GARLIC PARMESAN OLIVE OIL BREAD DIP
With only 5 simple ingredients, this Garlic Parmesan Olive Oil Dip is an incredibly easy appetizer! It's so flavorful, you'll want to make it all the time!

Steps:
- Combine fresh garlic, Parmesan cheese, sea salt and ground black pepper in a small, shallow dish.
- When ready to serve, pour a quality olive oil into the spices blend.

ROASTED GARLIC OLIVE OIL BREAD DIP
Steps:
- Preheat the oven to 200°C/400°F.
- Place the halved head of garlic on a piece of foil then drizzle over the two teaspoons of oil and season with salt. Wrap in the foil, making sure the garlic is completely enclosed.
- Place in the oven and allow to roast for 30-45 minutes or until completely soft.
- Remove from the oven and allow to cool for 15 minutes.
- Squeeze the roasted garlic out of the papery skins and mash into a bowl.
- Add the olive oil, herbs, chilli flakes, lemon juice, salt and pepper. Mix then taste and adjust seasoning if necessary.
- Serve the dip with good bread.

WARM MARINATED OLIVES
Steps:
- Drain the green and black olives from the brine or oil that they're packed in and place them in a medium bowl. Add the orange zest, garlic, fennel seeds, thyme leaves, red pepper flakes, 1/2 teaspoon salt and 1/2 teaspoon black pepper. Pour the olive oil over the mixture, add the thyme sprigs and toss to combine.
- Transfer the mixture, including the olive oil, to a medium (10-inch) sauté pan. Heat over medium heat until the oil begins to sizzle. Lower the heat and sauté for 4 to 5 minutes, stirring occasionally, until the olives and garlic are heated through and fragrant. Serve warm right from the pan or transfer to a serving dish. Offer a small dish for the pits.

- Preheat the oven to 300°F Cut the garlic through the equator so that the tips of the cloves are exposed, discard top bits. Pour the olive oil into a small roasting dish. Add the salt, pepper, thyme and capers to the oil. Nestle the garlic cut-side down in the dish and cover tightly with foil.
- Roast the garlic for 45-50 minutes, until the bottoms are well browned and the garlic is soft. Set aside to cool for at least 20 minutes (important! the oil is hot!).
- To serve: add the olives, if using, and turn the garlic cut side up. Dip your bread in the oil, and scoop out garlic cloves and spread on bread with capers, munch on olives, and enjoy.

THE "ULTIMATE" BLACK OLIVE DIP IN A BREAD BOWL
Oh so good!!! For anyone who doesn't like black olives, like me, this dip may just change your opinion about that topic. I had one bite of this dip, then another and so on......my co-worker made this on New Year's eve and was kind enough to pass it on. I love the basic "spinach dip" served in a bread bowl and this recipe is a refreshing change. Great party dip, anytime of the year! Cook time includes 6 hours chilling.

- Drain and chop olives; mix together all ingredients and chill overnight or for 6 hours prior to serving.
- Prior to serving, hollow out large loaf to hold dip.
- Cut up small loaf and the leftover bread hallowed out of large loaf and cut into large bite-sized cubes for dipping.
- Spoon dip into bread bowl and serve with bread cubes.
