My husband and I love preparing entire meals on the grill, to the surprise and delight of company. We create this unique dessert for my mother, who can't eat most grain products. She was thrilled with the sweet fruit topping spooned over vanilla ice cream.

3 medium tart apples, peeled
1/3 cup raisins
1 tablespoon lemon juice
1/3 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/8 teaspoon salt
1/8 teaspoon ground nutmeg
2 tablespoons cold butter
1/3 cup finely chopped walnuts
Vanilla ice cream

Steps:

  • Cut each apple into 16 wedges; place all on an 18-in. square piece of heavy-duty foil. Sprinkle with raisins; drizzle with lemon juice. , In a bowl, combine the brown sugar, cinnamon, cloves, salt and nutmeg; cut in the butter until crumbly. Stir in walnuts. Sprinkle over apples and raisins., Fold foil around apple mixture and seal tightly. Grill over indirect medium heat for 18-22 minutes or until apples are tender. Serve with ice cream.

½ cup pecans
3 Granny Smith apples - peeled, cored, and chopped
2 tablespoons white sugar
water
½ cup golden raisins
1 pinch salt

Steps:

  • Melt butter in a saucepan over medium heat; cook and stir pecans in melted butter until lightly toasted, 2 to 3 minutes. Transfer toasted pecans to a bowl with a slotted spoon, reserving butter in pan. Cook and stir apples in reserved butter until apples begin to soften, about 2 minutes; add sugar.
  • Stir water, raisins, and salt into apple mixture. Simmer, stirring occasionally, until raisins are plump, about 5 minutes. Add whiskey, vanilla extract, and toasted pecans.

1/2 cup orange juice
1 tablespoon fresh lemon juice
1/4 cup dark brown sugar

1/4 lemon
1 vanilla bean

Steps:

  • Place the apples in a saucepan with the sugar (if using). With a very sharp knife, remove the rind from the lemon (avoiding the bitter pith). Then mince the rind and add it to the saucepan. Squeeze the juice of the lemon into the saucepan, add the vanilla bean, cover, and cook over medium heat for half an hour. If the mixture becomes too dry, add a tablespoon of water, but the idea is to steam the apples in their own juices. Serve with healthy hot cakes.

1/2 vanilla bean, split in half
1 tablespoon Calvados or brandy
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg

8 large Golden Delicious apples, peeled, cored, and cubed

Steps:

  • In a large saucepan, combine the water, sugar, vanilla bean and seeds, Calvados, cinnamon, cloves, nutmeg, and salt and bring to a boil. Boil gently until the sugar is dissolved and the mixture thickens slightly, about 5 minutes. Add the apples and return to a boil. Lower the heat and simmer, stirring occasionally, until the apples are very tender and the mixture thickens, about 20 minutes.
  • Remove from the heat and remove the vanilla bean pods. Let cool to room temperature before serving. (The mixture will thicken as it cools.) Serve as an accompaniment to breakfast items, such as toast, French toast, waffles, pancakes, or as a topping for ice cream or pound cakes.

12 ounces cranberries, rinsed
1 lb granny-smith apple, chopped
1 tespoon fresh ginger, finely grated (Note -- For extra spice, make it 1 tablespoon like I did!)
1 cup clementine juice (OR 4-6 clementines)
3 cups water (or as needed)
1 1/4 cups sugar
1 pinch salt
1 whole cinnamon stick

Steps:

  • If you have or can get clementine juice, skip to step two. Otherwise -- put about 4 or 5 peeled and seeded clementines into a blender. Blend on low speed until juice is extracted. Place this into a saucepan.
  • Place clementine juice, water, sugar and salt into a saucepan. Add cranberries, ginger, and apples and stir well. Turn heat on to MEDIUM.
  • Add cinnamon stick and stir gently.
  • Cover and simmer, stirring occasionally until fruit is soft and cranberries have exploded. (About 30 minutes) Note: If fruit is not cooked before your water evaporates, add more water and cook until soft.
  • Uncover and simmer until thick, stirring occasionally (about 10-15 minutes), But please don't walk away at this point! It may burn --
  • Turn heat off and let cool, then carefully remove cinnamon stick. Serves well either warm or cold. It's ready to eat!

  • Cut up some apples. To make about 3 cups of an all-apple compote, start with four apples, which should be somewhere between 1 1/2 and 2 pounds. I like to use a mix of apple varieties, just like when making pie or crisp since some of them melt down more than others and some are more tart or sweet.
  • Add water and sweetener. For every half pound of fruit, add 2 Tbsp. of water and 1 tsp. of sweetener to the pot. So if you're starting with 2 pounds, that's 8 Tbsp.
  • Add some spices and/or aromatics. First up, toss a pinch of salt into your pot. Yes, just a pinch to intensify the flavors and help everything taste better.
  • Cook it. Set your pot over high heat and cook just until the water starts to boil, then turn it down to medium-low. Stir to combine, then cover the pot and let it cook for about 10 minutes, stirring at least once halfway through.
  • Fuss with the flavor. Remove your pot of compote from the heat and give it a taste. If it's not sweet enough, stir in a bit of your favorite liquid sweetener.
  • And serve. Eat your apple compote right away, or let it cool and transfer it to a resealable container to stash in the fridge for the week. Or do both—enjoy it now, and save some for later—you'll be glad you did.
