PLAN/PURCHASE
AWESOME SAUCE
4 Tbsp tamari sauce
2 Tbsp fresh clover honey
1 1/2 Tbsp hot sauce, i prefer, frank's
2 tsp dark sesame oil
1 pinch crushed red pepper flakes
2 clove cloves, minced
THE SLURRY
1 tsp arrowroot powder, or cornstarch
1 Tbsp water
THE PORK BITES
10 oz pork tenderloin, cut into bite-size cubes
1/2 c flour all purpose variety
2 large eggs
2 Tbsp water
1 c panko breadcrumbs
1 tsp black pepper, freshly ground
OPTIONAL ADDITIONS
toasted sesame seeds, for garnish
sliced green onions, for garnish
white rice, for plating

Steps:

  • 1. PREP/PREPARE
  • 2. AWESOME SAUCE
  • 3. Gather your ingredients.
  • 4. Add all of the sauce ingredients to a small saucepan, over medium-low heat.
  • 5. Stir the mixture, and bring it up to a light simmer.
  • 6. To make the slurry, mix the arrowroot (or cornstarch), and water together in a small bowl.
  • 7. Add the slurry to the saucepan, and simmer for an additional 5 minutes.
  • 8. Cover the saucepan, and then reduce the heat enough to just keep the sauce warm.
  • 9. Chef's Tip: If your stovetop has a warm setting, use it.
  • 10. THE PORK BITES
  • 11. Gather your ingredients.
  • 12. Combine the flour and pepper in a large plate, or breading pan. Whisk the eggs with the 2 tablespoons of water, and place in another pan. Add the breadcrumbs to a third pan.
  • 13. Coat a piece of pork in the flour.
  • 14. Shake off the excess, and then coat in the egg wash.
  • 15. Shake off the excess, and then press into the panko breadcrumbs.
  • 16. Place on a parchment-lined baking sheet, fitted with a wire rack.
  • 17. Repeat for the remaining pork, and allow them to rest for 15 minutes.
  • 18. Place a rack in the middle position, and preheat the oven to385f (195c).
  • 19. Place the pork bites in the preheated oven, and allow them to bake until fully cooked and beginning to brown, about 25 to 30 minutes.
  • 20. Chef's Note: Keep an eye on them, and make sure they don't turn from golden brown to burnt brown.
  • 21. Remove from the oven, and toss with the sauce.
  • 22. PLATE/PRESENT
  • 23. Serve on a bed of rice for a nice light meal.
  • 24. Pile on a plate, and serve as an appetizer.
  • 25. Garnish with some sliced green onions, and toasted sesame seeds. Enjoy.

A West Indian-style curry, this Trini Roti hails from the deepest regions of the Caribbean. An heirloom recipe gifted to me by Chef Devin Marhue, known in his family as 'Uncle Kalo's Trini Roti'.

1 1/2 pounds of chicken thighs
2 cups plain yogurt
4 cloves garlic, minced
1 tablespoon curry powder
1 teaspoon turmeric
1 teaspoon cumin
1/4 cup cooking oil (corn or sunflower)
2 onions, chopped fine
5 cloves garlic, minced
1 tablespoon ginger, minced
2 tablespoons curry powder
1 tablespoon cumin (or roasted cumin)
2 teaspoons turmeric
2 red birds eye chili peppers, minced
1 teaspoon of salt (to taste)
2 cups chicken stock
1 12-ounce (398 ml) can of coconut milk
2 large potatoes (about 2 cups), peeled & cubed
2 cups taro root, peeled and cubed
1 - 2 tablespoons fresh coriander, chopped
3 cups all-purpose flour
pinch fast-acting yeast
1/4 teaspoon salt
2 teaspoons baking powder
3/4 - 1 cup water (see notation in instructions below)
5 tablespoon vegetable oil (for use as you cook)

Steps:

