CHICKEN WITH WARM POTATO SALAD

1 pound baby Yukon gold potatoes, halved
Kosher salt
4 ounces green beans, trimmed and cut into pieces
1 3-ounce jar roasted red peppers, drained and chopped
1 tablespoon red wine vinegar
3 scallions (white and light green parts only), thinly sliced
3 tablespoons extra-virgin olive oil
Freshly ground pepper
1 1/4 pounds thin-cut skinless, boneless chicken breasts
Juice of 1 lemon
3 cups baby arugula (about 2 ounces)
2 ounces goat cheese, crumbled

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water; season with salt. Bring to a boil, then reduce the heat to medium and simmer until almost tender, about 12 minutes. Add the green beans and continue cooking until the beans and potatoes are tender, about 3 more minutes. Drain and transfer to a large bowl. Gently stir in the roasted red peppers, vinegar, scallions, 2 tablespoons olive oil, and salt and pepper to taste; set aside.
  • Season the chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper. Heat a large nonstick skillet over medium-high heat. Add the remaining 1 tablespoon olive oil, then the chicken and cook until golden brown, 2 to 3 minutes per side. Remove from the heat and drizzle with the lemon juice.
  • Add the arugula to the potato salad and toss; top with the goat cheese and serve with the chicken.

2 tablespoons extra-virgin olive oil
6 chicken cutlets, about 3 ounces each
3/4 teaspoon salt
1/4 teaspoon red pepper flakes
1 1/2 cups store-bought marinara sauce
3/4 cup shredded mozzarella
3 cups baby arugula
1 cup small basil leaves
1/2 cup shaved Parmesan
1/4 cup chopped oil-packed sun-dried tomatoes
1 tablespoon extra-virgin olive oil
1 teaspoon Champagne vinegar
1/4 teaspoon salt

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Sprinkle the cutlets on both sides with the salt and pepper flakes. Place the cutlets in the skillet and cook, undisturbed, until golden brown on the first side, 3 minutes. Flip, and cook for an additional minute. Add the marinara sauce and turn the cutlets to coat in the sauce. Top with the mozzarella, reduce the heat to medium, and cover the pan. Cook for an additional 5 minutes to melt the cheese.
  • Meanwhile, combine the arugula, basil, Parmesan, sun-dried tomatoes, olive oil, vinegar and salt in a large bowl. Toss well to coat.
  • To serve: Place one piece of chicken on a plate and top with a spoonful of sauce. Add a bit of the salad right on top of the chicken, and serve.

½ teaspoon rice vinegar

1 pound skinless, boneless chicken breast halves - cut into thin strips
2 tablespoons frozen limeade concentrate, thawed
¼ teaspoon black pepper
2 tablespoons vegetable oil
1 head red leaf lettuce - rinsed, dried and torn
1 (11 ounce) can mandarin oranges, drained

Steps:

  • In a jar, combine lime juice, sugar, lime zest, rice vinegar, and mustard. Shake well, and set aside. In a small bowl, mix chicken with limeade concentrate and pepper.

2 small chicken breasts, boned, skinned and cut in half
calorie controlled cooking oil spray
1 large orange or red pepper, deseeded and cut in to chunks
1 little gem lettuce, leaves separated
50g/1¾oz watercress, tough stalks removed
2 ripe medium tomatoes, cut into small chunks
⅓ cucumber, sliced
1 tsp thick balsamic vinegar
½ small lemon, juice only
sea salt and freshly ground black pepper

Steps:

  • Season the chicken pieces on both sides with salt and pepper. Spray a large non-stick frying pan with oil and place over a high heat. Cook the chicken pieces for three minutes on each side or until lightly browned and cooked through. Transfer to a plate.
  • Spray the pan with a little more oil and cook the pepper for three minutes on each side or until lightly charred and beginning to soften.
  • Arrange the lettuce leaves, watercress, tomatoes, cucumber and pepper on two plates.

zest and juice 3 limes
3 tbsp fish sauce
3 tbsp soft light brown sugar
2 hot red chillies , thinly sliced (see tip, below)
1 tbsp extra virgin olive oil
2 garlic cloves , crushed
1 tsp turmeric
handful coriander stems, finely chopped
8 chicken leg or thigh pieces, skin on
bunch spring onion , shredded lengthways
½ cucumber , halved, deseeded and cut into long strips
200g baby tomato , halved
handful coriander
handful Thai basil leaves
2 ripe avocados , sliced
handful toasted cashews or peanuts

