A Moosewood recipe. I haven't tried it, but this is supposed to be rich and spicy. Don't skip the chopped scallions or chives!

2 cups chopped onions
1 tablespoon peanut oil or 1 tablespoon vegetable oil
1/2 teaspoon cayenne
1 teaspoon grated peeled fresh gingerroot
1 cup chopped carrot
2 cups chopped sweet potatoes (up to 1 cup white potatoes can be substituted)
4 cups vegetable stock or 4 cups water
2 cups tomato juice
1 cup smooth peanut butter
1 tablespoon sugar (optional)
1 cup chopped scallions or 1 cup chives

Steps:

  • Saute the onions in oil until just translucent.
  • Stir in the cayenne and ginger.
  • Add the carrots and saute a couple more minutes.
  • Mix in the potatoes and stock.
  • Bring the soup to a boil and then simmer for about 15 minutes until the vegetables are tender.
  • In a blender or food processor, puree the vegetables with the cooking liquid and the tomato juice.
  • Return the puree to the soup pot. Stir in the peanut butter until smooth.
  • Taste the soup. Its sweetness will depend on the sweetness of the carrots and sweet potatoes. If it is not naturally sweet, add just a little sugar to enhance the other flavors.
  • Reheat the soup gently, using a heat diffuser if needed to prevent scorching.
  • Add more water, stock, or tomato juice for a thinner soup.
  • Serve topped with plenty of chopped scallions or chives.

3 tablespoons cooking oil
2 lbs boneless skinless chicken, cut in cubes
2 tablespoons flour
1/2 teaspoon ground nutmeg
1 tablespoon chili powder
2 onions, chopped fine
2 cloves garlic, minced
1 (6 ounce) can tomato paste
1/2 cup water
1 dash hot pepper sauce (optional)
1 teaspoon salt
1 cup boiling water
1 cup reduced-fat peanut butter
4 cups assorted chopped vegetables, such as zucchini,mushrooms and peppers

Steps:

  • In a large heavy pot, heat oil.
  • Roll chicken in flour and brown in oil with nutmeg and chili powder.
  • When chicken is browned, add onions and garlic, tomato paste, water, hot sauce (if using) and salt.
  • Stir well.
  • Mix the boiling water with the peanut butter and add to pot.
  • Simmer covered over low heat until tender, about 45-60 minutes.
  • About halfway through cooking, add chopped vegetables.
  • If stew is too watery, mix 2-3 tbsp of corn startch with cold water to make a thickening paste and add to stew.
  • Serve over a bed of rice.

3 cups cubed sweet potatoes (1-inch cubes)

1 cup apple juice or 1 cup apricot juice
1 teaspoon salt
1 teaspoon grated peeled gingerroot, fresh
1 tablespoon chopped cilantro, fresh (optional)
2 chopped tomatoes
1 1/2-2 cups chopped okra
1/2 cup natural-style peanut butter

Steps:

  • Sauté the onions in the oil for about 10 minutes. Stir in the cayenne and garlic and sauté for a couple more minutes. Add the cabbage and sweet potatoes and sauté, covered for a few minutes. Mix in the juices, salt, ginger, cilantro, and tomatoes. Cover and simmer for about 15 minutes, until the sweet potatoes are tender. Add the okra and simmer for 5 minutes more. Stir in the peanut butter, place the pan on a heat diffuser, and simmer gently until ready to serve. Add more juice or water if the stew is too thick.

One-pot meals are staples in Gullah-Geechie households, and this dish is a special one to me. West African enslaved people were brought to the Low Country, and with them they brought their indigenous foods like collards, tomatoes, peanuts and rice. This stew has all of those ingredients, and it's delicious served on its own or over rice.

