EASY BAKED FISH WITH LEMON AND HERBS
Easy baked fish with lemon and herbs, a simple and delicious dinner idea you can make in minutes.

Steps:
- Preheat oven to 350F degrees.
- Spray a baking dish with nonstick cooking spray.
- Add fish fillets to the prepared dish in one layer.
- Squeeze the juice from half the lemon over the fish.
- Sprinkle fish with dill, basil, all-purpose seasoning and parsley.
- Slice other lemon half into 4 thin slices and place one on top of each fillet.
- Cover with foil.
- Bake 10 to 15 minutes until fish flakes easily with fork. (Don't overcook of fish will be dry. The thinner the fillets, the quicker they'll cook.)

- If frozen thaw the fish overnight in the refrigerator. Turn on oven and allow to preheat to
- 350º F (moderate). While the oven is preheating: Assemble all necessary ingredients to
- work area. Grate the lemon rind and place in a bowl. Cut the lemon and squeeze. Measure
- 4 tsp and place in a bowl. Measure butter, salt, pepper and Rosemary and add to bowl.
- Microwave or place in oven until butter is melted. Mix well. Divide the fish into 6 servings
- and place in a single layer in a baking dish. Pour the butter seasoning mixture evenly over
- the fish. Bake for 25 minutes or until the fish flakes easily.

- Spray the rack of a broiler pan with nonstick spray; preheat broiler.
- Put the catfish on the prepared rack. Lightly spray the fish with nonstick spray and sprinkle with 1/4 teaspoon black pepper. Broil the fish 5 inches from the heat just until opaque in the center, about 8 minutes. (Tip: To check if the fish is cooked properly, slit the thickest part of fish fillets with a thin-bladed knife. Peek inside; the flesh should be opaque and should flake easily.).
- Meanwhile, whisk the lemon zest and juice, orange juice, capers, oil, oregano, and the remaining 1/4 teaspoon pepper in a small bowl.
- Divide the cucumbers among 4 plates. Top each serving with 1 fillet; drizzle evenly with the dressing.

- In a small saucepan, heat the margarine until hot. Sprinkle with flour, and combine. Cook over low heat, stirring constantly, for 1 minute. Remove from heat; stir in water, wine, and mustard. Return to heat, and bring mixture to a boil; reduce heat and let simmer, stirring constantly, until sauce is thickened. Stir in 1 T lemon juice. Remove from heat and keep warm.
- Sprinkle Tilapia fillets with remaining lemon juice. Spray broiling pan rack with cooking spray. Transfer fish to rack and broil until the fish flakes easily; approximately 5 minutes. Sprinkle fillets with salt, than spoon sauce over fish.
- 4 WW Points per serving.

- Preheat the oven to 180°C, fan 160°C, gas mark 4. Put the potatoes in a large pan and cover with cold water. Bring to the boil, then simmer for 15 minutes until just tender. Drain and set aside to cool slightly.
- Cut a 1m long sheet of baking paper into 4 x 25cm lengths. Carefully lay a fish fillet on one half of each paper rectangle.
