Steps:
- Position an oven rack in the top third of the oven and preheat to broil.
- Make the meatballs: Pulse the bell pepper, onion, celery, garlic, rosemary and thyme in a food processor or blender until finely chopped; transfer to a large bowl. Add the turkey, panko, mayonnaise, egg, paprika, cayenne, 2 teaspoons salt and a generous amount of black pepper and mix together using a rubber spatula until just combined.
- Dampen your hands with water and shape the mixture into 26 meatballs, each about 1 1/2 inches in diameter (a 1-ounce ice cream scoop is helpful for portioning); arrange them on a rimmed baking sheet. Broil, rotating the sheet halfway through, until the meatballs are golden brown and firm, 9 to 10 minutes.
- Meanwhile, make the cranberry glaze: Melt the butter in a large skillet over medium-high heat and add the jalapenos. Cook, stirring occasionally, until they start to soften, 3 to 4 minutes. Add the cranberries, sugar, orange zest and juice, 1/4 teaspoon salt and a few grinds black pepper and cook, stirring constantly, until the cranberries begin to soften, and the skin starts to crack, about 2 minutes. Mash the cranberries with a potato masher and stir until the liquid from the cranberries begins to simmer and thicken, 2 to 3 minutes.
- Transfer the meatballs to the skillet and toss to coat with the cranberry glaze. Transfer to a platter and serve with toothpicks.

You can make these ahead and freeze them without the glaze, then the day of the party, defrost them and simply reheat in the sauce.

Steps:
- Mix the turkey, poultry seasoning, garlic salt, onion powder, salt, pepper, Worcestershire sauce, and cayenne pepper together in a bowl. Stir in the egg, milk, and bread crumbs. Cover with plastic and refrigerate for 1 hour.
- Heat olive oil in skillet over medium heat. Roll the turkey mixture into balls, about one tablespoon each. Place the meatballs in a single layer in the skillet. Brown meatballs on all sides, flipping occasionally. Place browned meatballs on a clean baking sheet. Set aside.
- Combine cranberry sauce, marmalade, and chicken broth over medium heat in the skillet used to cook the meatballs. Stir in the jalapeno and Fresno peppers, then return meatballs to skillet. Reduce heat to medium-low, and continue to cook until the meatballs are no longer pink in the center and glaze is reduced. Season with salt and pepper.

- In a mixing bowl combine the apple, panko, large egg, green onions, garlic, sage, salt, and pepper. Gently stir until evenly combined. Add the ground turkey to the bowl and mix it in with the other ingredients using your hands until just evenly combined. Don’t over-work the meat.
- Coat the bottom of an oven safe pan or skillet with 1 Tbsp vegetable oil. Using your hands mix together the meatball ingredients. Form the meat mixture into 1 inch balls. I used a slightly heaping 1/2 Tbsp to scoop my meat and it made the appropriate sized meatballs. Arrange the meatballs in the skillet or pan.
- Cook the meatballs in a 450ºF oven for 14-19 minutes. Cook until they reach an internal temperature of 165ºF.

- Bake your meatballs according to the package instructions or bake homemade meatballs until they are hot and cooked through.
- Heat 1 Tbsp of olive oil in a medium sized sauce pan over medium heat. Add the shallot and sauté, stirring often until soft and fragrant, about 7 minutes. Add the cranberries, sugar, water, and a small pinch of salt. Stir to combine and bring to a simmer. Simmer for about 10 minutes, stirring occasionally at first and then constantly once the berries burst. Once all the berries have burst and you have a chutney like consistency, remove from the heat and let sit for a couple of minutes to thicken.
- Place a fine mesh sieve over a large bowl. Pour the sauce into the sieve, and press the sauce against the sieve with a wooden spoon or spatula until all of the berry skins are separated from the sauce (see photo above for reference). Remember to scrape the bottom of the sieve to get the last bit of sauce into the bowl. Discard cranberry skins, or reserve for another use.
- When the meatballs are cooked, stick toothpicks into each one. Dip a meatball into the cranberry sauce and coat the meatball using a spoon. Place the glazed meatball on a serving tray. Repeat for the remaining meatballs.
