BUTTER MINTS
Steps:
- Place butter in the bowl of a stand mixer (or you may use a large bowl and an electric mixer, but the mint dough becomes very stiff so I do recommend using an electric mixer rather than stirring by hand) and beat briefly until creamy.
- Turn mixer to low-speed. Gradually add two cups (250g) of powdered sugar, stirring until combined.
- Add extracts and salt and stir well, until completely combined.
- Add heavy cream and stir, gradually increase mixer speed to medium.
- Turn mixer to low-speed and gradually add remaining 2 cups (250g) powdered sugar until completely combined. Be sure to pause and scrape the sides and bottom of the bowl to ensure all ingredients are well-combined.
- If mixture is still sticky at all, add additional powdered sugar, 1 tablespoon at a time, until no longer sticky and you've achieved a playdough-like consistency.
- If desired, color with food coloring at this point.
- Break off about 1-2 Tablespoons of mint dough and roll between your palms into a ½" thick log. Place on wax paper-lined cookie sheet and use a sharp knife to cut into pieces between ¼-½" long. Repeat until you have rolled and cut all of your dough.
- Allow to sit (uncovered) at room temperature for several hours until dry and then transfer to an airtight container. Keep mints in a single layer with a sheet of wax paper between layers. Mints will keep in a cool dry place at room temperature for up to two weeks or up to a month in the refrigerator.

- 1. Mix all ingredients together with a mixer, add food coloring, until you get the color of your choosing, add flavoring and mix well, turn mixer down to the lowest speed and add powdered sugar 1/2 C at a time.Mix until smooth.
- 2. This is where you find out who your real friends are! :p Roll a ball of mint and dip in sugar, place in the center of the mold and press, pop out mints and place on wax paper to dry, 4-5 days, (flip everyday to dry faster)

WEDDING MINTS
This is my favorite recipe to make Wedding mints. These can be rolled out cut and decorated as desired.

Steps:
- 1. Place cream cheese, powder sugar and salt in bowel.
- 2. Begin mixing with hands till it forms a soft smooth ball. It will all mix in it just takes time.
- 3. Add mint oil with tip of tooth pic a little at a time. It is very strong and easily over done. Taste to adjust flavor.
- 4. Add paste food color of your choice or leave white if desired. Add the food color with tip of tooth pic also color is very concentrated and only takes a little. (I leave mine white because I will Pipe a decoration later).
- 5. Scatter a little corn starch on a flat wax paper covered surface and roll the mints out to about 1/8 inch thick. Use top of empty medicine bottle and cut circles out of mints. Re role the Mints between the circles till all is used up. Method 2 is roll the mint into 1/2 inch logs and cut across the log 1/2 inch lengths to make mint pillows. Then allow to dry 1-4 days.
- 6. Set mint circles aside to dry. Drying may take 1-4 days. Or you may begin to decorate with butter cream frosting and then allow to dry.. Mints will dry to a hard melt in your mouth texture.