  • In a bowl, combine yogurt, minced garlic, and spices. Season chicken thighs well with salt before adding them to yogurt curry marinade, and covering to rest in the fridge for eight hours or (preferably) overnight.
  • Remove chicken from the fridge and with hands, wipe away most of the marinade and cut into good-sized strips/chunks and reserve wet and cold. Heat good-sized pot with about half the oil and sweat onions until tender. Add remaining oil, garlic, ginger, spices, and chilies and cook, stirring constantly to prevent burning and create a thick curry paste, allowing flavors to release.
  • Saute the chicken in hot curry paste to seal the flesh, about 5 minutes, then cover with stock and coconut milk and stir to coat and cover. Add potato and taro root and bring to a boil (add water if needed to cover) and reduce heat to a low and simmer - an hour or more.
  • As the sauce thickens check seasoning, add additional heat (chilies) if needed add salt to taste. As roti wraps are finishing, add fresh coriander and stir, removing from heat to serve.
  • In a large bowl sift together flour, salt, yeast, and baking powder, and begin adding water, about a 1/4 cup at a time. Knead in as much water as required to come to a firm dough, then cover with plastic wrap or a clean tea towel and let it rest for about 20 minutes in a warm spot. Note: depending on your flour you may need more water, dough should be springy, not tough.
  • Knead rested dough for about 90 seconds. Divide dough into six even balls, pat or each into a round, flat disk. Move the dough onto a floured surface and roll into round sheets with a rolling pin until they are roughly 10-inches wide and a 1/4 inch thick.
  • Lightly brush flat roti wrap with oil and place on a hot, flat skillet. Cook each side for about 2 minutes until brown bubbles begin to appear. Remove and cool.

2 lbs pork, shoulder
salt, to taste
pepper, to taste
1 tablespoon garlic, minced
1 teaspoon ground allspice
1/4 teaspoon nutmeg
1/2 teaspoon thyme
1/2 cup onion, minced
1 tablespoon olive oil
1/4 cup lime juice, freshly squeezed
1/2 cup chicken stock, optional for sauce

Steps:

  • Trim some but not all fat from pork.
  • Cube pork into bite sized pieces.
  • Toss with all the other ingredients EXCEPT for the stock.
  • Cover and marinate, refrigerated, for up to 2 days or cook right away.
  • Preheat oven to 375 degrees.
  • Put the meat in a roasting pan large enough to hold it in one layer (it will shrink considerably, so a close fit is okay).
  • Roast for about 1 hour, shaking and stirring the meat occasionally, until the meat is brown and crisp on all sides.
  • Remove the meat with a slotted spoon.
  • Serve hot or at room temperature or proceed to the next step to make a quick sauce.
  • Pour off all but a tablespoon or two of the fat, leaving any solids and as much nonfatty liquid behind as possible.
  • Put the pan on a burner over high heat, add the stock, and cook, stirring and scraping the bottom of the pan, until the liquid is reduced by about half and all the solids are incorporated.
  • Pour over the pork bits and serve.

The seasoned noodles are the real star with the crispy pork and other ingredients just there to play back up. It's usually served cold or room temperature, and many versions include either dried or whole cooked shrimp to make it a more substantial meal. I chose to leave the shrimp out of my dish, but please feel free to add them if shrimp are something you like."

1/2 lb ground pork
1 (6 ounce) package rice noodles (bean threads or saifun)
3 green onions, sliced into thin rounds
2 tablespoons roughly chopped cilantro
1 bird's eye chili, ribs and seeds removed, minced (substitute 1/4 teaspoon dried chili flakes)
2 tablespoons peanuts, roughly chopped
2 tablespoons soy sauce
2 tablespoons fish sauce
2 tablespoons sugar
2 tablespoons lime juice (from 1 lime)
chopped peanuts, for garnishing

Steps:

  • Warm a teaspoon of canola oil in a skillet over medium-high heat. Add the pork and cook for 5 minutes, stirring frequently to break the pork into tiny crumbles. Cook for another 3-5 minutes, stirring less frequently, until the pork turns deeply golden and crispy. Set aside.
  • While the pork is cooking, set the noodles in a bowl and cover them with hot water to soak. Let them sit until softened, about 10 minutes or until the pork has finished cooking.
  • Bring a pot of water to a boil. Drop in the noodles and cook for 1-2 minutes, until the noodles are stretchy and tender. Drain and rinse under cool water. Use a pair of kitchen shears to cut the mass of noodles 3 or 4 times: this makes the long noodles easier to eat.
  • Combine the noodles, pork, green onions, cilantro, chili, and peanuts in a large bowl. Whisk together the soy sauce, fish sauce, sugar, and lime juice in a small bowl. Taste and add more of any of the ingredients to suit your tastes, then pour the sauce over the noodles. Use tongs or clean hands to lift the noodles, fold them over, and gradually work the ingredients into the noodles. Let stand at least 15 minutes before serving or refrigerate until serving. Garnish each dish with extra peanuts.
  • This dish is best on the day that it's made. For serving leftovers, make an extra batch of the sauce and add it to the noodles a few teaspoons a time, stirring the noodles until they loosen and become slippery again.
