2 (19 ounce) cans whole kernel corn, drained
6 tablespoons all-purpose flour
6 tablespoons white sugar
6 tablespoons butter, melted
4 teaspoons salt
2 chopped pimento peppers
6 eggs
½ cup chopped green bell pepper
½ pound processed cheese (such as Velveeta®), cubed
1 ½ cups milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir corn, flour, sugar, butter, salt, pimento peppers, eggs, bell pepper, processed cheese, and milk together in a mixing bowl, respectively; pour into a 9x13-inch baking dish.
  • Bake in preheated oven until the cheese is melted, about 45 minutes.

1 (15 ounce) can cream-style corn
1 (14 ounce) can whole kernel corn, drained
2 cups shredded Cheddar cheese
2 eggs, beaten
½ cup butter, melted
¼ cup all-purpose flour
¼ cup diced bell pepper
2 tablespoons white sugar
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 5x7-inch casserole dishes.
  • Stir cream-style corn, whole kernel corn, Cheddar cheese, eggs, butter, flour, bell pepper, sugar, salt, and black pepper together in a large bowl; divide between prepared casserole dishes.
  • Bake in the preheated oven until a toothpick inserted into the center of either casserole comes out clean, about 45 minutes.

One 15-ounce can whole corn kernels, drained
One 15-ounce can creamed corn
1 large egg
1 1/2 cups shredded sharp Cheddar
1 cup yellow cornmeal
1 cup sour cream
6 tablespoons unsalted butter, melted
1/4 cup chopped fresh chives
1/4 cup sugar
2 teaspoons baking soda
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the whole corn, creamed corn, egg, Cheddar, cornmeal, sour cream, butter, chives, sugar, baking soda, 1 1/2 teaspoons salt and a generous amount of black pepper to a large bowl and stir until well combined.
  • Pour the mixture into a 2-quart baking dish and bake until lightly golden on the outside and set in the middle, 30 to 35 minutes.

10 slices bacon, cut-up and cooked
1 medium sized yellow onion, chopped
1 1/2 cups bell peppers, chopped (green or mixed)
1/2 cup sliced mushrooms
1 (2 lb) package frozen corn, thawed
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Mrs. Dash seasoning mix
3 fresh tomatoes, peeled and chopped

Steps:

  • Preheat oven to 350 degrees.
  • Fry bacon; cut or crumble to small pieces.
  • Remove from pan, drain most of grease.
  • Add diced onion, then peppers, mushrooms.
  • Saute till onion is cooked.
  • Add salt, pepper and seasoning mix to corn.
  • Add bacon and sauteed vegetables to corn.
  • Add chopped tomatoes to corn.
  • Blend all together and bake uncovered in large baking dish at 350 x 30 minutes.

This recipe is from the early 1960's and is among the first comfort foods which I prepared as a young inexperienced cook. Cooked green beans may be substituted for the corn. I do not remember where I found the recipe. At that time, I was very proud of preparing such a tasteful dish. I have not used the recipe for several decades. I am posting in Zaar in order to prevent losing it.

1 lb ground beef
1 small onion, chopped
1 cup cheddar cheese, shredded
1 (10 3/4 ounce) can condensed tomato soup
2 cups cooked elbow macaroni
1 cup frozen corn kernels
1/4 cup water
2 teaspoons mustard
1 teaspoon salt

Steps:

  • In a saucepan brown beef and cook onion until tender.
  • Pour off fat.
  • Stir in 3/4 cup of the cheese and all other remaining ingredients.
  • Spoon into 1 1/2 quart casserole.
  • Top with remaining cheese.
  • Bake at 350 degrees for 30 minutes.

3 cups monterey jack cheese or 3 cups similar grated cheese
6 slices whole wheat bread, torn up
1 lb canned creamed corn
1/2 cup chopped celery
1/4 cup chopped onion
1 cup corn
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
6 drops Tabasco sauce
1/2 teaspoon dry mustard

Steps:

  • Fry the onion and celery together. Layer the bread (bottom) vegetables, and cheese in an oiled casserole dish. Pour the creamed corn over the top. Then pour the egg mixture over that. Let it stand 30 minutes, then bake in a 350° oven for 1 hour, placed in a pan of hot water.
  • As a main dish, this supplies about 40% of a day's protein requirement. By protein complementarity, the available amount can be increased to 55% by adding 3/4 cup sunflower seeds, but some people don't like crunchies in it.

1 can (10 ounces) diced tomatoes with green chilies
1 can (8 ounces) tomato sauce
1 to 2 tablespoons chili powder
1 can (15-1/4 ounces) whole kernel corn, drained
2 cups shredded cheddar cheese, divided

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large skillet, cook the beef, onion, green pepper and celery until meat is no longer pink and vegetables are tender; drain. Stir in the soup, tomatoes, tomato sauce and chili powder until combined., Drain the macaroni; stir into beef mixture. Add the corn and 1-1/2 cups of cheese. , Transfer to a greased 13x9-in. baking dish. Sprinkle with remaining cheese. Bake, uncovered, at 350° for 25-30 minutes or until heated through.

1 (17 ounce) can creamed corn
1 (17 ounce) can whole kernel corn, drained
1 cup grated sharp cheddar cheese
1 cup saltine, crushed
1/8 cup dried onion flakes
1 (2 ounce) jar diced pimentos
1 egg
2/3 cup evaporated milk
1/4 cup butter or 1/4 cup margarine, melted
1 teaspoon salt
1 1/2 teaspoons pepper
1 tablespoon sugar
1/2 teaspoon cayenne pepper
1 medium bell pepper, chopped
paprika

Steps:

  • Mix all ingredients together, except paprika, in order given, stirring well.
  • Pour into slightly greased casserole, sprinkle with paprika and bake at 400°F approximately 1 hour.

1 (10 ounce) package frozen corn, cooked and drained
2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/4 cup sugar
1/4 cup milk
1 egg, slightly beaten
1/3 cup cracker crumb (Ritz)
1 tablespoon butter, melted

Steps:

  • Melt butter in skillet, add flour.
  • Blend well, add milk and sugar.
  • Stir constantly until mixture is bubbly.
  • Remove from heat.
  • Place back on heat and boil 1 minute.
  • Stir in corn and egg, mix well.
  • Pour into a well greased casserole dish.
  • Mix crackers with butter and sprinkle over top.
  • Bake uncovered in 350 oven for 30-35 minutes.
  • For a 9X13 pan I triple the recipe.
  • I use two bags of the frozen corn and triple everything but the salt and topping.
