SPAGHETTI WITH CRAB SAUCE
This recipe is a two-step process: Making the sauce base and then the sauce itself. You can make the base a day ahead if you'd like. Any crab will do here, but I use a combination of red crabs, rock crabs and Dungeness crabs. The only tricky ingredient here is ouzo, which is a Greek anise-flavored liquor. Most liquor stores have it, but you can sub in sambuca, raki, Pastis, Pernod or any other anise-flavored liqueur. Still can't find it? Go with brandy; that's what my brother-in-law does.

Steps:
- To make the sauce base, put the onions and olive oil in a stockpot and cook, stirring occasionally, over medium heat until the onions are soft and translucent, about 6-8 minutes. Add the crab shells and the garlic and stir to combine. Use a potato masher to smash the crab shells into small pieces. Cook, stirring often, for 5 minutes.
- Add the bay leaves, the tops from the fennel bulb, ouzo and a healthy pinch of salt. Add enough water to cover everything by 1 inch. Bring to a simmer and cook for 1 hour. Turn off the heat and pick out as much of the solids as possible, making sure you save the liquid. Strain the liquid through a paper towel set in a colander. Reserve.
- To finish the sauce, heat the olive oil in a Dutch oven or other large, wide pot over medium-high heat. Saute the onions and chopped fennel until they are soft and translucent, about 6-8 minutes. Add the garlic and cook another minute.
- Mix in the tomato paste and cook for 3-4 minutes, stirring often, until it darkens and turns the color of brick. Add the ouzo, the tomatoes and 2 cups of the crab sauce base. Stir well and bring to a simmer. Taste for salt and add the Tabasco to taste. Simmer uncovered for 30 minutes, stirring from time to time.
- Boil your pasta. Once the pasta is ready, add the crabmeat to the sauce and stir gently. Mix the pasta with a little of the sauce, then portion it out. Top with more sauce, and garnish with chives or parsley.

CHARLESTON SHRIMP AND GRITS WITH TASSO BLUE CRAB GRAVY
Steps:
- To make the Tasoo Blue Crab Gravy: Preheat a large bottom pot to medium-high heat.
- Add butter to pot and let melt. Add ham, white onion, peppers, Cajun seasoning, salt, brown sugar, onion powder, and minced garlic. Stir in flour and continue to cook while stirring until you achieve a dark brown color, a brown roux. Slowly whisk in 6 cups of fish stock, add slowly to help avoid lumps. Bring to a boil and use remaining 2 cups of stock to adjust for consistency. Remove from heat and add the crabmeat. Set aside for use.
- In a saute pan, over medium-high heat, saute shrimp and sausage. Place shrimp and sausage over grits, if using, and top with crab gravy sauce.

- Combine butter and oil in an 8- to 10-ounce stockpot over medium heat. Add celery, leeks and onions and cook, making sure they do not brown, 5 to 7 minutes. Add garlic, red pepper, oregano, bay leaves, parsley and thyme. Cook just to bring everything together, about 3 minutes.
- Add crabs and cook over medium to low heat, covered, stirring often, 8 to 10 minutes. Add white wine and cook until wine is cooked out, about 5 minutes. Add tomatoes and 3 to 4 cups water and simmer for 1 1/2 to 2 hours. Add salt, pepper and seafood seasoning to taste.
- Boil linguine and pour sauce over top.

This is in our family cookbook. This is a great gravy made from scratch. Serve over mashed potatoes meat or bread it is great.

CRAB-INDIAN GRAVY

- Heat oil.
- Add mustard seeds till they begin to crackle.
- Add the curry leaves, onions and ginger garlic paste.
- Saute them until the onions are transparent.
- Do not burn them.
- Add the chilly, coriander and garam masala powders.
- Stir and then add the tomatoes.
- Now add half a cup of water and stir.
- Let it cook for around 5 minutes.
- If the gravy drys up add a little extra water.
- Now add the crabs, some salt and stir.
- Add some water and cook in a low flame.
- Cook for around 5 minutes with the lid on.
- Remove the lid and fry for another 10 minutes.
- Serve hot with Rice or bread.

- Fry the potatoes. Heat a fryer (or pot of oil) to 325°F. Add french fries and cook until they are about 75 percent done. This will depend on thickness. Remove from oil, strain and freeze.
- Cook the crab. Steam the crabs for about 10 minutes. Remove, pick the meat and reserve in fridge. Using a mallet or rolling pin, crack the crab shells into smaller pieces.
- Heat a large pot and add a little grapeseed oil. Once it’s hot, add the crab and sear until it becomes bright red, add the white wine and cook until almost reduced. Add the onions and fennel and cook until they begin to char on the outside. Cover with water and simmer for 45 minutes.
- Strain out the solids and reduce the crab stock by half to two-thirds. Add some hot stock to the cornstarch to make a slurry, then add slurry to the gravy little by little until desired thickness is reached.
