Steps:
- Mix together first 6 ingredients.
- Add chicken; coat well.
- Heat oil in electric skillet to 375 degrees.
- Fry chicken until lightly browned.
- Removed chicken; drain.
- Drain pineapple, reserving liquid.
- Add enough water to juice to make 1 cup.
- Add 2 T. cornstarch, mixing well.
- Combine pineapple juice mixture and next 4 ingredients in a medium saucepan.
- Bring mixture to a boil.
- Stir green pepper and chicken into sauce; cook until thoroughly heated.
- Serve over rice.

- Spray a non-stick skillet with cooking spray and saute the garlic for about 2 minutes.
- Add the chicken and brown over medium heat.
- Add the carrots, bell peppers, pea pods and celery, and stir fry for about 5-7 minutes (until the carrots soften a little bit).
- In a small bowl, combine the soy sauce and cornstarch; mix. Pour into the skillet, along with the vinegar, pineapple, Splenda and ginger. Stir well and bring to a boil.
- Reduce the heat and simmer for about 1-2 minutes (until the sauce thickens).
- Serve over hot rice, rice noodles or cabbage. (NOT CALCULATED INTO POINTS).

- Cut the raw chicken breast into bite sized pieces.
- Spray your crock-pot with cooking spray.
- Add chicken, garlic powder and onion powder; stir.
- Stir in sweet and sour sauce, pineapple chunks, brown sugar and the 1/4 cup of pineapple juice.
- Cover and cook on low for 6-7 hours.
- Add frozen vegetables during the last 30 minutes of cooking and cook on high.
- Makes four servings at 5 WW pts per serving.

- Combine tomato sauce, sugar, soy sauce, vinegar, cornflour, pineapple and retained juice in a small bowl. Set aside.
- Meanwhile, heat a wok over high heat. Add half the oil and heat for 30 seconds. Stir-fry chicken, chilli, garlic and ginger for 5 minutes or until chicken is browned and almost cooked through. Transfer to a bowl.
- Heat remaining oil in wok over high heat. Stir-fry onion and capsicum for 5 minutes or until softened.
- Return chicken mixture to wok with sauce mixture and sugar snap peas. Stir-fry for 2–3 minutes or until chicken is cooked through and vegetables are tender. Serve chicken with rice and shallots.
