6 cups spinach leaves
2 cups fresh basil
1/2 cup olive oil
2 cloves garlic, minced
1/2 cup pine nuts
4 ounces prosciutto, chopped
salt and pepper
3/4 cup grated parmesan cheese

Steps:

  • Combine the spinach and basil in a large salad bowl.
  • Heat the olive oil in a skillet over medium heat.
  • Add the garlic and pine nuts; mix well.
  • Sauté until the pine nuts are brown.
  • Add the prosciutto; mix well.
  • Cook just until heated through, stirring constantly.
  • Pour over the spinach mixture, tossing to coat.
  • Season with the salt and pepper; sprinkle with the Parmesan cheese.

1 pinch chili powder (optional)

Steps:

  • Grab a bowl throw in all of the above, and mix--how easy is that!

3 1/2 lbs green beans, trimmed halved diagonally
3 tablespoons olive oil
6 cloves garlic, minced
1 cup pine nuts, toasted
3/4 cup chopped fresh basil

Steps:

  • Cook green beans in large pot of boiling salted water until crisp tender, about 6 minutes.
  • Drain.
  • Place beans in large bowl of ice water to cool quickly.
  • Drain well.
  • (Can be made one day ahead. Wrap beans in paper towels, then plastic bags, and chill).
  • Heat oil in large pot over medium high heat.
  • Add garlic; stir 30 seconds.
  • Add beans; saute until heated through, about 8 minutes.
  • Add pine nuts and basil; stir 2 minutes.
  • Season with salt and pepper.
  • Makes 12 servings.

1 lb green beans (fresh or canned)
2 tablespoons lemon juice
2 teaspoons olive oil
1 garlic clove, smashed
1/2 teaspoon dried basil
1/4 teaspoon salt
pepper
2 cups cherry tomatoes, cut in half
2 tablespoons pine nuts

Steps:

  • Cook cut green beans in boiling water, if fresh, 5 minutes till tender crisp. If using canned, just drain. Drain beans and rinse in cold water.
  • Combine fresh lemon juice, olive oil, garlic, basil, salt and pepper in a small bowl; stir well with a whisk.
  • Combine green beans with the tomatoes and toss with the vinaigrette.
  • Add pine nuts just before serving.

1 lb fresh green beans, cleaned, trimmed and quartered
1 pint cherry tomatoes, halved
3/4 cup pine nuts, toasted (1/4 will be reserved for presentation)
1/2 red onion, sliced thin into half moons
1/2 cup fresh basil, sliced into thin strands (chiffonade)
1/4 cup balsamic vinegar (use a good one)
3 tablespoons olive oil
2 garlic cloves
1 teaspoon Dijon mustard
1 teaspoon sugar

Steps:

  • Blanch the green beans in salted boiling water for one or two minutes. Strain then plunge into an ice bath. Strain again, and spread them on a towel to dry while you prep the other ingredients.
  • Combine all ingredients through the basil, reserving 1/4 cup toasted pine nuts.
  • Whisk vinegar, oil, garlic, dijon mustard and sugar until emulsified. Toss with green bean mix. Let the salad marinate for up to an hour, top with the remaining pine nuts. You can serve it immediately, but the longer it marinates, the better it will taste. It was even more delicious for lunch the next day.

This salad is as delicious as it is beautiful, and makes for a great BBQ sidedish. Sometimes when I get the winter blahs, I'll make this and it feels like summer again!

3 cups fresh corn kernels (3-4 ears)
1 lb fresh green beans, trimmed and cut in half
1 small red onion, cut half then into thin slices
1 garlic clove
1/4 cup red wine vinegar
1/3 cup extra virgin olive oil
1 pint cherry tomatoes, cut in half
1 cup fresh basil, roughly chopped
fresh ground pepper, to taste
kosher salt, to taste

Steps:

  • Cut the corn kernels from the ears, while bringing a pot of water to a boil.
  • When the water comes to a boil, add the corn kernels and blanch for about 1 minute. Remove them with a strainer and set aside.
  • Let the water return to a boil and season generously with salt. Add the beans and cook until tender, about 3 minutes. Drain the beans and flush with cold water until they are cool.
  • Meanwhile, put the onion slices in a bowl of ice water, which will crips them and mellow their flavor.
  • Using either a mortar and pestel or the flat side of a chef's knife, mash the garlic to a paste with a pinch of salt.
  • Add the paste to a small bowl (or leave it in the mortar) and whisk in the vinegar and let sit for 10 minutes. Add the olive oil and whisk again.
  • Just before serving, drain the onions. Put the beans, corn, onions, tomatoes, and basil in a large bowl. Season with salt and pepper, and then toss with the vinaigrette. Season further if required. Serve right away.