Steps:

  • Whisk together the lime zest and juice, fish sauce, sugar and chillies until the sugar dissolves. Pour 1/3 of this mix into a bowl, add the oil and set aside (this will be the dressing). Put the remainder into a large food bag with 1 tsp salt, the garlic, turmeric and coriander stems. Slash each piece of chicken down to the bone a few times, then add to the marinade and squish it around well in the bag. Chill for at least 2 hrs, or ideally up to 24 hrs.
  • Heat oven to 180C/160C fan/gas 4 (if barbecuing, get the coals ready). Lift the chicken from the marinade and into a roasting tin. Roast for 30 mins until cooked through but not yet completely tender.
  • If you're barbecuing, transfer the chicken from its tin to a hot barbecue for 10 mins more, turning once crisp (otherwise continue roasting in the oven). Spread the spring onions, cucumber and tomatoes over a platter, add the chicken, then finish with the herbs, avocados, nuts and dressing.

½ small baguette , cut into bite-size pieces
4 tbsp olive oil
1 tbsp balsamic vinegar
150g bag mixed salad leaves
1 x 250g pack cooked beetroot , cut into bite-size pieces
100g goat's cheese

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Spread the chunks of chicken and baguette over a shallow roasting tray. Drizzle with 2 tbsp olive oil and toss to coat. Season, then put in the oven for 15 mins until the chicken is cooked through and the bread is golden and crisp.

This is a fabulous recipe which is very quick to put together and even quicker to eat! It's been in the recipe folder on my computer for a while so I can't remember where it originally came from. I have actually added a few salad leaves in the past so feel free to play around with it.

2 chicken breasts
1 teaspoon vegetable oil
3 tablespoons fresh mint leaves
3 tablespoons fresh coriander leaves
sea salt

1 lime, quartered

2 tablespoons fish sauce
1 teaspoon sesame oil or 1 teaspoon vegetable oil
2 teaspoons sugar

  • Heat the grill; Brush the chicken with vegetable oil and grill until cooked through; Let it rest for five minutes and then slice thinly.

2 skinless chicken breasts
75 g green beans, trimmed
75 g asparagus spears
6 cherry tomatoes, halved
2 tablespoons pine nuts
4 tablespoons chopped fresh basil
1 cup baby salad leaves
2 tablespoons extra virgin olive oil
1 teaspoon cider vinegar
1 teaspoon Dijon mustard

Steps:

  • Place the chicken in small pan of cold water, bring to the boil, then lower the heat and simmer for 8 - 10 minutes. Remove from the pan and allow to cool slightly. Alternatively steam in a steamer.
  • Steam the green beans and asparagus spears until tender but still crisp; refresh in cold water.
  • Mix the beans and asparagus with all the other salad ingredients in a bowl except for the baby salad leaves.
  • Place the dressing ingredients in a screw-top jar with 1 tablespoon of water and shake well.
  • Slice the chicken while still warm and add to the salad. Pour over the dressing and toss to coat.
  • Serve in a large salad bowl, garnished with the baby salad leaves.

6 eggs, hard-boiled and chopped
2 cups instant rice, prepared as directed
3 cups cooked chicken, diced (I use leftover rotisserie chicken)
1/2 cup thinly sliced green onion (tops and bottoms)
8 ounces sliced water chestnuts
1/2 cup slivered almonds
1/2 cup cashews
1 cup diced celery
2 ounces pimentos, diced (1/2 cup diced red bell pepper)
3/4 cup mayonnaise, I use light sometimes
3 tablespoons lemon juice
1/2 teaspoon lemon pepper
1 (10 1/2 ounce) can cream of chicken soup, I use fat-free (condensed)

Steps:

  • In a small bowl mix mayo, lemon juice, and lemon pepper. Pour over the other ingredients and mix together.
  • If salad seems dry add a little chicken stock to moisten.
  • If hot put into a 9X11 inch oblong dish. Bake for 45 minutes at 350°, this dish may be made one day ahead, uncovered.

  • Heat oil in skillet or wok over med-high heat.
  • Cook garlic and chile in oil around 30 secs, stirring frequently.

  • Stir in remaining ingredients except salad greens.
  • Heat to boiling, stirring constantly; boil and stir 30 secs.