2 tablespoons peanut or canola oil
1 large fryer chicken, cut into stewing pieces
Kosher salt and freshly ground black pepper
1 large onion, diced
4 cloves garlic, minced
1 tablespoon minced fresh ginger
2 chicken bouillon cubes
One 14.5-ounce can tomato sauce
1 teaspoon tomato paste
1 1/2 cups all-natural peanut butter
1 Scotch bonnet pepper, sliced and seeds removed
2 large sweet potatoes, peeled and cut into 1-inch pieces
2 Roma tomatoes, diced
1 small bunch collard greens, stems removed, leaves sliced
Hot cooked rice, for serving, optional

Steps:

  • Heat the oil in a large Dutch oven until hot. Sprinkle the chicken pieces with salt and pepper and cook until browned on all sides, about 20 minutes. Remove the chicken to a plate. Add the onion, garlic, ginger and bouillon cubes to the pot and cook until the onions are translucent, about 5 minutes.
  • Stir in the tomato sauce, tomato paste and peanut butter. Add 4 cups of water and the Scotch bonnet pepper. Return the chicken to the pot. Bring to a boil; reduce the heat and let simmer 10 to 12 minutes.
  • Add the sweet potatoes, tomatoes and collard greens. Cover and simmer until the potatoes are easily pierced with a fork, about 25 minutes. (Remove the Scotch bonnet pepper if someone has a low tolerance for heat.)
  • Serve warm with hot cooked rice, if using.

1 1/2 lbs chicken thighs
1 1/2 lbs chicken legs
2 tablespoons vegetable oil
1 lb beef stew meat, cubed
2 medium onions, chopped
1 green bell pepper, chopped
1 (28 ounce) can tomatoes, chopped
1 teaspoon salt
2 tablespoons ground red pepper or 2 tablespoons red pepper flakes
1 cup peanut butter (smooth kind)
cooked mashed sweet potatoes
cooked rice

Steps:

  • In a large Dutch oven, brown chicken in vegetable oil until golden brown, about 15 minutes. Set aside, reserve drippings.
  • Add beef, onion and green pepper to drippings. Cook until beef is well browned and onion is translucent. Drain off fat.
  • Stir in undrained tomatoes, salt and red pepper. Bring to a boil, reduce heat. Cover and simmer 30 minutes.
  • Add chicken and simmer 20 minutes more.
  • In a small saucepan, melt peanut butter over low heat. Stir into chicken mixture. Return mixture to a boil then reduce heat.
  • Cover; simmer 20 minutes more. Skim off fat. Serve with mashed sweet potatoes or hot cooked rice.

This is a yummy spicy stew, popular in Western Africa, particularly Senegal, Gambia, Mali and the Ivory Coast. Traditionally, it's made with black-eyed peas, but you can sub stew meat (usually chicken or beef) if you like! I was a little bit uncertain about the peanut butter, but it balanced the spiciness really well and gave the stew a creamy texture.

1/4 cup water
1 medium onion, chopped
1 green pepper, chopped
1 (15 ounce) can black-eyed peas or 16 ounces lean stew meat
1/2 cup peanuts
2 -3 cups beef stock or 2 -3 cups water
2 (14 1/2 ounce) cans diced tomatoes
6 ounces tomato paste
1 cup winter squash or 1 cup eggplant, 1/2-inch cubed
1 cup carrot, 1/2-inch cubed
1 cup turnip, 1/2-inch cubed
1 cup celery root, 1/2-inch cubed
2 sweet potatoes, 1/2-inch cubed
1 medium zucchini, sliced 1/4-inch thick
1 teaspoon thyme
2 teaspoons ground ginger
1 teaspoon chili powder
salt and pepper, to taste
3 cups cooked brown rice (optional)
3 bananas (optional) or 1 pineapple, sliced (optional)

Steps:

  • Combine peanut butter and 1/4 cup water.
  • Saute onion and green pepper in a little oil until soft, about 5 minutes.
  • In a large pot, add black-eyed peas (or meat), peanuts, water, beef stock (or water), tomatoes, tomato paste, all vegetables, spices, and peanut butter mixture. Stir well to combine.
  • Simmer on low heat for at least an hour, up to 4 hours, stirring occasionally. You may want to add more water to bring the stew to your desired consistency.
  • Serve over rice. Garnish with bananas or pineapple.
