565 ml organic chicken or vegetable stock
6 rashers of higher-welfare smoked streaky bacon
a few sprigs of fresh thyme
1 white cabbage
1 small knob of unsalted butter
extra virgin olive oil

Steps:

  • Pour the stock into a large pan, then add bacon and pick in the thyme leaves. Place over a medium heat and bring to the boil.
  • Meanwhile, discard the tatty outer leaves from the cabbage, then halve and very finely slice the rest, discarding the tough core.
  • Once boiling, add the cabbage to the stock, mix well, pop the lid on and boil furiously for 5 minutes.
  • Turn the heat down to a simmer and continue to cook until the cabbage is a pleasure to eat, topping up with a little extra stock or water, if needed.
  • Add the butter and a good lug of extra virgin olive oil, season to taste with sea salt and black pepper, then serve immediately.

1 teaspoon Dijon mustard
1 teaspoon whole-grain mustard

½ medium red onion, chopped

Steps:

  • Cook bacon in a large skillet over medium-low heat, stirring often, until crisp, 8 to 10 minutes.
  • Meanwhile, whisk vinegar, Dijon mustard, whole-grain mustard, honey, salt and pepper in a small bowl. Gradually whisk in oil.
  • Transfer the bacon to a paper-towel-lined plate with a slotted spoon, leaving the fat behind. Increase heat to medium-high and add carrots and onion; cook, stirring often, until starting to soften, 3 to 4 minutes. Add cabbage; cook, stirring occasionally, until starting to wilt, 1½ to 2 minutes. Add the vinaigrette and cook, stirring, until heated through, about 1 minute. 16 ounces shredded cabbage (any coleslaw mix)
3 tablespoons butter
1/2 teaspoon sea salt (or to taste)
1/2 teaspoon pepper
1 -2 slice bacon, diced
12 ounces wide egg noodles, cooked
1 teaspoon dried thyme or 1 teaspoon dill weed
sour cream or yogurt

Steps:

  • Melt butter in deep pan.
  • Add the bag of shredded cabbage.
  • Cook down until cabbage is nicely browned, at least an hour.
  • Stir occasionally at first, then frequently as the cabbage starts to brown.
  • Mix-in salt (to taste) and pepper.
  • Push the cabbage over to one side of the pan.
  • Add the bacon to the cleared area and fry until very crispy, or fry in a separate pan.
  • When bacon is done, combine all contents of pan together.
  • Gently mix-in the cooked egg noodles and dried spice, and warm on low heat.
  • Taste to adjust seasonings.
  • If desired, garnish with sour cream or yogurt and a sprinkle of thyme.

5 thick bacon strips, cut into small pieces
1 large onion, chopped
2 cloves garlic, minced, or more to taste
1 medium head cabbage, shredded or chopped
1 teaspoon paprika
1 pinch white sugar

Steps:

  • Cook bacon in a skillet over medium heat until crisp, about 5 minutes. Remove bacon and set aside. Add onion and garlic and cook in bacon grease until onion is soft and translucent, about 5 minutes. Stir in cabbage, paprika, sugar, salt, and pepper; mix to combine. Cook for about 10 minutes.

3 garlic cloves, finely minced
1 onion, diced small (I used red onion)
3/4 cup sherry wine (NOT cooking sherry)
1 small green cabbage, cut into 1-inch slender strips
1 small savoy cabbage, cut into 1-inch slender strips
2 tablespoons wine vinegar or 2 tablespoons white balsamic vinegar
1 -2 tablespoon extra virgin olive oil
2 teaspoons fresh lemon thyme, minced
1/2 cup chopped walnuts, toasted and coarsely chopped
salt
pepper

Steps:

  • Toast the walnuts and set aside.
  • Cook the bacon over medium heat until crispy. Set aside to drain and cool. Drain off all bacon fat except for 1 tablespoon.
  • Add the garlic and onion to the pan and saute over medium heat for about 2 minutes.
  • Next add the sherry and cook until reduced by half, approximately 3-4 minutes.
  • Add the cabbage and {{lightly}} cook until wilted but still crunchy, about another minute.
  • Remove pan from heat.
  • Transfer the cabbage mixture to a salad bowl and toss with the wine vinegar, olive oil, thyme, walnuts and crumbled bacon.
  • Season to taste with salt (and freshly ground black pepper if not using pepper bacon).
  • Serve warm.

1 tablespoon butter or 1 tablespoon bacon grease
1 small onion, finely diced
2 slices bacon, diced
1/2 small cabbage, finely shredded
1 tablespoon sugar
1 tablespoon white wine vinegar
1 teaspoon caraway seed
1 teaspoon chicken stock powder
2 tablespoons water (approximately)
2 tablespoons chopped fresh parsley

Steps:

  • Heat the oil in a large saucepan, and add the onion and bacon and cook until the onion is softened-about 5 minutes.
  • Add the cabbage, sugar, vinegar, carraway seeds, stock powder and stir over a medium high heat for a couple of minutes or until the cabbage is coated with oil and starting to wilt.
  • Add a couple of tablespoons of water, cover and cook over a low heat (watch it doesn't burn) for a further 15 minutes, stirring once or twice.
  • Stir through the chopped parsley and serve.

100g smoked streaky bacon , cut into small pieces
1 garlic clove , finely chopped
few thyme sprigs
1 celeriac , cut into batons
2 carrots , cut into batons
1 Savoy cabbage , shredded
small glass (125ml) white wine

Steps:

  • In a large pan melt the butter. Add the bacon and sizzle for 5 mins until golden. Add the garlic and thyme to the pan and stir for 1 min. Take the pan off the heat, remove the bacon mixture and reserve.
  • Add the celeriac and carrot batons into the now empty pan with a little of the bacon-flavoured butter. Gently cook for 10 mins until soft, then add the cabbage and cook for 5 mins until it starts to soften. Add the bacon and garlic back to the pan, then add the white wine. Allow the wine to evaporate for a few mins then season the mixture and serve. This can be made ahead and left in the pan, then reheated.

1 medium head red or green cabbage, sliced 1/4-inch thick (about 12 cups)
1 tablespoon white wine vinegar

Steps:

  • Preheat oven to 350°F..
  • In a shallow baking pan spread bacon in one layer and sprinkle generously with additional pepper. Bake bacon in oven, stirring occasionally, 15 to 20 minutes, or until crisp, and transfer with a slotted spoon to paper towels to drain, reserving drippings.
  • In a small heavy saucepan boil wine with shallot until most wine is evaporated and add cream, mustard, 1/2 teaspoon pepper, and salt to taste. Simmer mixture until thickened slightly and keep warm.
  • In a very large skillet heat half of reserved drippings over moderately high heat until hot but not smoking and cook half of cabbage, stirring, until it begins to wilt, about 2 minutes. Transfer wilted cabbage to a bowl and cook remaining cabbage in remaining reserved drippings in same manner. Return wilted cabbage in bowl to skillet. Add vinegar and cook, stirring, 1 minute. Stir in cream mixture and cook stirring until cabbage is crisp-tender. Add Roquefort, stirring until melted.
  • Divide salad among 6 plates and sprinkle with bacon.

  • Season to taste with a pinch of salt and the pepper. Add the chopped chives.
