WEDDING CAKE COOKIES
Steps:
- Preheat oven to 350 degrees F.
- In a medium bowl, whisk together flour, salt, and baking powder. In a large mixing bowl, combine the butter and sugar with a hand mixer until fluffy, about 2 minutes. Add the eggs, 1 at a time. Add the vanilla and mix well. Add the flour mixture and mix with a spatula until a ball of dough forms. Transfer dough to a well floured work surface and cut in half. Place waxed paper over half of the dough and roll out to about 1/4-inch thick. Transfer the other half of the dough to the refrigerator to keep cold until ready to use. Using cookie cutters, cut the dough into various shapes and put on a parchment lined cookie sheet. Repeat with the other half of the dough. Bake for 11 to 13 minutes. Leave on the cookie sheet to cool. Decorate with royal icing, fondant, or cookie glaze.

Steps:
- In a food processor or blender, process pecans with 1/4 cup of the powdered sugar, until very fine. Mix in flour, cocoa and salt & set aside.
- In a large mixing bowl, cream butter with 3/4 cup of the powdered sugar; Blend until light and fluffy. Beat in vanilla until well blended.
- Add flour mixtureslowly, until well mixed. Cover and refrigerate for 2 hours.
- Preheat oven to 350°F.
- Form dough into 1-inch balls and place on ungreased cookie sheets.
- Bake until golden, 18 to 20 minutes.
- Mix together remaining 1/2 cup powdered sugar and cinnamon. When cookies have cooled slightly, roll in cinnamon mixture. Finish cooling on wire racks.
- Makes 36 cookies.

This is a recipe that my oldest daughter received in H.S. in Spanish class. Depending on your mood, likes or dislikes, you can add a 1/2 cup finely chopped walnuts or not.

Steps:
- Crème the butter with the cup of sugar and vanilla.
- Mix flour, nuts, and salt.
- Add the mixture of flour, and salt to the butter.
- Form small balls.
- Put on un-greased cookie sheet.
- Bake at 325 degrees F for 20-25 minutes or until lightly brown.
- Roll in confectioner's sugar while the cookies are still warm.
- Enjoy!

RUSSIAN WEDDING CAKES
These aren't really cakes - rather small, cake-like cookies. My cousin makes these constantly (much to the delight of the rest of the family)! These are so so so addictive! And for looking so delicate they are surprisingly easy.

Steps:
- Mix all ingredients thoroughly (if you find it easier to cream the sugar and butter first go ahead but it isn't necessary if you don't want to take the extra step).
- Shape dough into 1 inch balls and place on ungreased baking sheet. Bake for around 8 minutes (they burn easily) on middle rack at 400 degrees until set but not brown.
- While warm, roll in confectioner's sugar. Let cool, and roll in sugar again.
TRADITIONAL MEXICAN WEDDING COOKIES
My mom and I have been baking these for as long as I can remember. They are delectable butter-type cookies served as favors at traditional Mexican weddings. They also make a wonderful addition to any Christmas goodie platter.

Steps:
- Cream together butter and powdered sugar until light and fluffy; stir in vanilla.
- Whisk together flour and salt; add gradually to butter mixture; stir in chopped nuts.
- Chill dough if it seems too soft.
- Form dough into 1 1/4" balls and place onto parchment-lined or ungreased baking sheets.
- Bake at 400° for 10-12 minutes or just until the cookies start to turn light golden-brown; remove from oven and allow to cool slightly; while cookies are still warm (but NOT hot) remove them from baking sheets and roll, a few at a time, in powdered sugar until evenly coated; cool cookies completely on wire racks.
- Cookies may (optionally) be rolled in powdered sugar a second time once cooled to room temperature.
- NOTE: Forming dough into 1" balls will increase yield to 48 cookies.
