BUFFALO CHICKEN SLIDERS
Inspired by a basket of Buffalo wings, these boneless, grilled chicken sliders are slathered in blue cheese dressing and topped with thin ribbons of carrot and celery leaves. Sweet Hawaiian rolls balance perfectly with the spicy orange sauce.

Steps:
- Prepare a grill or grill pan for medium-high heat.
- Toss together the chicken tenders, garlic powder, paprika, 1 teaspoon salt and a few grinds of pepper in a large bowl until coated.
- Brush the grill grates or grill pan with oil. Grill the chicken, turning once, until nicely marked and browned and cooked through, 3 to 4 minutes per side. Transfer to a clean large bowl and toss with the Buffalo wing sauce.
- Arrange the sweet rolls cut-side up on a cutting board or large serving platter. Spread some blue cheese dressing on each roll bottom, then top with the carrot ribbons, chicken tenders, celery leaves and the roll tops. Serve with extra blue cheese dressing on the side.
BUFFALO CHICKEN THIGH SLIDERS
This is my take on a Rachael Ray recipe. I served this with grilled corn on the cob and broccoli slaw for a delicious and super fast Sunday afternoon meal.

- Preheat a grill to medium-high. Pat the chicken thighs dry with a paper towel, drizzle with olive oil and sprinkle generously with Cajun seasoning. Place on grill and cook until cooked through, 10 to 15 minutes.
- While the chicken is cooking, place the butter in a small saucepan with hot sauce. Stir until the butter melts. When the chicken is cooked through, add to the pan, turning several times to coat.
- In a small dish, combine the yogurt, chives, feta and lemon juice.
- Split the rolls, place a chicken piece on the bottom half, top with yogurt dressing and shredded lettuce. Place the top half of the roll on top and enjoy.
WEIGHT WATCHER'S BUFFALO CHICKEN SLIDERS
Hands down, these are the best sliders I have ever had!! The combination of red peppers and onions make them very moist little burgers. With the addition of buffalo sauce making them a little spicy and blue cheese topping, tomato and lettuce puts these in a league all their own!! I made 4 dozen for Memorial Day 2012 and they were a hit with the adults and children. I grilled them up the night before and refrigerated them. Took them to my parents camp and heated them for about 5 -7 minutes in the oven and they were ready. What a fabulous healthy choice for the Grilling season. 8 pts for 2.

- Spray large nonstick skillet or ridged grill pan with nonstick spray and set over medium heat. Add onion, red bell pepper, and water; cook, covered, stirring occasionally, until liquid is evaporated and vegetables are very tender, about 8 minutes.
- Transfer to large bowl and let cool 10 minutes. Add chicken breast, Buffalo wing sauce, Italian seasonings and salt; mix well.
- With wet hands, form into 8 (1/2-inch thick) patties.
- Cover with plastic wrap and chill until firm, at least 1 hour or overnight. [This is important because it helps the chicken sliders to firm up and makes them easy to grill w/o falling apart. The addition of onions & peppers makes them very moist.]
- Take you sliders out of refrigerator and place on the grill (preferably on a grill stone or cover grate with some tinfoil and poke holes) over medium to low heat as they are going to cook very fast. Or you can spray skillet with nonstick spray and set over medium-low heat.
- They need to register 165F on an instant-read thermometer inserted into side of each burger. Should take about 4 to 5 minutes per side. Now make your burgers.
- 6/11/13 ---- It's slider time! I made these tonight and decided to try and melt the cheese on burger which worked well. I did add a shake or two of hot sauce first and then the crumbled bleu cheese.
- 4th of July 2014--Made these for our holiday meal along with yellow dogs and some acini de pepe salad for dessert.
BUFFALO CHICKEN SLIDERS
I created this after searching in vain for shredded chicken buffalo sliders. You can increase or decrease the ingredients to your liking. The amounts are not critical. The chicken needs to be precooked, I recommend recipe#234465, using leftover chicken or rotisserie chicken. Cooking time does not take into account cooking the chicken. - Shred the precooked chicken.
- Over low heat, melt 1 Tablespoon of butter in skillet and add the hot sauce.
- Add the shredded chicken, toss to coat. Note: This will get juicier after it heats up in the skillet with the chicken.
- Cover & simmer on low for 30 minutes until bubbly & hot. Stir occasionally and remove the lid if it gets too juicy and you would like a thicker sauce.
- Assemble the sandwich, UP side DOWN so you don't lose all your toppings!
- To the bottom half of the bun: Add cucumber slices and green onion. Next add blue cheese crumbles and a dollop of blue cheese dressing. Top with the saucy chicken and the top o' the bun!
- Serving suggestion: Celery sticks with blue cheese dressing for dipping on the side. Recipe #496034.

BUFFALO CHICKEN SLIDERS WITH CELERY-BLUE CHEESE SLAW

- To a medium-sized, straight-sided pan, add the butter and melt over medium heat. Once melted, add the buffalo sauce, garlic powder and onion powder and whisk to incorporate. Bring the mixture up to a simmer and stir in the shredded chicken. Turn the heat down to low and let simmer until the chicken is heated through and evenly coated in the sauce, about 5 minutes.
- To assemble: Lay the Hawaiian slider rolls on a clean work surface, cut side-up. Using tongs, transfer the buffalo chicken to the bottom half of the rolls. Top each with celery slaw. Spoon the remaining buffalo sauce on the cut-side of the top buns. Place the top half on and skewer each slider.
- Add all of the ingredients to a medium sized bowl and toss to combine. Refrigerate in an airtight container for up to 3 days.

- For the sauce: In a small saucepan over low heat, mix together everything but the chicken. Let this mixture simmer, stirring occasionally, while you prepare chicken.
- For the chicken: Bring large saucepan to boil. Cut chicken into strips and boil until cooked through. When cooked, put chicken in a serving bowl or dish. Pour sauce over chicken and let sit for a few minutes.
- Variation: Cut chicken into strips. Lightly coat chicken with sauce. Bake in preheated 375 degree F oven for 15-20 minutes, until cooked through. Remove to platter and coat with remaining sauce.
