- Combine the cubed watermelon with the tequila, lime juice, orange liqueur, confectioners' sugar, salt and ice in a blender. Blend until smooth. Divide among glasses; garnish each glass with 1 lime slice and 1 watermelon wedge.
WATERMELON MARGARITA
Steps:
- In a blender, puree the watermelon and sugar until smooth. Pour the puree through a fine mesh strainer. Transfer the liquid to a pitcher and add the lime juice, tequila and 4 ounces of the Triple Sec. Stir to combine.
- In a shallow dish, combine the kosher salt with the chili powder. In a second small plate, add the remaining 1-ounce of Triple Sec. Dip the rims of 4 margarita glasses in the Triple Sec, then coat them in the salt and chili mixture. Divide the margarita between the 4 glasses and garnish each with a lime wedge.
WATERMELON MARGARITAS
To create salted glasses for these watermelon margaritas, place 1 tablespoon fresh lime juice on a small plate, and 1/2 cup coarse salt on another. Dip rims of four glasses in lime juice, then in the salt to coat.

- In a small saucepan, bring sugar, water, and orange zest to a boil over high. Reduce to a simmer and cook until sugar dissolves, 3 minutes. Let syrup cool in a bowl. In a blender, puree watermelon cubes until smooth. Strain through a fine-mesh sieve, pressing on solids, into a pitcher (you should have about 1 cup juice). Stir in syrup, lime juice, and tequila. Fill salt-rimmed glasses with ice, then pour margarita mixture over top. Garnish with lime wedges.
WATERMELON MARGARITA
Mixing cocktails may seem intimidating, but it's actually quite intuitive once you understand how to balance the alcohol, sweetness and acidity. In "3-Ingredient Cocktails" (Ten Speed Press, 2017), Robert Simonson presents the formula for a perfect margarita: 1½ ounces tequila, 1 ounce Cointreau and 3/4 ounce lime juice, shaken and served. Even easier to memorize, this version uses 6 ounces fresh watermelon juice - a sweet but subtle nod to summer - and 2 ounces each tequila, Cointreau and lime juice. Be sure to taste and add more watermelon juice if your margarita is too boozy, and extra lime juice or even a pinch of salt if it's too sweet.

- Prepare the salted rim, if using: In a small shallow bowl or plate, combine the sea salt and Tajín. Set aside.
- In a shaker filled with ice, combine the watermelon juice, tequila, Cointreau (if using), lime juice and jalapeño (if using). Shake to combine. (Note: The watermelon flavor shines brighter without the Cointreau, but the liqueur takes the drink into more traditional margarita territory. If you'd like to compare, first try the mixture without, the liqueur, then add 1 ounce of it per serving.)
- Using one of the squeezed lime halves, run it along the rim of two rocks glasses, then dip the rims into the salt mixture. Fill the glasses with ice, then strain the margaritas into the glasses and enjoy immediately.
WATERMELON-BASIL MARGARITAS
This came from an old issue of Martha Stewart Living...can't remember just which one. This recipe takes some time and effort, but feels so decadent with the watermelon "ice" cubes, it's totally worth the trouble. Nice on a summer afternoon to sip one of these on the deck and imagine that Martha might unwind in the same way...LOL!

- Place 24 watermelon cubes on a baking sheet lined with parchment. Cover and freeze at least 1 hour, or up to 2 days.
- Puree remaining watermelon and the sugar in a blender until smooth. Pass through a sieve lined with cheesecloth into a bowl. You should have 3 cups.
- Place tequila and basil in a glass pitcher and crush with a wooden spoon. Stir in watermelon juice and triple sec.
- Place watermelon "ice" cubes in glasses. Using cocktail shaker, mix 3/4 cup margarita with 1 cup ice. Strain into a glass. Repeat. Serve garnished with basil.

- Bring 1/2 cup sugar, water, and orange zest in a small saucepan to boil, stirring constantly. Simmer until sugar is dissolved, about 3 minutes. Remove simple syrup from heat and allow to cool completely.
- Place watermelon in a blender or food processor. Pulse until pureed.
- Stir watermelon puree into a large pitcher with simple syrup, tequila, and lime juice.
- Place a small amount of salt or sugar into a saucer. Rub edge of margarita glasses with a lime wedge to moisten. Lightly dip the rim of the glass into the saucer to rim the glass; tap off excess salt or sugar.
- Fill rimmed glasses with crushed ice; pour margarita mixture into glasses and garnish with lime wedges to serve.

- Cut 1 lime into 12 wedges; reserve for garnishes. If desired, coat the rim of each glass with sugar: Cut remaining lime into wedges. Using these wedges, moisten the rims of 12 margarita or cocktail glasses. Sprinkle sugar on a plate; hold each glass upside down and dip rim into sugar. Discard remaining sugar., Place half the watermelon in a blender; cover and process until pureed (this should yield 3 cups). Add half each of the following: ice cubes, tequila, Triple Sec and lime juice. If desired, add sugar to taste. Cover and process until blended., Serve in prepared glasses. Repeat with remaining ingredients. Garnish with reserved lime wedges.
