2 quarts apple cider
2 cups orange juice
2 cups pineapple juice
1/2 cup sugar
1/2 cup lemon juice
12 whole cloves
4 cinnamon sticks (3 to 4 inches)
Optional: orange slices and cranberries

Steps:

  • In a large Dutch oven, bring the first seven ingredients to a boil. Reduce heat; simmer, uncovered, until flavors are blended, 10-15 minutes. , Strain and discard cinnamon and cloves. If desired, garnish with orange slices and cranberries. Serve warm.

4 cups apple juice
4 cups orange juice
2 cups cranberry juice
1 can (11.3 ounces) pineapple nectar
1/2 cup sugar
2 teaspoons lemon juice
3 to 4 cinnamon sticks (3 inches)
8 whole allspice
8 to 10 orange slices
Optional: Apple slices and fresh cranberries

Steps:

  • In a 5- or 6-qt. slow cooker, mix the first 6 ingredients. Place cinnamon sticks and allspice on a double thickness of cheesecloth. Gather corners of cloth to enclose seasonings; tie securely with string. Place spice bag and orange slices in slow cooker. Cook, covered, on low 4-5 hours to allow flavors to blend., Discard spice bag and orange slices. If desired, top punch with apple slices and cranberries. Serve warm.

I was given this recipe when touring a home in our community that was presented in full period costume and celebration for the Christmas holiday. In 1821 a German settler brought to the area the first tree for decorating, presented the traditional Yule Log ceremony and offered Wassail Punch.

1 tablespoon whole cloves
6 cinnamon sticks
3 tablespoons chopped crystallized ginger
3 ¾ cups white sugar
2 quarts water
2 quarts orange juice
2 cups lemon juice
1 gallon apple cider

Steps:

  • Wrap the cloves, cinnamon stick, and ginger in cheese cloth, and tie with string.
  • In a medium saucepan, combine sugar, water and spice bag. Simmer and stir until sugar dissolves. Remove from heat, and refrigerate overnight.
  • Before serving, stir in the orange juice, lemon juice, and cider. Reheat over medium low flame, and serve warm. Be careful not to boil.

1/2 inch fresh ginger root, peeled and sliced

12 whole white peppercorns
1 gallon fresh apple cider

10-12 ounces bourbon
Tools:
cheesecloth, kitchen string, large pot

Garnish:
ground nutmeg and 1 cinnamon stick per drink

Steps:

  • To make the wassail, wrap the cloves, allspice, ginger, cinnamon sticks, and peppercorns in cheesecloth and tie with kitchen string. Combine the cider, cranberry juice, brown sugar, and spice bag in a large pot over high heat. Bring to a boil, then reduce heat and simmer 30 minutes.
  • For each serving, put one ounce of the bourbon into a mug and fill it with hot Wassail. Garnish with a dusting of nutmeg and a cinnamon stick.

This is the perfect cozy comforting fall drink! It's made with robust cider, tangy orange juice and sweet pineapple juice. Then add honey to taste (I like 2 Tbsp) and don't leave out those flavorful seasonal spices. They really make this drink!

1 (46 oz) can pineapple juice
2 Tbsp honey ((optional, or to taste))
2 3-inch cinnamon sticks
2 tsp cloves

Steps:

  • In a large pot (at least 6 quarts or larger) whisk together apple cider, pineapple juice, orange juice and honey. Add cinnamon sticks and cloves.
  • Bring to a boil over medium-high heat then reduce heat to low, cover and let simmer 30 minutes.
  • Strain and serve warm. Garnish if desired (see notes).

6 cinnamon sticks
16 whole cloves
1 teaspoon allspice
2 (6 ounce) cans frozen apple juice concentrate
2 cups cranberry juice
1/4 cup sugar
1 teaspoon bitters
1/4 cup rum

Steps:

  • Place the cinnamon sticks, cloves, and allspice in the center of a large paper coffee filter. Fold the ends over and roll up burrito-style. Tie closed with dental floss or thread, leaving long ends.
  • Mix apple juice concentrate with water as directed on can (you should end up with 6 cups of juice).
  • In a saucepan combine apple juice, cranberry juice, sugar, and bitters. Bring to a boil. Tie the ends of the "spice bag" string to the middle of a wooden spoon and lay the spoon over the top of the pot so that the "spice bag" hangs in the juice without touching the bottom of the pot. Reduce heat and simmer at least 10 minutes.
  • Remove from heat and add rum.
  • Once I've made the wassail and added the rum, I pour this into a crock pot on low temp so that the warm wassail can be served up throughout the evening!

