These Weight Watchers Peanut Butter Protein Balls are a healthy Weight Watchers snack idea! Weight Watchers Granola Bites are a filling peanut butter protein ball recipe that is super easy to customize with your favorite add-ins-chocolate chips, raisins, cranberries, flax seed, and more.

2 cups oats (quick oats)
1/2 cup mini chocolate chips
2/3 cup coconut flakes (unsweetened)
1/2 cup peanut butter
1/3 cup honey
1 tsp vanilla extract

Steps:

  • In a large bowl, mix together the oats, chocolate chips, and coconut.
  • Add the peanut butter, honey, and vanilla. Mix well until evenly combined. I prefer to use my stand mixer or a hand mixer for this-stirring by hand never seems to incorporate all of the ingredients well enough for me.
  • Chill mixture in the refrigerator for an hour, then roll out balls about an inch in diameter. Keeping the mixture in the fridge before rolling helps them to roll easier.
  • Store in an airtight container-I prefer the refrigerator!

I was looking for a good-for-you snack. I remembered something my second grade teacher told us (way back when)... if you only had two foods -- peanut butter and milk -- you could survive. This snack contains both. A serving size of 5 peanut butter balls is: 3 WW points and 145 calories. It contains 5 grams of fat (mostly the heart-healthy monounsaturated kind), 6.5 grams of protein, 1.3 grams of fiber, and 17 grams of carbohydrates. You could add fiber by adding unflavored Benefiber in place of some of the powdered milk, or by adding oatmeal, wheat germ or flax meal. You could also boost the protein by adding protein powder. Just keep the liquid / peanut butter / powder ratio the same.

These are a great snack! I use Optimum Nutritions 'Vanilla Ice Cream' protein from GNC. It tastes so good! You can use any vanilla flavor protien, but this is the one I used for this recipe.

1 cup honey
1 cup protein powder
1 cup chocolate chips
2 cups oatmeal
1/4 cup dried cranberries
3/4 cup peanuts

Steps:

  • 1.Mix peanut butter, honey and protein powder.
  • 2.Add 4 cups of any of the additional ingredients. My favorite combo for taste and health factor is oatmeal, cranberries, flax seed, and peanuts.
  • 3.To make the perfect balls, play around with the honey (if it's too dry) and oatmeal, bran, etc (too moist) until the balls hold their shape and aren't too gooey.
  • 4.Now, roll the balls to about 1cm and then refrigerate.
