BLUEBERRY CAKE WITH WOJAPI SAUCE
This is my grandmother's recipe, and the sauce is traditional Cherokee, which has been passed down for generations. It is very versatile and can be used on fry bread, pancakes, waffles and other desserts.

Steps:
- Preheat oven to 350°. In a small bowl, combine sugar and flour; stir in milk and vanilla. Place butter in a greased 5-3/4x3x2-in. loaf pan. Pour batter into pan (do not stir). Sprinkle with blueberries., Bake until a toothpick inserted in the center comes out clean, 20-25 minutes. Cool for 10 minutes before inverting onto a serving plate., In a small saucepan combine sugar and cornstarch. Stir in water until smooth; add blueberries. Bring to a boil. Reduce heat; cook and stir until thickened, 1-2 minutes. Serve warm over cake with ice cream if desired.

Steps:
- Place cranberry juice in a 1 1/2 to 2-quart saucepan.
- Bring to a boil over moderate heat.
- Sprinkle in sugar a little at a time.
- Slowly stir in Cream of Wheat.
- Reduce heat and simmer 6-8 minutes, or until mixture becomes a thick puree.
- Scrape into a large mixing bowl.
- Beat at high speed for 10-15 minutes, or until pudding has tripled in volume and is very light and fluffy.
- Turn into serving bowls and serve at room temperature.
- Best made withing several hours of serving.

WASICU WOJAPA (WHITE MANS INDIAN BERRY PUDDING)
Very simple easy yummy recipe. This is a Native American dish (which I am not) with a couple of twists that I added. The dish is actually called Wajapa and wasicu meens white man in Dacota and Lacota Sioux.

Steps:
- Place berries in a med saucepan, cover with cold water, place over med high heat, bring to a boil stirring often. Add sweetener, vanilla extract and lemon juice. Continue to boil and stir until berries brake down. Add cold water to corn starch and some about ( 2 tbs) of hot liquid from pan and make slurry stirring it slowly back into mix, continue to boil and stir until thick. Let pudding cool, serve warm or chilled, great hot over fry bread.

- Lightly butter a 1-litre microwavable gratin dish or a 20cm microwave cake dish. Beat together the butter, sugar, flour, eggs and milk with an electric hand whisk for 2-3 mins, until light and fluffy.
- Fold through the white chocolate and most of the berries, pour into the dish, then microwave on High for 10-12 mins, until set and dry on top. Leave to stand for 5 mins, before dusting with icing sugar and serving with the reserved berries and custard.

- Soak the cornmeal in the water. Melt the butter in a large pot the add the cornmeal mixture. Heat slowly, stir constantly for 15 minutes, or until thickened.
- Add the juice, berries, & nutmeg then bring to a boil, stirring constantly. Then add the cream & maple syrup, blending throughly.
- Add the eggs & remove from the heat, stirring until the mixture stops bubbling. Serve either hot or chilled.
