1 ts ONION, CHOPPED OR POWDER
1 pk CORN BREAD MIX **
16 oz CORN, GRN BEANS OR RED BEANS
10 oz TOMATO SOUP OR JUICE
1/2 c PICANTE SAUCE

Steps:

  • BROWN THE GROUND BEEF IN A LARGE SKILLET. DRAIN OFF THE FAT. STIR IN THE CORN OR BEANS, TOMATO SOUP, ONION AND PICANTE SAUCE. POUR INTO A 9 X 13 BAKING DISH. MIX THE CORN BREAD MIX ACCORDING TO PACKAGE INSTRUCTIONS. (USE TWO PACKAGES IF YOU WANT THICK CRUST. SPOON THE BATTER OVER THE BEEF MIXTURE. BAKE AT 350 DEG F. FOR 30 TO 40 MINUTES. This recipe comes from the Fix it and Forget It Cookbook. As written, it would not have turned out! For starters, 1hour on low did nothing to heat it. Second, it barely made 4 servings, so be warned. Third, you had way more biscuits than actual servings. But the flavor mix had potential, so that's why I'm posting it. I'd recommend playing with ingredient amounts and varied seasonings.

1 lb ground beef, browned
16 ounces whole corn, drained
16 ounces red kidney beans, drained
10 3/4 ounces condensed tomato soup
1 cup colby cheese
1/4 cup milk
1 teaspoon minced dry onion flakes
1/2 teaspoon chili powder
1 (10 count) package refrigerated biscuits
2 tablespoons margarine, melted
1/4 cup cornmeal

Steps:

  • Combine browned beef, corn, beans, soup, cheese, milk, onion, and chili powder in slow cooker.
  • Cover. Cook on Low 1 hour (Cook actually on High, check now and then).
  • While cooking, preheat oven according to biscuit directions.
  • Dip biscuits in margarine then roll in cormeal.
  • Bake up to 20 minutes, checking frequently, until browned slightly.
  • Tear biscuits into pieces, top over bowls of casserole.

Another easy great recipe, can't remember where I got it from, but it is a good one, remember trying it when I had some ground beef thawed and didn't know what to make for dinner, and found this, the family loved it. It's one of those dishes you can always put togerther fast, and always seem to have the ingredients handy. I think it was about 5 or 6 years ago. Been making it every since.

1 lb ground beef
1 tablespoon vegetable oil
1 garlic clove
1/2 cup onion, chopped
1/2 cup green pepper, chopped
1 teaspoon salt
1 teaspoon chili powder
1 (16 ounce) can red beans, drained
2 1/2 cups tomatoes with juice, chopped
3/4 cup uncooked rice
3/4 cup grated cheddar cheese
1/4 cup sliced black olives

Steps:

  • Brown beef in vegetable oil with garlic.
  • Add the onion and green pepper;cook until onion is transparent. Drain off fat.
  • In a 2 qt casserole, combine the meat mixture, salt, chili powder, beans, tomatoes and rice.
  • Bake covered at 350 degrees for 30 minutes.
  • Uncover and sprinkle with cheese and olives; bake for 15 minutes more.

1 1/2 lbs ground chuck
1 (16 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
1 package taco seasoning
1/4 teaspoon pepper
1/4 teaspoon salt
1 egg, beaten
1 (12 ounce) container small curd cottage cheese
1 (8 ounce) package monterey jack cheese
1 (8 ounce) package cheddar cheese
1 bag tortilla chips or 1 bag corn chips

Steps:

  • Brown meat and drain, then add tomatoes, tomatoe sauce, taco seasoning, salt and pepper.
  • Simmer 3 minutes.
  • Combine egg and cottage cheese mixing well.
  • Then add to the meat sauce mixing well.
  • In a 9 x 9 or 9 x 13 casserole dish lightly greased, spread 1/2 of the sauce mix in the dish then top with 4 ozs.
  • of monterey jack and 4 ozs.
  • of cheddar cheese and put 1/2 of the chips.
  • Then repeat the layer except put the remaining cheese on top instead of the chips.
  • Bake at 350 degrees for 30 minutes.