2 cups of Kentucky Bourbon (we add at last-but you can simmer all together-your choice)

2 tablespoons Friends Drift Inn Orange Marmalade
2 tablespoons Friends Drift Inn Apple Butter
2 Oranges studded with Whole Cloves
3 medium Apples

Steps:

  • Slice oranges into rounds (halves if doing stovetop and snifters method).
  • id="instruction-step-2″>2. Using paring knife, make small incisions in orange skin and press whole cloves in.
  • id="instruction-step-3″>3. Slice apples - either in wedges or in thin rounds. (We usually add a few slices to the simmering pot-but reserve raw sliced apples for garnish-so guests get crunch apples not soggy ones)

Learn how to make wassail cocktails with real apple cider, ginger, lemon, spices and, of course, bourbon. Wassails are perfect for warming up on cold days! Recipe yields 4 to 6 cocktails, depending on how much of the warm cider mixture you use per drink.

4 cups apple cider (or unfiltered apple juice, doctored up with warm spices like cinnamon, nutmeg and allspice)
1/2 inch nub of fresh ginger, peeled and grated or finely minced
2 lemons, sliced
1 cinnamon stick
3 star anise (optional, but they're pretty!)
1/2 vanilla bean, slit down the middle with the insides scooped out (or 1/4 ounce vanilla extract)
Bourbon (plan on about 1 1/2 ounces per drink. I used Jim Beam)

Steps:

  • In a medium saucepan, combine all of the nonalcoholic ingredients and simmer for at least thirty minutes, preferably over an hour.
  • Use a jigger or shot glass to measure bourbon into mugs. Pour in your hot spiced cider. Ideas for garnishing: cinnamon sticks, star anise, lemon slices and/or thinly sliced red apple (highly recommended).

4 spiced tea bags (I use Celestial Seasonings Mandarin Orange Spice)
1 gallon apple cider
2 quarts orange juice
1 quart cranberry juice
1 1/2 cups sugar
1 orange
12 whole cloves
4 cinnamon sticks (4 inch)
1/2 cup small red-hot candies

Steps:

  • Place water in a very large pot and bring to a boil.
  • Steep tea bags in hot water for 4 minutes; remove tea bags.
  • Add cider, orange juice, cranberry juice, and sugar to a boil, stirring to dissolve sugar.
  • When it comes to a boil, reduce heat to a simmer.
  • Stick the cloves into the orange and drop into the pot along with the cinnamon, and red-hot candies.
  • Simmer the punch for 30 minutes, stirring occasionally.
  • Serve hot.

10 small apples
10 teaspoons brown sugar
2 bottles dry sherry or dry Madeira
1/2 teaspoon grated nutmeg
1 teaspoon ground ginger
3 cloves
3 allspice berries
1 inch stick cinnamon
2 cups superfine sugar
1/2 cup water
6 eggs, separated
1 cup brandy

Steps:

  • Core the apples and fill each with a teaspoon of brown sugar. Place in a baking pan and cover the bottom with 1/8-inch of water.
  • Bake in a 350°F oven for 30 minutes or until tender. Combine the sherry or Madeira, nutmeg, ginger, cloves, allspice berries, cinnamon, sugar and water in a large, heavy saucepan and heat without letting the mixture come to a boil. Leave on very low heat. Beat the egg yolks until light and lemon-colored. Beat the whites until stiff and fold them into the yolks. Strain the wine mixture and add gradually to the eggs, stirring constantly. Add the brandy. Pour into a metal punch bowl, float the apples on top and serve in 8-ounce mugs.

6 small Fuji apples, cored
1 cup brown sugar
1 cup water
72 ounces ale
750 ml Madeira
10 whole cloves
10 whole allspice berries
1 cinnamon stick, 2-inches long
1 teaspoon ground ginger
1 teaspoon ground nutmeg
6 large eggs, separated

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the apples into an 8 by 8-inch glass baking dish. Spoon the brown sugar into the center of each apple, dividing the sugar evenly among them. Pour the water into the bottom of the dish and bake until tender, about 45 minutes.
  • Pour the ale and Madeira into a large slow cooker. Put the cloves, allspice, and cinnamon into a small muslin bag or cheesecloth, tied with kitchen twine, and add to the slow cooker along with the ginger and nutmeg. Set the slow cooker to medium heat and bring the mixture to at least 120 degrees F. Do not boil.
  • Add the egg whites to a medium bowl and using a hand mixer, beat until stiff peaks form. Put the egg yolks into a separate bowl and beat until lightened in color and frothy, approximately 2 minutes. Add the egg whites to the yolks and using the hand mixer, beat, just until combined. Slowly add 4 to 6 ounces of the alcohol mixture from the slow cooker to the egg mixture, beating with the hand mixer on low speed. Return this mixture to the slow cooker and whisk to combine.
  • Add the apples and the liquid from the baking dish to the wassail and stir to combine. Ladle into cups and serve.
