One 15 1/2-ounce can pinto beans, drained and rinsed
3 tablespoons extra-virgin olive oil
1/2 medium onion, chopped
4 cloves garlic, minced
1 teaspoon ground coriander
1/2 teaspoon ground cumin
2/3 to 1 cup chicken broth, homemade or low-sodium canned
Kosher salt and freshly ground black pepper

1 tablespoon chopped fresh coriander (cilantro) (optional)

Steps:

  • Reserve about a third of the beans. Mash the rest of the beans in a medium bowl with a large fork. Set aside.
  • Heat the oil in a medium skillet over medium-high heat. Add the onion, and cook until lightly browned, about 4 minutes. Add the garlic and continue to cook, stirring, until lightly browned. Add the spices and cook until fragrant about 1 minute.
  • Add the mashed beans and half the broth; cook, stirring frequently, until slightly thickened, about 5 minutes. Add the reserved beans and the enough of the remaining broth to loosen up the beans. Simmer until the beans are thick but not pasty, about 2 minutes more. Season with salt and pepper to taste. Stir in the fresh coriander, if desired, and serve.

1/3 cup sour cream
1 Tbsp Valentina hot sauce
1 cup Monterey Jack cheese (grated (or a cheddar/jack blend))

Steps:

  • In a medium sized bowl combine the refried beans, sour cream, and hot sauce.
  • Pour into a glass pie pan or 9x9 dish and bake at 400 degrees for 10 minutes or til its hot and bubbly. Remove and stir well.
  • Top with grated cheese and heat in the oven for 3 more minutes or until cheese is melted.
  • Serve with tortilla chips and with our Restaurant Style Mexican Rice for a complete side dish to any Mexican meals.

When I buy a can of refried beans they never taste as good as restaurant refried bean dip. I found this recipe and it tasted great!

1/3 c sour cream
1 jalapeno, chopped
1/3 c monterey jack cheese, shredded

Steps:

  • 1. Finely chop jalapeno and shred cheese. Sqeeze one fresh lime.
  • 2. Mix refried beans and sour cream.
  • 3. Add all ingredients together and mix.
  • 4. Microwave on high for one minute intervals until all cheese is melted.
  • 5. Serve with your favorite chips, my favorite chips are Juanitas! You can also add some salsa for flavor. My favorite (after many tested) salsa is Herdez! Next to homemade Herdez is the best!

1 ¾ cups dry pinto beans
1 cup diced yellow onion
2 large cloves garlic, chopped
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon celery seed
¾ teaspoon salt
½ teaspoon ground black pepper
⅔ cup fire-roasted diced tomatoes (such as Hunt's®)
½ teaspoon hot pepper sauce (such as Tapatio®)
¼ teaspoon dried Mexican oregano
¼ teaspoon cayenne pepper

Steps:

  • Put the pinto beans in a bowl and cover with 2 inches of water. Soak for 8 hours to overnight.
  • Transfer the beans to a medium saucepan and cover with water by about 1 inch. Add onion, garlic, chili powder, cumin, celery seed, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and let cook for 1 1/2 hours.
  • Use a colander to separate the liquid from the solids. Transfer the solids to a food processor with diced tomatoes, hot sauce, oregano, and cayenne. Blend to desired consistency.

2 cups cooked beans (Use black beans, pinto beans, or bayo beans with a little cooking liquid.)
1/2 cup white onion (finely chopped)
1 finely chopped garlic clove
2 tbsp. cooking oil (regular or olive oil)
a pinch of black pepper
salt 1/2 tsp. + to taste

Steps:

  • Chop the onion. Finely chop the garlic.
  • In a medium-sized pan, heat the oil to medium and add the chopped onion. Cook until the onion becomes transparent.
  • Add the chopped garlic and cook for 1 minute. Do not allow the garlic to brown which will give it a bitter taste.
  • Add the cooked beans with a little bit of the cooking water plus the salt and pepper.
  • Cook for 2 minutes before mashing.
  • Mash the beans to the consistency you prefer.
  • Cook for 5 minutes stirring continually.
  • Turn off the heat and allow the beans to rest for 3 minutes before serving.

1 (16 ounce) jar salsa, divided
1 (1 1/4 ounce) package taco seasoning
1 bunch spring onion, chopped, at least 6 whites only
16 ounces sour cream
8 ounces sharp cheddar cheese, shredded

Steps:

  • Mix together refried beans and 1/4 of salsa.
  • Place mixture in bottom of 8 x 8 glass dish.
  • Pour remaining salsa on top of bean mixture.
  • sprinkle half of taco seasoning or to taste over salsa.

My Authentic Refried Beans are a staple for any Mexican meal, need no pre-soaking, are creamy, well seasoned and I share with you my secret flavor weapon.

1 lb dry pinto beans ((See Note 1))
1 white or yellow onion
1 guajillo chili pepper ((or Ancho, stem and seeds removed))
1 large garlic clove (crushed only)
1/4 cup lard ((See Note 2))

Steps:

  • Pick through dry beans for any rocks or debris. Cover beans with 2 inches of water in a stock pot. Add a quarter onion (save remaining for other use), dried chili and crushed garlic.
  • Bring to a boil, reduce heat to simmer, cover and cook until beans are tender, about 1 1/2 to 2 hours.
  • Remove and discard the onion, chili and garlic. You should have about 5 cups of cooked beans.
  • In a large skillet over high heat melt the lard.
  • Drain beans, reserving about a cup of the bean water. Add the beans to the skillet. Fry for several minutes, stirring.
  • Mash with the back of a spoon or potato masher. Add enough bean broth and continue mashing until your desired consistency. I like mine a little chunky and never purée in a food process. If you do, then by all means do it.
  • Season with some salt and black pepper if needed. Serve with crumbled Cotija or Queso Fresco cheese on top.
