This easy crustless bacon quiche is brimming with the flavor or bacon and cheese, plus a healthy dose of broccoli and fresh herbs. It is ready to cook in just minutes and is sure to become a favorite breakfast recipe with your family.

5 pieces of bacon
5 cups of broccoli florets
1/2 cup of shredded cheddar cheese ( I used extra sharp)
5 large eggs
1 cup of 2% milk
1 tablespoon whipping cream
1/4 cup of grated fresh Parmesan cheese
1 tablespoon of fresh basil
1 teaspoon fresh oregano
1 teaspoon fresh thyme
1/2 teaspoon nutmeg
1/2 teaspoon of sea salt
1/4 teaspoon of cracked black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the bacon in a non stick pan over medium heat until it is brown and crispy. Remove to paper towels to drain. Strain off most of the bacon fat but leave about a tablespoon of the fat in the pan.
  • Add the broccoli florets to the pan with the bacon grease and cook gently for 2-3 minutes.
  • Spray a quiche pan or pie plate with non stick cooking spray. Add the broccoli to the pan.
  • Top with 1/2 of the cheddar cheese and crumble the bacon over the top.
  • In a medium bowl, combine the eggs, Parmesan cheese, 2% milk, cream seasonings and fresh herbs. Whisk well and pour over the broccoli and bacon mixture. Sprinkle the remaining cheddar over the quiche.
  • Bake the crustless quiche in the preheated oven for 50-55 minutes or until the center is puffed and golden brown.
  • Allow the quiche to cool slightly and then cut ii into 8 pieces and serve.

4 oz. shredded medium cheddar, divided ($0.95)

Steps:

  • Take the broccoli florets out of the freezer so they can begin to thaw. Place the bacon in a skillet and cook over medium-low heat until very brown and crispy. Transfer the bacon to a paper towel lined plate to drain and pour off most of the grease out of the skillet.
  • Turn the heat under the skillet up to medium-high and add the broccoli florets. Sauté them in the residual bacon grease until they are no longer frozen. Transfer the broccoli to a cutting board. Roughly chop the florets into smaller, bite-sized pieces.
  • Begin preheating the oven to 350ºF. In a medium bowl, whisk together the eggs, milk, Parmesan, and seasoning salt.
  • Coat a 9-inch pie plate in non-stick spray (or butter, if you prefer). Place the chopped broccoli in the dish along with half of the shredded cheddar. Crumble the bacon over top. Stir the broccoli, cheddar, and bacon together.
  • Place the pie plate on a baking sheet for easy transport in and out of the oven. Pour the egg and milk mixture over the bacon, broccoli, and cheddar in the dish. Top with the remaining shredded cheddar.
  • Bake the crustless quiche for 50-55 minutes, or until the center is puffed and it is golden brown around the edges. Let the crustless quiche cool slightly before slicing into eight pieces and serving.

4 slices bacon, chopped
6 eggs, beaten
1 cup half and half (or whole milk)
1 cup shredded cheddar cheese
1/3 cup cooked, chopped broccoli

Steps:

  • Preheat oven to 375 degrees.
  • In a cast iron skillet or other oven safe, skillet, cook bacon until crispy. Remove pan from heat. With a slotted spoon, remove cooked bacon to drain on a paper towel. Remove grease from the pan and discard or set aside for another use.
  • In a large bowl, combine eggs and half and half. Add bacon, broccoli and shredded cheddar cheese. Stir to combine. Add egg mixture to skillet.
  • Cook in the oven for 45 minutes or until eggs in the center are set. (If it appears to be browning too quickly, cover with foil.
  • Allow to cool slightly before cutting into wedges to serve.
  • Cook bacon and drain. Allow to cool.
  • In a large bowl, combine eggs and half and half. Add bacon, broccoli and shredded cheddar cheese. Stir to combine.
  • Place bacon and egg mixture in a gallon sided ziplock bag. Seal tightly (you may want to double bag). Be sure to label!
  • Place flat in the freezer until ready to thaw and cook
  • Thaw in the refrigerator 12-24 hours. Preheat oven to 375 degrees. Add thawed egg mixture to an oven proof skillet and cook for 45 minutes or until eggs in the center are set.

