recipes for stroganoff that are similar and are equally delicious. However, I have come up with a modified version of the original Beef Stroganoff recipe.

2 lbs of cubed diced stewing beef
1 lb fresh egg noodles
3 cups fresh sliced mushrooms
2 Spanish onions, diced
1 cup sour cream
1 cup beef bouillon
1 cup chopped fresh parsley
1 tablespoon garlic powder
1 teaspoon sea salt
1 tablespoon fresh cracked pepper
1 cup sifted flour
3 tablespoons butter
1 cup red wine

Steps:

  • In large skillet add butter, diced onion until butter begins to sizzle, turn temperature down to simmer and allow onion to sauté. After 3 minutes add sliced mushrooms and allow to simmer an additional 8 minutes.
  • In large mixing bowl add bullion, sour cream, flour, garlic, parsley, salt, and pepper, mix all ingredients together well. Add sautéed onion and butter from skillet.
  • Place diced beef cubes in skillet, add an additional 2 tablespoons butter, 1 cup red wine and allow to simmer for approximately 20 minutes or until browned and tender.
  • Add beef cubes and wine mixture to other ingredients and mix well. Add all beef and sauce that you prepared into a large pot and heat for 10 minutes.
  • Cook noodles according to directions. Place noodles on large serving dish put beef and sauce on top of noodles, garnish with additional parsley and serve.

Based on traditional beef stroganoff with extra mushrooms and much less butter, this is my favorite way to use up leftover steak.

1 1/2 lbs piece beef tenderloin (OR 1 cooked NY strip) or 1 1/2 lbs top sirloin steaks, well-trimmed, cut into thin strips (OR 1 cooked NY strip)
1 tablespoon vegetable oil
2 tablespoons butter (use as much or little as you want)
1 onion, finely chopped (~1 C)
1 lb mushroom, thickly sliced (white or cremini)
1 cup beef broth (can sub chix)
2 tablespoons cognac
1 -2 tablespoon Worcestershire sauce
1 cup sour cream or 1 cup whole fat yogurt
2 teaspoons fresh tarragon, chopped
1 tablespoon paprika (optional)
12 ounces wide egg noodles

Steps:

  • Melt 1 T of butter in a large skillet or dutch oven over medium high heat and add strips of beef. Brown on each side being careful not to overcrowd pan, while cooking sprinkle with salt and pepper. If using already cooked steak skip this step. Remove steak to a plate.
  • In the same pan on med-high, add remaining butter and the onions and mushrooms, sprinkle with pepper and sauté until liquid evaporates, about 12 minutes.
  • Cook egg noodles according to directions.
  • Add beef broth, Worcestershire, Cognac and tarragon. Simmer until liquid thickens and just coats mushrooms, about 14 minutes.
  • Stir in sour cream and add meat and any accumulated juices from plate.
  • Serve over cooked egg noodles. Season to taste with paprika, salt and pepper.
