We make and decorate these cutouts for different holidays and give lots of them as gifts. Last year, we baked a batch a week before Christmas to be sure we'd have plenty to give and plenty for ourselves, too. These rich cookies melt in your mouth. -Kim Hinkle, Wauseon, Ohio

Number Of Ingredients 13

2 cups butter, softened
1 package (8 ounces) cream cheese, softened
2 cups sugar
2 large egg yolks, room temperature
1 teaspoon vanilla extract
4-1/2 cups all-purpose flour
FROSTING:
3 tablespoons butter, softened
1 tablespoon shortening
1/2 teaspoon vanilla extract
3-1/2 cups confectioners' sugar
4 to 5 tablespoons 2% milk
Food coloring, optional

Steps:

  • In a large bowl, cream butter, cream cheese and sugar until light and fluffy, 5-7 minutes. Beat in egg yolks and vanilla. Gradually beat flour into creamed mixture. Divide dough in half. Shape each into a disk; wrap and refrigerate until firm enough to roll, 2 hours., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with floured 3-in. cookie cutters. Place 1 in. apart on greased baking sheets. Bake until set (do not brown), 10-12 minutes. Cool on pans 5 minutes. Remove to wire racks to cool completely., For frosting, in a bowl, beat butter, shortening and vanilla until blended. Beat in confectioners' sugar and enough milk to reach spreading consistency; beat until light and fluffy, 3 minutes. If desired, beat in food coloring. Frost cookies. (Keep frosting covered with a damp towel to prevent it from drying out.)

I love this recipe because it is so easy to roll out, and the taste is great. This is our favorite Christmas cookie recipe to make, but I also make them for Easter and Halloween. Sometimes I ice them or just sprinkle with colored sugar while they bake. I always double this recipe for us.

Number Of Ingredients 6

1 cup margarine
1 (3 ounce) package cream cheese
1 cup sugar
1 large egg yolk
1 teaspoon vanilla
2 1/2 cups flour

Steps:

  • Cream margarine and cream cheese, then add the sugar, egg yolk, and vanilla, and flour last.
  • I like to chill dough over night or at least several hours.
  • Roll out chilled dough and cut in desired shapes with your favorite cookie cutters.
  • Bake at 350° for 10 minutes.
  • Ice and decorate.

My best friend Darrell's mother, Wanda makes these every Christmas. This is the best rolled sugar cookie I've ever tasted! They are so light and delicate, they practically melt in your mouth! I have no idea how many this recipe makes, I'm guessing 3 dozen. Prep time does not include 2 hour chill time.

Number Of Ingredients 10

1 cup granulated sugar
1 cup powdered sugar
1 cup softened butter
1 cup vegetable oil
1 teaspoon vanilla extract
2 eggs
4 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt

Steps:

  • In a mixing bowl, cream sugar and butter until fluffy.
  • Add oil, vanilla and eggs.
  • Mix well.
  • Stir in dry ingredients; mix well.
  • Cover and chill for at least 2 hours.
  • Preheat oven to 375.
  • Roll out dough on a lightly floured surface to about 1/4 inch thickness.
  • Cut out dough with cookie cutters and place on an ungreased cookie sheet.
  • Bake 5-8 minutes or until lightly browned.
  • Cool on wire racks.
  • Decorate with frosting or sprinkles of your choice.

My very favorite Christmas cookie!! Using a rolling pin with guides really helps roll the cookies even. Use plenty of flour when rolling out and flour the rolling pin also. I bought my rolling pin from Amazon.com.

5 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 cup full fat sour cream, room temperature
1 cup butter, room temperature
2 cups sugar
2 eggs
1 teaspoon vanilla
1 cup butter, no substitutes
1 1/2 teaspoons vanilla
1/4 teaspoon salt
5 cups powdered sugar
2 -3 tablespoons cream or 2 -3 tablespoons milk

Steps:

  • Whisk first four ingredients together in a large bowl; set aside.
  • In large mixer bowl, mix sour cream and butter until creamy.
  • Add sugar, eggs and vanilla and mix well.
  • Add dry ingredients and mix until well blended.
  • Divide dough in half and wrap each half in plastic wrap; refrigerate for at least 2 hours.
  • Flour area where you are going to roll cookies and flour the rolling pin with plenty of flour.
  • Roll cookie dough to 1/4 " thickness.
  • Cut out cookies.
  • Place on cookie sheet and bake at 350 degrees for about 8 minutes.
  • Do not let cookies brown.
  • Mix all frosting ingredients together until smooth.
  • Frost cookies and decorate.

2 cups sugar
1 cup butter, softened

2 large eggs, lightly beaten
3 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon baking soda
ICING:
4 cups confectioners' sugar
1/4 teaspoon almond extract
1/2 to 2/3 cup evaporated milk
Assorted food coloring and decorations of your choice

Steps:
