FRENCH ONION SOUP DIP

This warm and cheesy dip has all the makings of a bowl of French Onion soup -- but with even more cheese! Serve with toasted bread for dipping, just like you'd find on top of the iconic soup.

6 tablespoons unsalted butter
2 large onions, halved and thinly sliced
1 clove garlic, minced
1 tablespoon fresh thyme leaves
Kosher salt and freshly ground black pepper
1 demi baguette, cut on the bias into 1/4-inch thick slices
1 tablespoon dry sherry
1/2 cup low-sodium beef broth
1 tablespoon Worcestershire sauce
8 ounces (1 bar) cream cheese, at room temperature
1 cup shredded whole milk mozzarella
1/4 cup sour cream
2 tablespoons finely grated Parmesan
1 tablespoon chopped chives

Steps:

  • Preheat the oven to broil.
  • Melt 4 tablespoons of the butter in a 10-inch cast-iron skillet over medium heat. Add the onions, garlic, thyme, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onions are very tender and caramelized, about 15 minutes.
  • Meanwhile, melt the remaining 2 tablespoons of butter in a small saucepan over medium heat, then brush butter on both sides of the bread. Transfer to a baking sheet. Broil until lightly toasted and golden, about 1 minute per side. Set aside for serving.
  • Once the onions are caramelized, add the sherry and continue to cook until the liquid has reduced completely, about 1 minute. Pour in the beef broth and Worcestershire and scrape any brown bits from the bottom of the skillet with a wooden spoon. Simmer until the broth has reduced by half, about 2 minutes more. Remove from the heat.
  • Stir in the cream cheese, 1/2 cup of the mozzarella, sour cream and Parmesan until smooth and creamy. Top with the remaining 1/2 cup mozzarella. Broil until the mozzarella on top is lightly browned and the dip is bubbling at the edges, about 2 minutes. Top with chopped chives and serve with toasted bread.

2 tablespoons canola oil
1 tablespoon butter
2 Vidalia onions, sliced into 1/4-inch rings (about 4 cups)
2 large shallots, sliced into 1/8-inch rings (about 1/2 cup)
2 cups sour cream
1 cup mayonnaise
1 teaspoon celery salt
1 teaspoon Worcestershire
1 teaspoon freshly ground black pepper
1 teaspoon salt

Steps:

  • In a large saute pan over low heat, add oil and butter. When butter is melted, add onions and saute stirring occasionally until golden brown and caramelized, about 35 minutes. Add shallots and some salt and saute for 15 minutes more until onions and shallots are dark brown. Remove from heat and let cool for 5 to 6 minutes, then chop into 1/4-inch pieces. Set aside to cool to room temperature.
  • Meanwhile, in a medium bowl, combine sour cream, mayonnaise, celery salt, Worcestershire, salt and pepper. Fold in onion mixture. Chill at least 1 hour or overnight, prior to serving.

Take the flavors of French onion chip dip and French onion soup and put them together in a hot dip straight out of the oven. The result is this Warm French Onion Dip which is delicious with Parmesan crostini or any number of sturdy crudités.

2 tablespoons unsalted butter
2 Vidalia onions (chopped)
¼ cup dry sherry
1 teaspoon Worcestershire sauce
1 teaspoon chopped fresh thyme leaves
salt and freshly ground black pepper
8 ounces cream cheese (softened)
½ cup sour cream
3 tablespoons grated Parmesan cheese
2 cups grated Gruyère cheese (divided)
chopped fresh chives (for garnish)
1 baguette loaf
olive oil
¼ cup grated Parmesan cheese

Steps:

  • Melt the butter in a 12-inch skillet over medium heat. Add the onions and toss them in the butter. Cut a piece of parchment paper the same size of the inside of the skillet. Place the parchment paper on top of the onions as they cook. Cook over low heat for about 25 to 30 minutes, stirring occasionally to pick up any brown bits on the bottom of the pan.
  • Pre-heat oven to 375ºF.
  • When the onions have softened and browned, add the sherry, Worcestershire sauce and thyme leaves, tossing well to combine. Season with salt and freshly ground black pepper and simmer for a few more minutes.
  • Remove the skillet from the heat. In a large bowl combine the softened cream cheese, sour cream, Parmesan cheese and ½ cup of the Gruyère cheese. Fold the caramelized onions into the mixture. Spread the mixture into a 2-quart casserole dish. Top with the remaining Gruyère cheese and bake in the 375ºF oven for 15 minutes.
  • Switch the oven setting to broil and leave the casserole under the broiler for 2 to 5 minutes, until the top has browned and is bubbly.
  • Garnish with the chopped chives and serve the hot dip with crostini.

