From the cookbook, "Weight Watchers New Complete Cookbook." The recipe makes 4 servings at 2 points per serving. The photo in the cookbook looks wonderful! This is different from most chocolate dipped strawberry recipes I've seen because it includes a bit of raspberry liqueur. The prep time doesn't include chill time for chocolate to harden.

1/4 cup plus 2 tablespoons semi-sweet chocolate chips
1 1/2 teaspoons raspberry liqueur
1/2 ounce white chocolate, chopped or 2 tablespoons white chocolate chips
2 cups strawberries

Steps:

  • Line a large baking sheet with wax paper. In a small microwavable bowl, combine the chocolate chips, liqueur, and 1 1/2 teaspoons water; microwave on High, stirring twice, until melted and smooth, about 1 1/2 minutes. Holding a berry by the hull, dip the berry halfway into the chocolate; set on the wax paper. Repeat with the remaining berries and chocolate.
  • In another small microwavable bowl, melt the white chocolate in the microwave on high, stirring once, until melted and smooth, about 1 minute. Dip a fork in the white chocolate; drizzle over strawberries. Refrigerate until the chocolate hardens. Serve chilled.
  • 1 serving = 2 points.

Looking for a quick pick-me-up? Try this deliciously simple smoothie. Not a strawberry fan? Go ahead and use an equal amount of any fresh or frozen fruit that strikes your fancy. This recipe is a 2 point value. I found this recipe in Weight Watchers magazine. I have not tried this recipe, but I'm posting it for safe keeping.

1 1/4 cups cold nonfat milk
6 ounces strawberry yogurt or 6 ounces vanilla light yogurt
1 cup fresh strawberries or 1 cup frozen strawberries

Steps:

  • Place all ingredients in a blender in the order listed. Cover and blend on high speed until smooth.
  • Pour into two glasses and serve immediately.

from weight watchers 15 minutes five ingredient cookbook. it says these are great for entertaining because of their inpressive appearance. noone will ever know they were quick and easy to prepare.:) UPDATE: 3-23-09 these are quite tastey! :) cant believe they are only one point! I didnt use the pecans because i dont care for them. if you werent making this weight watchers style you could take the chocolate candy melts or bark and pour some over each top half. :)

25 large strawberries
8 ounces cream cheese, softened, 1/3 less fat
1 teaspoon vanilla extract
3 tablespoons powdered sugar
1/4 cup chopped pecans, toasted

Steps:

  • cut an "X" in the tip of each strawberry, cutting deep but leaving strawberry whole.
  • Place cream cheese and next 3 ingredients in a medium bowl, and beat with a mixer at medium speed until smooth. place mixture in a small zip top plastic bag. seal bag; snip a small hole in one corner of bag.
  • pipe about 2 teaspoons cream cheese mixture into each strawberry.
  • serving size=1 strawberry.

2 teaspoons vegetable oil (I used olive oil)
1 teaspoon Dijon mustard
1/2 teaspoon honey
1 pinch rosemary
pepper
1 (10 ounce) bag spinach, rinsed and torn
2 cups strawberries, hulled and halved
1/4 onion, thinly sliced
2/3 cup aged goat cheese, crumbled

Steps:

  • In a large salad bowl whisk together the dressing ingredients (vinegar - pepper).
  • Add the spinach, strawberries and onion. Toss.
  • Sprinkle with the cheese. Toss.
