You will not believe that this Jalapeno Popper Chicken only has 226 calories! It's low carb, lightened up, and so so delicious. Super easy to make and always a huge hit!

1.33 lbs. boneless skinless chicken breast, 4 pieces
Salt and pepper
1/4 cup jalapenos, seeded and diced
2 oz. reduced fat cream cheese
3 tbsp. green onions, chopped
1/2 cup reduced fat shredded cheddar cheese

Steps:

  • Preheat your grill or preheat the oven to 425 degrees.
  • Season the chicken with salt and pepper.
  • Grill it for 5-7 minutes per side or until cooked through. In the oven, place the chicken in a baking dish and cook for 25-30 minutes or until cooked through and juices run clear.
  • Meanwhile, mix together the jalapenos, cream cheese, green onions, and cheddar cheese.
  • For the grill - take the cooked chicken and place it on a piece of foil. Spread the cream cheese jalapeno mixture on top and return to grill. Close top with grill for 3-4 minutes until cheese begins to melt.
  • For the oven - remove the baking dish and spread the cream cheese jalapeno mixture over the chicken. Return to oven and cook 8-10 minutes or until cheese I creamy and melted.

¼ cup honey
⅓ cup fresh lime juice
2 tbsp soy sauce
2 tbsp fresh cilantro
3 jalapeno peppers (halved & seeded)
¼ tsp salt
¼ tsp pepper
3 cloves garlic (chopped)
6 6 oz skinless chicken breast ((bone in))

Steps:

  • In a blender, add honey, lime juice, soy sauce, cilantro, jalapeno pepper, salt, pepper, and garlic. Process until blended and smooth.
  • Pour contents of the blender into a ziploc bag. Add chicken to the bag. Seal, place in the refrigerator and let marinate for a minimum of hour or up to 8 hours.
  • Preheat grill
  • Remove the chicken from ziploc and set aside the bag with marinade for later.
  • Coat grill rack with Pam cooking spray. Place the chicken on the grill rack. Cover and grill approx 12 minutes - baste with marinade every once in a while, flip chicken and grill an additional 12 minutes or until done.

This is out of a WW Cookbook called "Quick Cooking for Busy People" It has only 2 WW Points. DH gave it an excellent rating. Hope you enjoy! For a quick meal serve with grilled slices of veggies (zucchini, yellow squash, onion or peppers). For additional flavor, brush vegetables with remaining marinade before placing them on the grill. Cooking time does not include marinating time.

1/3 cup steak sauce (such as Heinz 57)
1/3 cup jalapeno jelly, melted
2 tablespoons low-sodium worcestershire sauce
1 teaspoon garlic powder
4 (4 ounce) boneless skinless chicken breast halves
cooking spray

Steps:

  • Combine first 4 ingredients in a large heavy-duty, zip-top plastic bag.
  • Add chicken; seal bag, and shake until chicken is coated well.
  • Marinate in refrigerator 8 hours or overnight, turning bag occasionally.
  • Remove chicken from marinade, discarding marinade.
  • Coat grill rack with cooking spray, and place on grill over medium-hot coals (350-400 degrees).
  • Place chicken on rack; grill, covered, 5 minutes on each side or until done.

Serve this spicy Southwestern-style dish with a large salad on the side. You could also toss some peppers, eggplant or zucchini onto the grill with the chicken.

0.25 medium Uncooked onion(s) white, chopped
2 tsp Olive oil
0.25 cup(s) Fresh lime juice
1 fl oz Tequila about 2 tbsp
4 medium clove(s) Garlic clove(s) minced
1 tsp Unpacked brown sugar
2 Tbsp Mineral water
0.5 tsp Table salt
1 medium Jalapeño pepper(s) seeded and diced
1 pound(s) Uncooked boneless skinless chicken breast(s) four 4-oz pieces

Steps:

  • Purée onion through to pepper in a blender until smooth. Marinate chicken breasts for at least 1 hour. They can be marinated for several hours, if desired.
  • Heat grill. Pat excess marinade off chicken and grill until cooked through, about 4 minutes per side.
  • Serve with a fresh garden salad.

1 cup salsa
1/4 cup fat free sour cream

Steps:

  • Place chicken breasts and taco seasoning in a seal able plastic bag; shake to coat well.
  • Spray casserole dish with Pam.
  • Place breasts in casserole.
  • Bake 30 minutes at 375 degrees.
  • Top with salsa about 5 minutes before breasts are done.
  • Top with sour cream before serving.

This is another great Jalapeno Chicken recipe by Weight Watchers. It's out of the 2000 "Day by Day" cookbook. It has 3 points per serving. I have done both blender and fine chopping and they are both great. I find the extra bits and pieces by chopping instead of blending adds a great crunch to the dish and makes it look outstanding. 1/3 cup fresh lime juice
1/4 cup honey
2 tablespoons fresh cilantro leaves
2 tablespoons soy sauce
1/4 teaspoon salt
1/4 teaspoon pepper

3 garlic cloves, chopped
6 (6 ounce) skinless chicken breast halves (bone in)
cooking spray

Steps:

  • Place first 8 ingredients in a blender; process until smooth (or chopped them fine).
  • Combine lime juice mixture and chicken in a large, heavy-duty zip-lock plastic bag.
  • Seal bag, and marinate chicken in refrigerator 1 to 8 hours. (I have done over night).
  • Prepare grill.
  • Remove chicken from bag, reserving marinade.
  • Place chicken on grill rack coated with cooking spray; cover and grill 12 minutes on each side or until done, basting occasionally with reserved marinade.

1/2 cup cooked chicken
2 -3 tablespoons jalapeno chiles
4 ounces cream cheese, softened
2 tablespoons green onions (2 medium)
1/4 cup fresh cilantro
1/8 teaspoon salt

Steps:

  • Heat oven to 375°F In a small bowl, mix all ingredients except dough until well combined; set aside.
  • Unroll dough; separate into 2 long rectangles. Place 1 rectangle on long cutting board; press perforations to seal. Spread half of cream cheese mixture on dough rectangle to within 1/2 inch of edges.
  • Starting with one long side, roll up rectangle; press seam to seal. Cut roll into 16 slices; place slices, cut side down, on ungreased cookie sheet. Repeat with remaining dough rectangle.
  • Bake at 375°F for 14 to 16 minutes (or until light golden brown). Immediately remove from cookie sheet. Serve warm.
