- In a large saucepan, saute mushrooms and onion in 3 tablespoons butter until tender. Add garlic; cook 1 minute longer. Stir in flour until blended. Gradually add milk; bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat; stir in mayonnaise until smooth. Add the chicken, rice, celery, peas, pimientos, lemon juice, salt and pepper. , Transfer to an ungreased 13-in. x 9-in. baking dish. Melt remaining butter; toss with cornflakes. Sprinkle over top. - Preheat oven to 350 degrees F (175 degrees C).
- Bring to a boil the chicken breasts, celery, 1/2 teaspoon salt, 1/8 teaspoon pepper, and enough water to cover. Cover, reduce heat to medium low; simmer for 35 minutes. Drain, reserving 1 cup liquid. Cool chicken, remove meat from bones, and cut into bite-size pieces.
- In a large bowl, stir together sour cream, soup, broth, celery salt, onion powder, garlic powder, and salt and pepper to taste. Mix in cooked rice and chicken. Spoon mixture into a 9x13 inch casserole dish. In a resealable bag, shake together crushed crackers and melted butter. Sprinkle crackers over the top.
- Bake in preheated oven for 30 to 35 minutes.

WARM, GOOEY, YUMMY CHICKEN CASSEROLE!
People kept asking me for this recipe, and their friends kept asking them for the recipe after they made it for them, so I figured it was a good one to put on here! There are many, many different ways to make this more healthy, let me know how you do it! I usually get the low sodium soups, use smart balance mayo, 2% cheddar cheese, whole wheat bread on top, and smart balance butter. Every little bit helps! I haven't ever measured this, so don't be afraid to add more or less of anything at your discretion! Especially with the curry, some nights I get sassy and decide to put tons of curry in it. Oh! and one last thing- it tastes EXCELLENT the next day, and serving it over rice is tasty and makes it last longer!

TEX-MEX GOOEY CASSEROLE
I got this recipe from Emeril Lagasse but have modified it some. We love this. The original recipe called for 1 pound of ground beef and one pound of stew meat and 4 cups of fresh tomatoes.

Steps:
- Preheat the oven to 375°F
- Grease a 9 by 9 by 2-inch square baking dish.
- In a large skillet, heat the oil. When the oil is hot, add the onions and sauté for 3 to 4 minutes.
- Add the ground beef and continue to cook for 3 to 4 minutes, stirring constantly.
- Stir in the garlic, chili powder, and cumin. Season with salt and pepper. Stir in the tomato paste. Stir in the tomatoes and stock. Simmer the mixture for 30 minutes, stirring occasionally.
- Remove from the heat and cool.
- Spoon a couple of tablespoons of the chili mixture on the bottom of the prepared pan.
- Lay two tortillas on top of the chili mixture. Sprinkle the top of the tortillas with the Cheddar and Jack cheese. Repeat the layering process until all of the chili, tortillas and cheese are used. (The final layer should be cheese)
- Place the pan in the oven and bake until the cheese has melted, about 10 to 12 minutes. Remove from the oven and cool slightly before slicing.
YUM YUM GOODY CHICKEN CASSEROLE
My mom was going to make Tuna Noodle Casserole but found that she didn't have any canned tuna, so she made it using canned chicken instead. I liked it so much that when I made it I embellished a little adding french fried onions and shredded cheddar cheese to it. Very Yummy! * You can substitute cream of chicken soup for the cream of mushroom soup if desired. * Suggestions: you can also add crumbled bacon, crumbled Ritz crackers as a topping, or other veggies to your own liking

- Boil noodles following package directions till tender, drain and set aside.
- In a sauce pan, add soup, milk, butter, and heat until creamy, then remove from heat. Then add noodles, chicken, salt, pepper, diced onion, and sprinkle lightly with french fried onions and shredded cheddar cheese.
- Mix all ingredients thoroughly, and transfer to a large buttered baking dish. Sprinkle lightly with more french fried onions and shredded cheddar cheese to cover as topping.
