EDAMAME AND SOBA NOODLE BOWL

1 package (12 ounces) uncooked Japanese soba noodles or whole wheat spaghetti
2 tablespoons sesame oil
2 cups fresh small broccoli florets
1 medium onion, halved and thinly sliced
3 cups frozen shelled edamame, thawed
2 large carrots, cut into ribbons with a vegetable peeler
4 garlic cloves, minced
1 cup reduced-fat Asian toasted sesame salad dressing
1/4 teaspoon pepper
Sesame seeds, toasted, optional

Steps:

  • In a 6 qt. stockpot, cook noodles according to package directions; drain and return to pan., Meanwhile, in a large skillet, heat oil over medium heat. Add broccoli and onion; cook and stir until crisp-tender, 4-6 minutes. Add edamame and carrots; cook and stir until tender, 6-8 minutes. Add garlic; cook 1 minute longer. Add vegetable mixture, dressing and pepper to noodles; toss to combine. Sprinkle with sesame seeds if desired.

2 tablespoons grated ginger or 2 tablespoons galangal
4 limes, juice of
3 tablespoons peanut oil or 3 tablespoons canola oil
2 tablespoons palm sugar or 2 tablespoons brown sugar
2 teaspoons tamarind paste (not pulp)
1 teaspoon tamari or 1 teaspoon soy sauce
1 teaspoon kosher salt (less if using table salt) or 1 teaspoon sea salt, to taste (less if using table salt)
7 ounces cellophane noodles
2 tablespoons peanut oil or 2 tablespoons canola oil
3 garlic cloves, peeled and smashed
2 1/2 cups cooked edamame beans, drained
1 fresh red chili pepper, small dice (optional to taste)
3 scallions, whites and greens cut into thin coins
3 tablespoons chopped fresh cilantro (plus a few leaves to garnish)
3 tablespoons chopped of fresh mint (plus a few leaves to garnish)
3 tablespoons sesame seeds, toasted (can use both white and black seeds)

Steps:

  • Have a large pan of hot water ready for softening the noodle. Drop the noodles into the hot water and stir them every couple minutes, testing until they are the al dente.
  • To make the sauce, whisk together in a small bowl all of the sauce ingredients; set aside.
  • Heat the wok over medium high heat. Add the peanut oil and the garlic; stir fry until the garlic begins to turn golden. Add the chili pepper and cook for just a minute.
  • Turn the heat off under the wok and add the sauce mixture, the noodles, scallions and about 2/3 of the drained edamame beans. Toss gently to combine and coat everything with the sauce.
  • Return the pan to the heat for a few seconds, just to warm through.
  • Pile up on a large platter or in a shallow bowl and scatter over the remaining edamame beans and the sesame seeds.
  • Garnish with more fresh mint and cilantro, if desired, and serve in big noodle bowls.

Pack a picnic for the family with this healthy wholewheat noodle lunch with chicken, edamame, broccoli and sesame seeds. Make it in just 20 minutes

2 chicken legs, cooked
1½ tbsp sesame seeds
4 wholewheat noodle nests
160g frozen edamame beans
160g long-stemmed broccoli , cut into small florets
1 tbsp tahini
2 tbsp sesame oil
2 tsp honey
1½ tbsp low-sodium soy sauce
1 tbsp rice wine vinegar

Steps:

  • Boil the kettle. Remove the chicken skin, then shred the meat and discard the bones. Set aside. In a large pan, toast the sesame seeds for 1 min until golden, then tip into a large bowl (big enough to hold the noodles).
  • Fill the pan with water from the kettle and bring back to the boil. Add the noodles and cook following pack instructions. Tip in the beans and broccoli for the last 2 mins.
  • Meanwhile, mix the tahini, sesame oil, honey, soy sauce and vinegar into the sesame seeds. Drain the noodles, reserving a cup of the cooking water, and run under cold water to cool. Drain again and toss through the sauce along with the chicken. Add a splash of the cooking water to make the sauce thin enough to coat the noodles (it will thicken as it cools). Transfer to containers and chill until ready to eat, if not eating straight away.

2 ounces bean thread noodles
3 ounces fresh shiitake mushrooms or 3 ounces button mushrooms
2 teaspoons canola oil
3 scallions, thinly sliced with white and green parts
1 small carrot, halved lengthwise and thinly sliced on diagonal
1 cup shelled frozen edamame
5 ounces Baby Spinach
1 teaspoon grated fresh ginger
4 -6 tablespoons dark miso
1/4 teaspoon toasted sesame oil
tamari soy sauce (optional)

Steps:

  • Put noodles in a bowl with water to cover, and set aside.
  • Trim mushrooms, and wipe off grit with a damp cloth. Snap off stems, and chop finely. Slice caps thinly, and set aside.
  • Heat oil in a soup pot. Add scallion whites, mushrooms and carrot, and cook over medium-high heat, stirring frequently, until mushrooms begin to soften, for about 2 minutes.
  • Add 5 cups water, and bring to a boil. Add edamame, and cook for 4 minutes. Drain noodles, and add to pot with spinach and ginger.
  • Reduce heat to medium-low, and cook until edamame are tender but still firm, for about 1 minute more. Stir in scallion greens.
  • Blend 4 tablespoons miso into 1 cup warm water, using a fork to mix. Reduce heat to low, and stir miso into soup, adding more miso for a more intense flavor, if desired.
  • Add sesame oil and tamari to taste. Serve hot.

1/4 cup low sodium soy sauce
2 tablespoons rice vinegar
2 tablespoons toasted sesame oil
1 (8 7/8 ounce) package udon noodles, preferably brown rice
1 1/2 cups frozen shelled edamame
2 cups grated carrots
1 bunch watercress, coarsely chopped (6 oz.)
1 bunch green onion, chopped (about 1/2 cup)
2 tablespoons toasted sesame seeds

Steps:

  • To make Dressing: Whisk together soy sauce, vinegar, sesame oil and 2 Tbs. water in bowl. Set aside.
  • To make Noodles: Bring large pot of water to boil. Add noodles, and cook 5 minutes less than minimum recommended cooking time on package.
  • Add edamame and carrots, and continue cooking until noodles are tender. (If noodles cook in 5 minutes, add all ingredients at once.) Drain.
  • Return mixture to pot. Stir in watercress, green onions, sesame seeds and Dressing. Serve warm or at room temperature.
