Forty years ago, in an early collection of Southern Living vegetable recipes, the "Final Touches" chapter included clever twists on classic sauces and festive relishes along with novelties such as chive-blossom vinegar and tarragon-herb butter. In defense of the old-school recipes in the preceding chapters, we offered this introduction: "Southerners have never apologized for cooking their green beans 'to death,' but it is not widely known that properly motivated we can cook them as crunchy as the most sophisticated chef can and dress them in many ways, from herb-buttered to hollandaised to amandined. It is just that we may want to cook them half a day with salt pork or ham hocks if we are alone with the home folks; and that is a preference that bears no relationship to ignorance." As much we love all the new crunchy, barely blanched, paired-with-walnuts-and-feta green bean creations (and we truly do), there's still something so wonderful about the way a hambone broth infuses old-fashioned Southern-style green beans with a salty, meaty smokiness.

3 pounds fresh green beans, trimmed
1 (1/2-pound) ham hock
5 cups water
2 teaspoons table salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Remove the strings from the beans, and cut the beans into 2-inch pieces. Wash the beans thoroughly.
  • Place the ham hock and 5 cups water in a Dutch oven; bring to a boil. Reduce heat, and simmer 1 hour. Add the beans, salt, and pepper; cook, stirring occasionally, 30 minutes or until tender.

1 tablespoon vegetable oil
8 ounces country ham, ripped into small shards
1 1/2 pounds green beans, trimmed and halved
2 1/2 cups low-sodium chicken stock
1/2 teaspoon freshly cracked black pepper
1/2 teaspoon kosher salt

Steps:

  • Place a large nonstick skillet over medium heat. Pour in the vegetable oil. Spread the ham in the skillet in a thin layer. Cook, stirring occasionally, until it turns brown and crispy. Remove half of the ham shards from the skillet and place on a paper-towel lined plate. Leave the remaining ham and any fat that has rendered in the skillet.
  • Add the green beans, chicken stock, pepper and salt to the skillet. Reduce the heat to medium-low and simmer, stirring occasionally, until the stock reduces and darkens in color and the beans are soft but hold their shape, about 30 minutes. Pour into a serving platter and sprinkle with the reserved crispy ham.

6 slices bacon, chopped
3 tablespoons butter
1 red onion, chopped
2 pounds fresh green beans, trimmed and snapped
8 small new potatoes, diced
1 large clove garlic, minced
¼ cup chicken broth
1 ½ teaspoons white balsamic vinegar
salt and pepper to taste

Steps:

  • Place the chopped bacon in a skillet, and cook over medium heat, stirring occasionally, until evenly browned, 8 to 10 minutes. Drain the bacon pieces on a paper towel-lined plate.
  • Melt the butter in a skillet with a lid over medium-low heat, and cook and stir the onion until translucent, about 5 minutes. Stir in the cooked bacon, green beans, potatoes, garlic, and chicken broth. Bring to a boil, cover, and simmer over low heat until the green beans are tender, about 10 minutes. Sprinkle with vinegar, salt, and pepper, and serve.

  • Add pancetta and toss for 1-2 minutes.
  • Add Libby's® Cut Green Beans Pouches and diced potatoes. Add brown sugar, cayenne, pinch of salt and black pepper.

These are FANTASTIC! This recipe was revised from an old family favorite! My southern roots come through on this one! Either way the beans end up melting in your mouth and the cooked bacon adds more flavor! REALLY tasty! Good for cookouts or to compliment any meal!

1 (16 ounce) bag frozen green beans or 2 (14 ounce) cans green beans, do not drain
4 -6 slices bacon
1 large onion, sliced large chunks
1 dash red pepper flakes (optional)
salt and pepper

Steps:

  • Put green beans in pot- if canned add juices, if frozen add water enough to see but not cover beans- cook on medium heat.
  • Fry bacon until cooked but not too crisp- drain on paper towel.
  • Cut onion in large (thick) slices and break rings apart in to beans.
  • Crumble or rip bacon apart add to beans.
  • Add spices to taste.
  • Let cook for a few hours on low heat.
  • If want to serve sooner- turn heat up and cook until water boils down.
  • OR can put in crockpot on low all day long and let simmer.

4 lbs fresh green beans, trimmed and snapped into 1 1/2 inch pieces
1 ham hock
1 onion, chopped
2 garlic cloves, finely chopped
1/4 cup distilled white vinegar
1 tablespoon salt
1/2 tablespoon black pepper

Steps:

  • Place the water in a large pot, and mix in the green beans, ham hock, onion, garlic, and vinegar. Season with salt and pepper. Bring to a boil, and cook 10 minutes.
  • Reduce heat to low, and simmer 4 hours. Remove the ham hock, and slice the meat into small pieces. Return meat to the beans, and serve.

3 -4 slices bacon
1/2 onion, sliced
4 -5 tablespoons prepared mustard
1/4 cup brown sugar

  • Cut bacon strips in half and brown, drain most but not all the fat.
  • Add the onions and saute in a bit of the bacon fat until just soft.
  • Add the green beans, mustard, brown sugar and garlic.
  • Stir well
  • Simmer on low for at least 20 minutes.

Steps:

  • Snap the Green Beans and wash.
  • Place bacon in the bottom of the pot and let fry until a little crunchy.
  • Remove the Bacon and pour the bacon dripping from the pot (leave some drippings in the pot for flavor). Don't scrap the pan because you want the flavor of the bacon and the dripping to season your green beans.
  • Place the green beans, and the other ingredients into the pot with the Bacon
  • Cook until the green beans are soft. About 1 1/2 hour on low.
