12 ounces log of fresh mild goat cheese
1 (8 ounce) package cream cheese, softened at room temperature
6 sun-dried tomatoes, dry and not packed in oil
1/4 cup dry white wine
1/2 teaspoon dry basil
1 teaspoon minced garlic
1/4 teaspoon salt
1 dash white pepper
8 frozen puff pastry shells

Steps:

  • Soak the sundried tomatoes in the wine for 30 minutes or overnight for best results.
  • Mix the goat and cream cheeses together in a bowl, blending well.
  • Remove the sundried tomatoes, chop them fine, and discard the wine. Add to cheese mixture.
  • Add all other ingredients.
  • Mix very well until evenly blended.
  • Cover and refrigerate until ready to use.
  • To serve in a puff pastry shell, bake the shells according to the package instructions. Cool them to room temperature.
  • Place a scoop of the herbed goat cheese mix into each pastry shell.
  • Return the shells to the oven and bake at 350°F for 10 minutes to just warm them.
  • Best served warm with a knife to spread the herbed cheese onto pieces of the pastry.

1/2 cup fresh minced garlic
2 tablespoons minced fresh thyme
2 tablespoons fresh ground pepper
2 tablespoons kosher salt
1 cup olive oil
2 (3 ounce) logs goat cheese, cut into 4 pieces each
1 1/2 cups seasoned bread crumbs
1 cup good quality- aged balsamic vinegar
1 teaspoon minced fresh garlic
1 teaspoon minced shallot
2 tablespoons chopped fresh basil
1 tablespoon Dijon mustard
2 teaspoons soy sauce
2 tablespoons rice vinegar
1 teaspoon cracked pepper
1 cup extra virgin olive oil
8 ounces baby greens
1/2 cup candied pecans (optional)
1/4 cup shaved carrot (optional)
1/4 cup red onion (optional)

Steps:

  • Cheese:.
  • Combine garlic, thyme, pepper, salt, and oil in a bowl.
  • Whisk to incorporate ingredients.
  • Place the cheese slices into the mixture making sure to coat all sides.
  • Cover and refrigerate overnight.
  • Dressing:.
  • Using a whisk mix all ingredients except olive oil in a bowl. After all are well mixed use whisk and slowly add oil to emulsify. Refrigerate till ready to serve.
  • Before serving place a cookie sheet in oven and preheat to 350°.
  • Spread bread crumbs onto plate and roll the cheese in them. Make sure to press the crumbs into the cheese.
  • Transfer the cheese onto the hot pan and cook for 8 minutes.
  • Toss the greens and all desired add ins together w/ desired amount of dressing and top each salad with cheese.
  • Serve while cheese is warm.
  • Prep time does not include chilling time.

I ate something like this at a restaurant once and LOVED it. I made this recipe from memory and still eat it all the time. Enjoy!

1/2-1 kg tomatoes
1 tablespoon olive oil (for frying)
2 tablespoons fresh olive oil, to be added at the end
salt or pepper
5 fresh thyme sprigs
300 -400 g soft goat's cheese (rounds)

Steps:

  • Heat olive oil and thyme sprigs in a frying pan on med heat. Let the olive oil absorb the flavor of the thyme, until the thyme starts to fry. Turn down the heat to low and slice the tomatoes into thick-ish slices (1cm slices) and add the tomatoes to the pan. Gently warm the tomatoes, careful not to actually cook them, about 5 minutes While the tomatoes are warming, add the chilled goat's cheese to a serving plate. When tomatoes are warm and not yet cooked (skins still attached), pour contents of pan over goat's cheese. Add some fresh olive oil, salt and pepper to taste. Enjoy with a fresh rustic baked baguette.

3 medium ripe tomatoes, seeded and chopped (1 1/2 cups)
1/4 cup snipped fresh basil
1/4 cup snipped fresh oregano
2 green onions, sliced (1/4 cup)
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1 (15 ounce) can small red beans or 1 (15 ounce) can kidney beans
1 (15 ounce) can great northern beans or 1 (15 ounce) can navy beans
4 ounces soft fresh goat cheese (1 cup) or 4 ounces feta cheese, crumbled (1 cup)
fresh basil sprig (optional)

Steps:

  • In a medium bowl combine tomatoes, fresh basil, fresh oregano, green onions, garlic, salt, and pepper.
  • Let stand at room temperature for 30 minutes to 2 hours.
  • In a medium saucepan combine undrained red or kidney beans and undrained great northern or navy beans.
  • Bring to a boil; reduce heat- Cover and simmer for 2 minutes or till heated through- Drain.
  • To serve, toss warm beans with tomato mixture.
  • Sprinkle cheese over bean mixture.
  • If desired, garnish with fresh basil.
  • Serve warm.