1 1/2 cups whole milk
3/4 cups bisquick or other baking mix ((or flour + 1 teaspoon baking powder))
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 cup grated parmesan cheese
16 oz. steamed broccoli florets (cut into small pieces (about 2 cups))
8 oz. shredded cheddar cheese ((about 2 cups))
chopped bacon or ham (optional, see notes)

Steps:

  • Preheat oven to 350 and grease a quiche or pie dish (or baking dish up to 9x13 inches) with butter or oil. Place prepared dish on a rimmed baking sheet lined with foil, just in case of overflow while baking. Set aside.
  • In a large bowl, whisk the eggs (4), milk (1.5 cups), bisquick (3/4 cup), kosher salt (1/2 teaspoon), and black pepper (1/2 teaspoon) until well combined.
  • Stir in the grated parmesan cheese (1 cup), the steamed broccoli florets, and the shredded cheddar cheese (8 oz./2 cups).
  • Pour batter into greased dish and bake (on a foil covered baking sheet in case of overflow) for about 60 minutes or until golden brown on top and set (it shouldn't jiggle when you shake it).

1/2 cup half-and-half

Another of my daughter Andrea's recipes which she is allowing me to publish. For Thanksgiving, she decided to make a quiche just to be a little different. There may be other recipes out there that are similar but I promise that this recipe came out of her own imagination and a bit of discussion with me around the kitchen counter. Tell you what, this turned out great!

1 pie crust (Unbaked for a 9-inch or 10-inch pie plate)
1 1/2 cups cheddar cheese (Shredded. Andrea used mild cheddar)
8 ounces powdered cheese sauce mix
1/4 cup white onion (chopped)
1 tablespoon minced garlic
1 lb bacon (chopped and cooked until almost crisp)
5 large eggs (Slightly beaten. Maybe 4 - some "large" eggs are larger than others)
2 1/2 cups half-and-half
1/8 teaspoon sage
1/8 teaspoon greek basil
salt and pepper

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Chop and steam broccoli for 5 minutes.
  • 3. Cook the bacon and remove just before it becomes crisp, set aside. Save 2 tablespoons of the bacon grease in the frying pan.
  • 4. Saute onions and garlic in the 2 tbs. of bacon grease until onions are soft and translucent.
  • 5. Slightly grease the pie pan and place the pie crust inside. Crimp and flute the edge of the crust so it is above the rim of the pie pan.
  • 6. Place pie pan on a large cookie sheet. Quiches are notorious for bubbling over and the cookie sheet will save you from having to scrape burned cheese off the bottom of your oven.
  • 7. In a medium bowl, mix cheese sauce, half-and-half, beaten eggs, salt, pepper and herbs, set aside.
  • 8. Spread the shredded cheddar on the bottom of the pie shell in a single layer.
  • 9. Add the bacon on top of the cheese in a single layer.
  • 10. Add the garlic and onion spreading it over the beacon as evenly as possible.
  • 11. Layer the broccoli on top.
  • 12. Pour the cheese/egg/milk mixture over the top until everything is well covered.
  • 13. Bake in the oven for 45 to 60 minutes or until a knife inserted in the center comes out clean.
  • 14. Let it cool on a wire rack for 15 minutes and serve.

1/2 lb bacon, fried crisp and crumbled (about 12 slices)

4 eggs
2 cups heavy cream
3/4 teaspoon salt

  • Heat oven to 425°.
  • Prepare pastry for one-crust pie (if using mix or homemade crust recipe) and bake as directed in 9" pie plate or quiche pan.

1/3 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1/2 tsp. dried thyme leaves
1 pkg. (7 oz.) KRAFT 2% Milk Shredded Cheddar Cheese

Steps:

  • Heat oven to 325ºF.
  • Reserve 2 Tbsp. each onions and tomatoes for later use. Cook bacon in large skillet until crisp. Remove bacon from skillet; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
