2 cups walnuts

Steps:

1/2 teaspoon baking soda
3/4 cup walnuts
1 cup whole-wheat pastry flour (see Ingredient notes)
1/4 teaspoon salt
1 cup buttermilk
3/4 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 cup mild olive oil or canola oil
4 teaspoons very finely chopped fresh rosemary
1 teaspoon vanilla extract
1/2 teaspoon freshly grated lemon zest
2 large eggs, at room temperature (see Tip)
2 large egg whites, at room temperature, or 4 teaspoons dried egg whites (see Ingredient Note), reconstituted according to package directions
1 1/4 cups sugar
1 cup Vanilla Cream (recipe follows)
Confectioners' sugar for dusting
2 cups mixed fresh berries (blueberries, raspberries, blackberries)
Rosemary sprigs for garnish

Steps:

  • Rosemary contributes an ever-so-subtle fragrance to this luxurious cake. Whole-wheat flour blends in seamlessly because its nutty flavor complements the walnuts.
  • Position rack in center of oven; preheat to 350degreesF. Coat a 10-inch (12-cup) Bundt pan, preferably nonstick, with cooking spray. Spread walnuts in a small baking pan and toast in the oven until fragrant, 4 to 6 minutes. Let cool. Place walnuts, whole-wheat flour, all-purpose flour, baking powder, baking soda and salt in a food processor; process until walnuts are finely ground. Combine buttermilk, oil, rosemary, vanilla and lemon zest in a glass measuring cup. Place eggs, egg whites and sugar in a large mixing bowl. Beat with an electric mixer on high speed for 5 minutes. The mixture should be thickened and pale. With a rubber spatula, alternately fold the dry ingredients and buttermilk mixture into the egg mixture, making 3 additions of the dry and 2 additions of liquid. Scrape the batter into the prepared pan, spreading evenly. Bake the cake until the top springs back when touched lightly and a toothpick inserted in the center comes out clean, 35 to 40 minutes. Let cool in the pan on a wire rack for 5 minutes. Loosen the edges and turn the cake out onto the rack to cool completely. Meanwhile, make Vanilla Cream. To serve, set the cake on a platter and dust with confectioners' sugar. Garnish with berries and rosemary sprigs. Serve each piece with a dollop of Vanilla Cream and some berries. Two 1/4-ounce packages active dry yeast
4 cups all-purpose flour
1 cup warm whole milk
1/4 cup sugar
2 tablespoons olive oil
2 teaspoons orange zest
1 teaspoon salt
Oil, for frying
1/2 cup honey
1/4 cup finely chopped walnuts

Steps:

  • For the doughnuts: In a mixing bowl, add the yeast to 1 cup warm water, mix with a fork and let sit for 5 minutes. Add the flour, milk, sugar, olive oil, zest and salt. Mix thoroughly until the batter is smooth, 2 minutes. Cover the bowl with plastic wrap and rest the dough in a warm place for 1 hour.
  • Preheat the deep fryer to 375 degrees F.
  • Dip a tablespoon measure in water, and then scoop out 1 tablespoon of dough. Wet your hands and roll the dough into balls, about 16 total. Place the doughnuts, a few at a time, in the fryer and cook until golden, 2 to 3 minutes.
  • For the honey: Place the honey, walnuts and 1/4 cup water in a pot set over medium heat for 3 minutes.
  • Coat the doughnuts with the walnut honey to serve.

If you seek inspiration for a better pie, you need look no further than a traditional French walnut tart. It is only marginally different, but vive that difference. The reason is butter: butter in the crust and butter in the filling. Oh, and cream in the filling, too. If they had pecans in France I'm sure they would use them, as you could in this recipe.

1 stick butter, more for smearing foil
1 unbaked pastry shell in a 9-inch pie pan
1 1/2 cups sugar
1/2 cup cream
2 1/2 cups roughly chopped walnuts (there should be large chunks)
Salt to taste

Steps:

  • Preheat oven to 400 degrees. Tear off a piece of foil twice as large as crust. Fold it in half and smear it with butter; lay buttered side onto crust. Weight foil with a pile of dried beans or rice (these can be reused for this purpose), pie weights, or a tight-fitting ovenproof skillet or saucepan - anything that will sit flat on the surface. Bake 12 minutes, then remove foil and continue to bake at 350 degrees, until crust is a beautiful shade of brown, another few minutes. Remove and let cool on a rack while you prepare filling.
  • Put sugar in a heavy 6- or 8-inch saucepan or deep skillet with a tablespoon of water and turn heat to medium. Cook, gently shaking pan occasionally, until sugar melts; then cook, stirring occasionally and scraping sides with a heat-proof flexible spatula, until mixture turns golden.
  • Turn heat to low, then carefully add butter and cream. Cook, stirring constantly, until butter melts and mixture is uniform. Stir in walnuts and a large pinch of salt if you like, then spread on crust. Refrigerate for about an hour, then sprinkle with a little more salt and serve.

1/3 cup butter, softened
1/4 cup sugar
1 egg yolk
1 cup all-purpose flour
FILLING:
2 cups coarsely chopped walnuts
2/3 cup packed brown sugar
1/4 cup butter, cubed
1/4 cup dark corn syrup
1/2 cup heavy whipping cream, divided

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Beat in egg yolk. Gradually add flour just until blended (mixture will be crumbly). , Press onto the bottom and up the sides of an ungreased 9-in. tart pan with removable bottom. Place pan on baking sheet. Bake at 375° for 12-14 minutes. Cool in the pan on a wire rack. , Sprinkle nuts over crust. In a small heavy saucepan, combine sugar, butter, corn syrup and 2 tablespoons of cream. Boil and stir over medium heat for 1 minute longer. Pour over walnuts. , Return pan to baking sheet. Bake at 375° for 10-12 minutes or until bubbly.