8 medium white onions, thinly sliced
kosher salt, to taste
freshly ground black pepper, to taste
1 ½ teaspoons garlic powder
½ cup dry white wine, such as chardonnay
2 blocks cream cheese, room temperature (8 ounces - 225 G)
½ cup grated parmesan cheese, grated, plus more for serving
1 ½ cups mayonnaise
1 ½ cups sour cream
1 tablespoon fresh chives, for garnish, thinly sliced
potato chip, and pretzels, for serving
2 blocks cream cheese, room temperature (8 ounce - 225 G)
1 tablespoon fresh chives, thinly sliced
6 cups neutral oil, such as canola, for frying
12 square wonton wrappers
1 large egg, beaten

Steps:

  • Make the French onion dip: Add the onions to a large sauté pan over low heat and season with salt, pepper, and the garlic powder. Slowly cook the onions, stirring occasionally, until caramelized, about 45 minutes. Carefully pour in the white wine and let evaporate to cook out the alcohol, 2-3 minutes. Transfer half of the cooked onions to a medium bowl and set aside.
  • Remove the pan from the heat and stir in the cream cheese until fully incorporated. Add the Parmesan, mayonnaise, and sour cream and stir to combine. Transfer to a bowl and garnish with the chives. Serve the warm or at room temperature. (If served cold, the dip will be slightly thicker.)
  • Make the wontons: To the bowl with the reserved caramelized onions, add the cream cheese and stir with a rubber spatula until fully incorporated. Add the chives and stir to combine. Transfer to the refrigerator to set while you heat the oil.
  • Add the oil to a heavy bottomed pot and heat over medium heat until it reaches 350°F (180°C).
  • Fill each wonton wrapper with 1 teaspoon of the chilled onion dip. Brush the edges of the wrappers with the beaten egg. then bring the opposite corners up and over the filling to meet in the center to create an X shape. Pinch the edges together to seal well.
  • Working in batches, fry the wontons in the hot oil until golden brown, 3-4 minutes. Transfer to a paper towel-lined plate to drain.
  • Transfer the wontons to a platter and serve immediately with the French onion dip and chips or pretzels for dipping.
  • Enjoy!

We were at Red Robin and I tried the warm French onion dip (it comes with freshly made Yukon potato chips but I ate it with their fries). O-M-G! YUM! So the other night when we did take out from there, I tried to recreate it at home. This was the result. Hubby thinks I nailed it!

8 ounce(s) cream cheese
4 ounce(s) sour cream
1/2 cup(s) mayonnaise
1 - envelope onion soup mix
- milk

Steps:

  • Unwrap Cream Cheese, place on a plate and microwave on HIGH for 35-40 seconds (I have an 1100 watt microwave)
  • In a medium-sized bowl, place softened cream cheese, sour cream, mayo and soup mix. Blend using the medium speed of your hand mixer until well combined, scraping sides as needed. If the dip seems a bit thick, thin out with a bit of milk (start with 1 tablespoon and repeat until dip is at desired consistency).
  • Spoon dip into a microwave-safe serving dish and warm in the microwave for a short period of time (40 seconds?) - I'd probably go 30 seconds and then add increments of 5 seconds until heated as desired. Don't cook too long or the dip might break (ask me how I know?).
  • Note: I used about 2 tablespoons of Vogue Cuisine Onion Soup & Seasoning Base (Low Sodium, Gluten Free, All Natural Ingredients). I suppose you could use room-temp cream cheese and warm this in the oven (toaster oven), but I was in a hurry.

1 tablespoons extra-virgin olive oil, a turn of the pan
1 tablespoon butter
2 medium onions, quartered lengthwise then very thinly sliced
2 cloves garlic, finely chopped
1 cube beef bouillon
1/2 cup water
Black pepper
1 teaspoon ground thyme, 1/3 palm full
2 teaspoons Worcestershire sauce, eyeball it
2 cups sour cream
8 ounces cream cheese, softened in microwave for 20 seconds on high
Pinch salt, optional
2 tablespoons chopped chives, 5 to 6 blades
2 sacks chips (recommended: Onion and Garlic flavor Terra brand Yukon gold chips or other specialty chips of choice)
2 large carrots, peeled then very thinly sliced on a heavy angle
1 very firm medium sized zucchini, very thinly sliced on a heavy angle

Steps:

  • Place a medium skillet over medium to medium high heat and add the extra-virgin olive oil and the butter. Melt butter into oil then add onions and garlic cook 10 minutes, stirring occasionally. Add bouillon cube to the pan with 1/2 cup water and cook until it "melts" coats onions, stirring frequently, 3 minutes. Season the onions with pepper, thyme and Worcestershire sauce. Remove from heat and transfer to a plate to quick-cool a bit.
  • In a medium bowl, mix together the sour cream and softened creamed cheese using a rubber spatula. Stir in the onion mixture until completely combined, add salt if necessary and adjust your seasonings. Serve at room temperature or chill. Garnish with chives.
  • Pack up chips as-is. Season the veggie chips with salt and pack up with a paper towel to capture excess moisture in a plastic food bag. If serving at home, salt vegetables in single layer, let stand 5 minutes then pat dry. Arrange chips and vegetable chips around dip and serve.