½ tsp chopped fresh or dried rosemary
1 whole chicory or Baby Gem lettuce, separated into leaves
100g watercress
3 tbsp balsamic vinegar
crusty granary bread , to serve

Steps:

  • Cook the green beans in a pan of boiling water for 3 mins, drain and keep warm. Meanwhile, toss together the chicken livers, olive oil and rosemary. Heat a large non-stick pan and cook the chicken livers over a high heat for 5-6 mins until nicely browned and cooked through - they should still be a little pink in the centre.
  • Arrange the beans on serving plates with the lettuce leaves and watercress. Add the vinegar to the pan, cook for a couple of seconds then spoon over the salad. Serve warm with crusty granary bread.

200 g chicken livers, cut into bite-sized chunks
200 g bacon, cut into lardons
12 cherry tomatoes, halved
200 g new potatoes, cleaned
75 g butter
4 tablespoons balsamic vinegar
150 g French beans, topped and tailed
handful lettuce
handful rocket

Steps:

  • Boil the potatoes until just under-done. Let them dry in a colander then cut in half. Meanwhile, boil or steam the beans until al dente.
  • Heat the butter in a heavy frying pan. When bubbling, add the halved potatoes and saute until nicely coloured.
  • Use a slotted spoon to remove them from the pan and set aside.
  • Get the pan back to temperature and add the lardons. Fry for a couple of minutes, then add the livers (you want these to be ready at the same time, so if you prefer the livers well done, put them in earlier, if you prefer them pinker, you'll want to wait. It all depends on the size of your lardons and liver chnks - use your judgement!).
  • Once the livers are just browned, add the balsamic vinegar and continue to cook until the meat is cooked. Add a little more balsamic if it reduces too quickly. Season with freshly ground black pepper and sea salt.

A delicious, superhealthy and zesty light chicken salad recipe with sunshine flavours

4 boneless skinless chicken breasts , cut into strips
zest and juice of 1 lemon
1 tsp dried or a few sprigs of fresh thyme
3 tbsp oil
150g bag of mixed salad leaves or 2 heads of Little Gem, pulled apart
1 small red onion , halved and thinly sliced
squeeze of garlic paste or 1 garlic clove , crushed
handful pitted black olives , halved

Steps:

  • Put the chicken pieces into a bowl, add the lemon zest, thyme, plenty of black pepper and salt to taste, then mix well with your hands. Heat 1 tbsp oil in a pan then fry the chicken for 8-10 mins, until golden and cooked through. Meanwhile, spread the leaves and onion over a large platter or in a big salad bowl.
  • Add the garlic paste and olives to the pan, then fry for 1 min more. Spoon the chicken and olives onto the leaves. Take the pan off the heat then add the rest of the oil and lemon juice. Stir together well, scraping off any bits from the bottom of the pan. Check the seasoning, then pour over the chicken and salad. Serve with crusty bread.

Warm chicken & chicory salad image

Add some crunch to your roast chicken with this flavour-packed winter salad

1.6kg whole chicken
4 tbsp butter , at room temperature
200ml sherry vinegar , plus 1 tbsp
200g frozen peas
3 tbsp olive oil
½ tsp caster sugar
50g raisins
15g pack dill , roughly chopped
3 heads chicory , green, red or a mixture
50g mixed salad leaves (we used rocket and chard mix)
100g pine nut , toasted
crusty bread , to serve

Steps:

  • Heat oven to 160C/140C fan/gas 3. Rub the chicken all over with butter and season well, inside and out. Sit it in a small roasting tin, pour the Sherry vinegar around, and cover with foil. Roast for 2 hrs.
  • Meanwhile, get all of the remaining ingredients ready. Boil the peas for 1 min until just tender. Drain well, plunge into cold water to quickly cool, then drain again and set aside.
  • Once your chicken has roasted for 2 hrs, remove from oven. Pour the juices into a jug, then increase oven temp to 220C/200C fan/gas 7. Roast for a further 20-30 mins (without foil) until golden.
  • Skim the fat from the juices, then boil until you have about 100ml of juices left. Stir in the extra tbsp of vinegar, olive oil and caster sugar, taste, then tip onto your serving dish with the raisins.
  • When the chicken has finished its second roasting, leave until cool enough to handle (or pop on a pair of clean rubber gloves), then tear the meat in large pieces from the carcass, onto the serving dish. Add the dill, chicory, salad leaves, pine nuts and peas, then toss together with your hands. Serve straightaway with some crusty bread.
