Categories     Potato

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 11

1 1/2 lbs fingerling potatoes
salt
4 eggs, hardboiled and halved
2 canned anchovy fillets, minced
1 1/2 tablespoons stone ground dijon mustard
1 garlic clove, minced
1/4 cup white wine vinegar
1/2 cup canola oil
1/4 cup water
1 pinch of coarse salt & freshly ground black pepper
1 cup baby green beans

Steps:

  • Cook's Note:.
  • You can use the same pot of water for boiling the eggs and blanching the beans. Just watch the time.
  • Put the fingerling potatoes in a saucepot with enough water to cover. Bring to a boil, and add salt, and simmer, until just fork-tender.
  • While the potatoes are cooking, make the dressing in a serving bowl, or if you have a mortar and pestle, use that. Begin with mashing the anchovy fillets into the mustard and garlic. Add the vinegar, and slowly whisk in the oil. If too thick, add a little water. Season with salt and pepper.
  • Blanch the beans in salted boiling water, drain and plunge or chill down in a cold water bath. Drain the beans on a towel. Peel the eggs and cut in half. Drain the potatoes, and while still warm, drop them into the serving bowl with the dressing.
  • Add the beans and eggs. Gently fold all together, and serve warm in shallow white plate or bowls. This salad is also good served at room temperature.

BACON-FILLED HOT GERMAN POTATO SALAD

Bacon-Filled Hot German Potato Salad image

This hot German potato salad recipe is totally the BEST summer side dish. Guests will flip for the tangy apple cider vinegar & coarse Dijon mustard dressing, along with the crispy fried bacon bits. Serve it hot, warm, or even cold at your next cookout!

Provided by Tara Kuczykowski

Categories     Side Dishes

Time 35m

Number Of Ingredients 9

2.5-lbs. medium red potatoes, quartered
1 tablespoon salt, divided
1/2-lb. bacon, diced
1 heaping cup diced onion
1/2 cup apple cider vinegar
2 tablespoons sugar
1 tablespoon coarse Dijon mustard
1/2 teaspoon black pepper
1/4 cup chopped fresh parsley

Steps:

  • Place the quartered potatoes in a large pot and fill with enough cold water to just cover them.* Add 2 teaspoons of salt, and bring to a boil. Cook until easily pierced by a fork, about 12-15 minutes. Drain the hot potatoes and set aside to cool slightly. When they are still warm but can be easily handled, cut into small pieces.
  • While the potatoes are cooking, prepare the bacon vinaigrette. Place the diced bacon in a large cast iron skillet over medium-high heat. Cook bacon until browned and crisp. With a slotted spoon, remove the bacon to a plate lined with paper towels and set aside. Leave the bacon drippings in the frying pan.
  • Add the diced onions to the pan, and cook over medium heat until they turn translucent and start to brown. Add the vinegar, sugar, Dijon mustard, remaining 1 teaspoon of salt, and pepper to the sautéed onions. Bring to a boil.
  • Add the bite size potato chunks and bacon to the pan, and toss to coat. Turn off the heat and and fold in the chopped parsley.
  • Transfer to a serving dish and serve hot (but warm and cold are fine, too).

WARM OR COLD POTATO GARDEN SALAD

Warm or Cold Potato Garden Salad image

Really really tasty when warm and also yummy cold! You can half the recipe easily or double it! Haricot vert is French for green beans. Haricot meaning beans and vert meaning green. French green beans are longer and thinner than most American varieties. They are also more tender and have a more complex flavor. For the most part, they are interchangeable with American green beans which are also called string beans or snap beans. If you are unable to find haricot verts, substitute with the thinnest young green beans you can find. Made for the CrazeE contest 2009

Provided by Sharon123

Categories     Potato

Time 40m

Yield 6 serving(s)

Number Of Ingredients 13

3 lbs new potatoes
1 lb fresh French haricots vert, trimmed, cut in 1-inch pieces
1 small zucchini, trimmed, cut in 1/2-inch pieces (optional)
2 scallions, sliced thin (or about 4 tbls. chopped chives)
2 hard-boiled eggs, sliced (or chopped)
1/4 cup fresh parsley, finely chopped
1/3-2/3 cup mayonnaise
1/8-1/4 cup plain yogurt
2 -4 tablespoons whole grain mustard (Dijon is good)
3 -6 tablespoons red wine vinegar (or 2 tbls. red wine vinegar and 1 tbls. balsamic vinegar)
1/4-1/2 teaspoon fresh ground black pepper (or more to taste)
1 -2 tablespoon fresh tarragon, finely chopped (or 1/2 tsp. dried, chopped fine)
chives (to garnish)

Steps:

  • Place the potatoes in a pot. Cover with water, sprinkle with 1/4 teaspoons salt, and bring to a boil. Cook about 15-20 minutes, or until tender when pierced with a fork. Drain, rinse under cold water.
  • Meanwhile, bring another pot of salted water to a boil. Cook the haricots verts and zucchini for about 2-3 minutes, until beans turn bright green. Strain them and rinse and drain in colander with cold water to stop the cooking process.
  • In bowl, mix mayonnaise, yogurt, mustard, vinegar(s), black pepper, and tarragon until smooth. Use the larger amount for lots of creamy dressing.
  • Peel potatoes, cut into bite size chunks(1/2"-1"),.
  • Place potatoes, zucchini and beans, scallions, eggs, and parsley into a serving bowl and toss gently with mayonnaise dressing. Garnish with chopped chives and serve warm or cold.
  • Note:.
  • If serving cold the next day, make a little more dressing and add some in when ready to serve. The potatoes absorb alot of the liquid and the salad may be a little dry.

MISTAKES TO AVOID WHEN MAKING POTATO SALAD | KITCHN

From thekitchn.com
  • Using the wrong type of potatoes. Not all potatoes are created equal when it comes to potato salad. Potatoes are divided into three general categories based on their texture — starchy, all-purpose, and waxy.
  • Not starting the potatoes in cold water. When we cook veggies, we often start them in boiling water, but this shouldn’t be the case with potatoes. The biggest problem with starting potatoes in boiling water is uneven cooking.
  • Not seasoning the water when cooking the potatoes. A good potato salad has to be seasoned, especially if it’s being served cold. You’ll never get as much flavor if you wait to season when the potatoes are cool or when you’re dressing the salad.
  • Undercooking or overcooking the potatoes. Potatoes are the main ingredient, so it’s essential that they’re cooked just right. Don’t let them cook long enough, and you’ll be left with firm, crunchy potatoes — not a texture potatoes should ever take on in this dish.
  • Not dressing the potatoes at the right time. The type of dressing you plan to use, mayo-based dressing or vinaigrette, will determine when the salad should be dressed.
