Streusel Topping:
1/2 c. each all-purpose flour, packed light brown sugar and chopped walnuts
1 tsp. apple pie spice
3 tbsp. light stick butter
Filling:
6 Granny Smith, Crispin (Mutsu), Pippin, Jonagold, Northeren Spy or Greening Apples (3 lb)
1 tbsp. lemon juice
1/2 c. packed light brown sugar
3 tbsp. all-purpose flour
1 tsp. apple pie spice

Steps:

  • You'll need a 9-in. pie plate. Place one oven rack in lowest position. Place a square of foil on rack to catch any drips.
  • Line pie plate with pie crust as package directs. Flute or crimp edge.
  • Make Streusel Topping: Mix flour, sugar, walnuts and apple pie spice in a medium bowl. Rub in butter with fingertips until mixture forms moist, coarse crumbs that will clump together easily.
  • Make Filling: Peel, halve and core apples. Cut in 1/8-in.-thick slices by hand (or with the slicing disk of a food processor). Place in a large bowl, add lemon juice (to prevent browning) and toss to coat. Mix remaining ingredients in a small bowl, sprinkle over apple slices and toss to coat.
  • Heat oven to 450°F.
  • Layer apple slices in pie shell, mounding them higher in center. Gently press mound to compact apples. Pat and press the topping mixture evenly over apples to form a top crust.
  • Bake 15 minutes. Reduce oven temperature to 350°F and loosely cover pie with foil. Bake 45 minutes longer or until a skewer meets a little resistance when center of pie is pierced (apples will continue cooking after pie is removed from oven) and topping is golden brown. To serve warm, cool about 1/2 hour on a wire rack or let cool completely. Pie will sink a little. It's best on the day it's made, but you can keep up to 4 days loosely covered at room temperature.

Filling
8 cups apples (Golden Delicious or Northern Spy), thinly sliced

1 9-inch pie crust, deep dish, prepared

Steps:

  • In a medium bowl, use a fork to mix together oats, walnuts, brown sugar, flour, cinnamon and ginger. Drizzle with butter and combine to form a coarse crumb mixture. Set aside.
  • In a large bowl, toss apples with sugar, lemon juice, cinnamon and ginger.
  • Arrange apples in prepared pie crust. Sprinkle walnut streusel over top, completely covering the apples.
  • Bake pie on a baking sheet, covered loosely with foil in center of a 375° F oven for 50 minutes. Remove foil and bake until streusel is golden and apples are tender, about 10 minutes more.

This is adapted from a recipe I tried last Thanksgiving AND Christmas from the Food Network; I used a store-bought crust and tripled the streusel (my favorite part ;).... It is a very easy, no-fuss pie; very pretty with it's browned nut topping and you don't have to worry about crimping or venting or any other crust issues! My family really loved it and I hope yours does too.

1 frozen pie crust
6 tablespoons unsalted butter, softened
1/2 cup firmly packed brown sugar
2/3 cup all-purpose flour
1 teaspoon ground cinnamon
1 cup chopped walnuts
3 lbs granny smith apples (approx. 6) or 3 lbs mixture of firm apples (approx. 6)
1/2 cup firmly packed brown sugar
1/4 cup granulated sugar
2 tablespoons all-purpose flour
1 tablespoon fresh lemon juice
3/4 teaspoon cinnamon

Steps:

  • To make topping: In a small bowl with your fingertips blend butter, brown sugar, cinnamon and flour until smooth and blend in nuts. Chill topping, covered.

Steps:

  • To make pastry dough:
  • In a large bowl with a pastry blender or in a food processor blend or pulse together flour, sugar, salt, and butter until mixture resembles coarse meal. Add 2 tablespoons ice water and toss with a fork or pulse until incorporated. Add enough remaining ice water, 1 tablespoon at a time, tossing or pulsing to incorporate, until mixture begins to form a dough. On a work surface smear dough in 3 or 4 forward motions with heel of hand to slightly develop gluten in flour and make dough easier to work with. Form dough into a ball and flatten to form a 1-inch-thick disk. Wrap dough in plastic wrap and chill 30 minutes.
  • To make topping:
  • In a small bowl with your fingertips blend butter, brown sugar, and flour until smooth and blend in nuts. Chill topping, covered.
  • To make filling:

  • Preheat oven to 350°F.
  • On a lightly floured surface roll out dough into a 15-inch round (about 1/8 inch thick) and fold into quarters for ease of handling. Unfold dough in a well-seasoned 10-inch cast-iron skillet or 10-inch deep-dish (1 1/2-quart) pie plate, easing to fit and letting dough overhang rim of skillet or pie plate. Spoon filling into shell and fold pastry overhang over filling, leaving center uncovered. Bake pie in middle of oven 1 hour (pie will not be completely cooked) and remove from oven.
  • Crumble topping over center of pie, breaking up any large chunks. Brush crust with milk and sprinkle with sugar. Bake pie in middle of oven 30 minutes more, or until crust is golden and filling is bubbling. Cool pie on a rack.
  • Serve pie warm or at room temperature with ice cream.
  • Make Sour Cream Ice Cream:
  • In a heavy saucepan combine half-and-half, 3/4 cup sugar, and vanilla bean and bring just to a boil. Remove pan from heat. In a bowl whisk together egg yolks and remaining 1/4 cup sugar and add hot half-and-half mixture in a stream, whisking. Return custard to pan and cook over moderately low heat, stirring, until 170°F. on a candy thermometer.
  • Remove pan form heat. Scrape seeds form vanilla bean into custard and discard pod. Stir sour cream into custard until combined well and strain through a fine sieve into a bowl. Chill custard until cold and feeze in an ice-cream maker. Makes about 1 quart.

2 tablespoons fresh lemon juice

2 3/4 to 3 pounds Golden Delicious apples (about 6), peeled, quartered, cored, cut crosswise into 1/4-inch slices
1 tablespoon unsalted butter
Vanilla ice cream
Crust:
1 1/4 cups all purpose flour
1/2 teaspoon sugar
1/4 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
3 tablespoons (or more) ice water
Streusel:
1 cup all purpose flour
1 cup maple sugar
7 tablespoons chilled unsalted butter, cut into 1/2-inch cubes
Pinch of coarse kosher salt
1/2 cup walnuts, toasted, coarsely chopped

Steps:

  • For crust:
  • Whisk flour, sugar, and salt in large bowl to blend. Add butter. Using back of fork, cut in butter until very coarse meal forms. Add 3 tablespoons ice water. Toss until dough comes together in moist clumps, adding more water by teaspoonfuls if dough is dry. Gather dough into ball; flatten into disk. Wrap in plastic and chill at least 1 hour and up to 1 day.
  • For streusel:
  • Combine flour, maple sugar, butter, and salt in medium bowl. Using back of fork or fingertips, rub in butter until moist clumps form. Transfer 1/4 cup streusel to small bowl and reserve for filling. Mix walnuts into remaining streusel. Chill streusel while preparing pie.
  • For filling:
  • Stir maple sugar, lemon juice, vanilla, spices, and salt in large bowl to blend. Add apples and 1/4 cup reserved streusel mixture; toss to combine. Let stand 15 minutes, tossing occasionally.
  • Position rack in bottom third of oven and preheat to 400°F. Roll out dough on floured surface to 13-inch round. Transfer to 9-inch-diameter pie dish. Fold overhang under. Crimp edge decoratively.
  • Spoon filling into prepared crust, mounding in center. Dot with 1 tablespoon butter. Sprinkle streusel over filling; press lightly to adhere.
  • Bake pie until apples are tender and streusel is crisp and golden brown, covering edge of crust with foil if browning too quickly, about 1 hour 5 minutes. Let pie stand 15 minutes. Serve warm or at room temperature with ice cream.

This is the first on the dessert table to be devoured at any function or festivity! I made this up from a pie I had eaten at a restaurant years ago. This recipe makes two deep dish pies.

½ cup packed brown sugar
½ cup all-purpose flour
1 cup chopped pecans
9 apple - peeled, cored and sliced
¼ cup white sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
2 recipes unbaked pie shells

Steps:

  • Preheat oven to 350 degrees F (175 C).
  • Prepare the topping by combining the butter, brown sugar, flour and chopped pecans. Cut in all ingredients with pastry cutter until pea-sized. Set aside
