Full of bold flavours like chorizo, dried tomatoes and red onion, this salad is bulked out with chickpeas to give 3 of your 5 a day

280g pack cooking chorizo , sliced
1 large red onion , finely sliced
2 red peppers , deseeded and cut into strips
400g can chickpeas , drained and rinsed
12 semi-dried tomatoes
1 tbsp red wine vinegar
100g bag rocket , to serve

Steps:

  • In a large frying pan, dry-fry the chorizo until golden for about 10 mins, then use a slotted spoon to scoop it from the pan and set aside.
  • Add the onion and peppers to the pan and soften in the chorizo fat for 10 mins. Stir in the chickpeas and tomatoes, warming through.
  • Pour in the red wine vinegar and season. Serve in bowls with handfuls of rocket on top.

An easy-to-make advocado salad for a main meal that's ready in 20 minutes

4 tbsp olive oil
1 small ciabatta , torn into small bite-pieces
2 x 80g packs sliced chorizo
250g pack baby plum or cherry tomatoes , halved
2 tbsp balsamic vinegar
pinch sugar
1 large, ripe avocado , halved, stoned and sliced
150g bag baby leaf and herb salad

Steps:

  • Heat 2 tbsp of the oil in a large non-stick frying pan. Fry the ciabatta for 8-10 minutes, tossing occasionally, until starting to crisp and brown, then tip into a large salad bowl.
  • Lay the chorizo in the pan and dry-fry for 2 minutes until it gives out a red oil. Toss in the tomatoes and cook over a high heat for 1-2 minutes until they start to soften. Drizzle over the vinegar, add the sugar and season well.
  • MIX TOGETHER Gently toss the avocado, salad and remaining olive oil with the croutons. Spoon over the chorizo and tomatoes and drizzle with any pan juices. Serve immediately.

WARM BEET, CHORIZO & PEAR SALAD



Warm beet, chorizo & pear salad image

Combine succulent pear, colourful beetroot, spicy chorizo and buttery manchego cheese in this vibrant winter salad that's ideal for sharing with friends

Yield Serves 4 as a main or 6 as a starter or side

Number Of Ingredients 10

1kg mixed beets , leaves trimmed
200g chorizo , skinned and thickly sliced
100g whole blanched almonds (use Marcona if it's a special occasion)
2 tbsp membrillo (quince paste)
4 tbsp sherry vinegar
1 tbsp lemon juice , plus an extra squeeze
1 tbsp extra virgin olive oil
1 large pear or 2 small firm pears (I used Red Williams)
small pack parsley , leaves picked and roughly torn
50g manchego , shaved

Steps:

  • Put the beets in a large pan of water (if you have a mix of colours, cook in separate pans as the colours will bleed). Bring the water to a boil, cover and leave to simmer - about 20-40 mins, depending on the size of the beets. Use a skewer or small sharp knife to check that they're tender in the centre (try not to poke too often or they'll bleed all their juices into the water).
  • Drain the beets and leave to cool in a colander. When cool enough to handle, peel away the skins, root and stalks, then roughly chop or slice the beets.
  • Put the chorizo in a cold frying pan and fry over a medium heat until crisp - you should collect lots of oil in the pan. Lift out the chorizo with a slotted spoon and keep warm. Tip in the almonds and fry quickly until just turning brown on the edges. Scoop out with a slotted spoon and place on kitchen paper to dry.
  • Make the dressing by melting the membrillo in the pan with the chorizo oil, sherry vinegar and 1 tbsp lemon juice. Mix in the olive oil and season.
  • Core and thinly slice the pear, toss with a little lemon juice to stop it browning, then arrange on a platter with the beets, chorizo and almonds. Toss together with the dressing, if you like, or serve the dressing on the side. Sprinkle over the parsley and manchego and serve immediately.

1/2 baguette, cut into 1/2-inch pieces
1 bunch spinach, trimmed and washed
1 teaspoon extra-virgin olive oil
1/2 pound dried chorizo, cut into 1/2-inch half moons
1/2 cup jarred chestnuts, coarsely chopped
3 tablespoons sherry vinegar

Steps:

  • Preheat oven to 450 degrees. On a rimmed baking sheet, arrange baguette pieces in a single layer and bake until croutons are golden, 5 to 7 minutes. Meanwhile, place spinach in a large bowl. In a large skillet, heat olive oil over medium. Add chorizo and cook until fat is rendered and sausage is slightly crisp, 3 to 4 minutes. Add chopped chestnuts and cook 2 minutes. Add sherry vinegar, swirl to combine, and pour over spinach. Add croutons and toss well to combine. Serve immediately.

This Spanish-inspired salad will bring a tasty summery Mediterranean flavour to your table. The key to this recipe is really good quality chorizo and deliciously ripe vine tomatoes.

1 lb cherry tomatoes, halved
4 scallions, sliced on the diagonal
1 (14 ounce) can cannellini beans, rinsed and drained
extra virgin olive oil
2 tablespoons red wine vinegar
9 ounces chorizo sausage, sliced
1 bunch flat leaf parsley

Steps:

  • Put the tomatoes in a mixing bowl with the scallions and drained cannellini beans.
  • Season with sea salt and a little freshly ground black pepper; then drizzle with some extra virgin olive oil and the vinegar and mix to combine.
  • Heat a frying pan (without any oil - chorizo simply does not need it) and add the chorizo.
  • Cook gently for a couple of minutes on each side. The chorizo will secrete a lot of oil. Do not throw it away! It is delicious if you want to fry a few potatoes in it. Or, add some of the oil to the salad!
  • To serve; transfer the tomato, bean and onion mixture to a serving dish and top with the hot chorizo. Scatter over the chopped parsley and serve at once.

200g chorizo
1 tbsp olive oil
410g can chickpea , drained and rinsed
250g jar roasted mixed pepper , drained and roughly chopped
handful coriander leaves, chopped
2 tbsp natural yogurt

Steps:

  • Cut the chorizo into 3cm thick slices. Heat the oil in a large frying pan over a high heat. Cook the chorizo for 4-5 minutes, turning occasionally until the edges start to crisp and it has released its red oil.
  • Tip the chickpeas into the pan and cook for a couple of minutes until hot. Add the peppers and cook for a few minutes until everything's juicy. Remove from the heat, stir in the coriander, ladle into two bowls and top each with a spoonful of yogurt.

This quick easy salad combines spicy chorizo sausage with roasted peppers avocados and a delicious sherry dressing.

2 red peppers, halved and deseeded
10 baby potatoes, halved
2 ripe avocados, halved and stones removed
8 ounces chorizo sausage
4 ounces Baby Spinach
fresh lemon juice
olive oil
salt and pepper
1 teaspoon sherry wine vinegar
6 tablespoons extra virgin olive oil
2 teaspoons medium sherry
salt and pepper

Steps:

  • Preheat the oven to 375°F
  • Drizzle the peppers with a little olive oil and season with salt and pepper. Roast in the oven for about 30 minutes, or until the peppers are soft.
  • Drizzle the potatoes with oil and season with salt and pepper. Add the potatoes to the peppers for the last 20 minutes of cooking time.
  • Remove the outer skin from the chorizo and cut it into rounds. Heat a tablespoon of oil in a frying pan and quickly sauté the chorizo on both sides until golden.
  • Slice the avocados lengthways and remove the skin. Squeeze a little lemon juice over the avocado and season it with salt and pepper.
  • To make the dressing, whisk all the ingredients together and season to taste.
  • Toss everything except the chorizo together in a bowl. Serve the salad on a plate, with the warm chorizo scattered over it.
