1 cup chopped pecans
1 cup sugar
1/4 cup all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1 egg
1/2 cup butter, melted
1 teaspoon vanilla extract
Pecan halves

Steps:

  • In a food processor, combine chopped pecans and sugar; cover and process until nuts are ground. Transfer to a small bowl; add flour, baking powder and salt. In a bowl beat egg; add butter and vanilla. Stir into pecan mixture. , Drop by teaspoonfuls about 3 in. apart onto lightly greased foil-lined baking sheets. Place a pecan half in the center of each cookie. Bake at 325° for 8-10 minutes or until golden brown and lacy. Allow cookies to cool completely before carefully removing from foil.

BUTTERSCOTCH-WALNUT COOKIES

Rich butterscotch chips and hearty walnuts make these cookies warm and comforting.

1 stick (8 tablespoons) unsalted butter, at room temperature
1/3 cup packed light brown sugar
1/3 cup granulated sugar
1 teaspoon pure vanilla extract
1 large egg
1 1/4 cups all-purpose flour (see Cook's Note)
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup butterscotch chips
1/2 cup roughly chopped walnuts

Steps:

  • Beat the butter, brown sugar and granulated sugar with an electric mixer on medium speed in a large bowl until fluffy. Add the vanilla and egg and beat to combine.
  • Whisk together the flour, baking soda and salt in a medium bowl. Add the flour mixture to the butter mixture and beat until just combined. Stir in the butterscotch chips and walnuts.
  • Line 2 baking sheets with parchment paper. Scoop slightly mounded tablespoons of the dough and roll into balls. Arrange the balls about 2 inches apart on the prepared baking sheets and refrigerate for 30 minutes.
  • Meanwhile, position oven racks in the top and bottom thirds of the oven and preheat the oven to 350 degrees F.
  • Bake the cookies until they are set and golden on the bottom, 12 to 15 minutes. Let cool on the baking sheets for 10 minutes, then transfer to racks to cool completely.

LACE COOKIES (FLORENTINE COOKIES)

1 ½ cups whole raw almonds
½ cup unsalted butter
¾ cup light brown sugar
¼ cup honey
½ teaspoon vanilla extract
1 pinch salt
3 tablespoons all-purpose flour
1 cup semisweet chocolate chips, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone liner (such as Silpat®).
  • Place almonds into the bowl of a food processor; alternate pulsing and running at full speed every few seconds until finely chopped and crumblike. Be careful not to go too far; you don't want them too fine and pasty.
  • Combine butter, brown sugar, and honey in a saucepan over medium heat. Stir a few times and cook until melted and dissolved. Bring to a boil, then carefully remove from the heat.
  • Add vanilla extract, salt, and flour, and whisk until smooth. Add chopped almonds and mix with a spatula until everything is combined.
  • Drop eight uniformly sized, rounded spoonfuls of batter (each about 2 teaspoons, or 15 grams) onto the prepared sheet. Fine-tune the cookie shapes and make sure they are evenly spaced.
  • Place in the center of the preheated oven and bake until golden brown and a bit darker around the outsides, 10 to 12 minutes, rotating the pan halfway through.
  • Remove from the oven and slide the silicone liner off the baking sheet and directly onto the countertop. Allow to sit until cool and crisp, 3 to 5 minutes, then gently peel cookies off the liner. Repeat to bake remaining batches.
  • Spread melted chocolate over the flat side of one cookie. Place a second cookie, flat-side down, on top to make a sandwich and press very gently to seal. Repeat to form remaining cookies. Let sit until chocolate has firmed up, about 30 minutes.

1/2 cup honey
1/2 cup packed light brown sugar
1 cup toasted sliced almonds
1/4 teaspoon table salt
1 teaspoon vanilla extract
2/3 cup all-purpose flour
4 ounces bittersweet chocolate, finely chopped

Steps:

  • Combine the butter, honey, and brown sugar in a small saucepan, over medium heat, and cook, stirring frequently, until the mixture is bubbly and smooth, about 5 minutes. Stir in the almonds, salt, and vanilla and cook 1 minute more.
  • Remove the pan from the heat and stir in the flour until smooth. Let cool slightly. Refrigerate until the batter sets up, at least 1 hour.
  • Heat oven to 350 degrees F and arrange racks in upper and lower third.
  • Line 2 baking sheets with parchment paper and drop the batter by rounded teaspoonfuls onto prepared baking sheets, leaving 3 to 4 inches space between each. Put the sheets on the racks and bake until bubbly, brown on edges, and golden throughout, about 8 to 10 minutes. Remove from oven and let cool on baking sheet. Repeat until all of the batter is used.
  • When cookies are cool, melt the chocolate over medium-low heat, in a small saucepan, until smooth. Dip half of each cookie in the chocolate, scrape off excess, and set on a cooling rack to dry. Refrigerate for 10 to 15 minutes to set up.

In Spain and Latin America polvorones are cookies for celebrations. Marcela Valladolid uses walnuts instead of the more traditional pecans but keeps the crumbly quality that characterizes these universally popular cookies.

2 sticks (8 ounces) unsalted butter, at room temperature
1/2 cup granulated sugar
2 cups all-purpose flour
1 cup chopped walnuts
1/2 cup ground walnuts
1/2 cup powdered sugar, plus more for serving

Steps:

  • With an electric mixer or in the bowl of a stand mixer using the paddle attachment, beat the butter until light and fluffy. Add the granulated sugar and beat until well blended. Beat in the flour, and then the chopped and ground walnuts. Remove the dough from the bowl and form into a large disc. Wrap the dough in plastic and chill in the refrigerator for 30 minutes.
  • Preheat the oven to 325 degrees F. Line two baking sheets with parchment paper.
  • Remove the chilled dough from the refrigerator. Cut the dough into quarters, and then cut each quarter into sixths for a total of 24 equal pieces. Roll each piece of dough between your palms into 2-inch balls. Arrange the 24 balls onto the prepared baking sheets (12 cookies on each sheet), spacing them 1 inch apart. Bake the cookies until golden brown on the bottom and just pale golden on top, 20 to 25 minutes.
  • Cool the cookies for 5 minutes on the baking sheet. Toss the warm cookies in the confectioners' sugar. Transfer the sugarcoated cookies to a rack to cool completely. (The cookies can be prepared 2 days ahead. Store them in an airtight container at room temperature.) Sift more confectioners' sugar over the cookies before serving or toss in sugar a second time.

A chocolate indulgence is a must for everyone, but that doesn't mean that you have to have excessive fat and calories. These chocolate-walnut lace cookie ice-cream sandwiches can be assembled as spectacular frozen towers, and the nutritional numbers are just as impressive. The easy-to-prepare cookies are made with the healthy fats in chopped walnuts, plus a small amount of intensely flavoured cocoa and a prudent amount of butter for that unmistakable taste. High-fibre oats add heft and texture to the batter, which is bound together with only 1 Tbsp. of egg white. As for the ice-cream, you can go with chocolate if you want an intense cocoa experience, or strawberry to add an appropriate touch of pink. A scoop of each wouldn't be so bad either. If you want ot be completely virtuous you use non-fat frozen yogurt or ice cream, bur varieties with even a small amount of fat tend to have a more luxurious mouth feel.

Steps:

  • Heat oven to 325°F Line a large baking sheet with foil and coat it with cooking spray or brush it with oil.
  • In a small saucepan over medium heat, combine sugar and butter. Cook, stirring constantly, until mixture is melted and bubbling, 1-2 minutes. Transfer mixture to a medium bowl.
  • Add oats, walnuts, cocoa, baking powder and vanilla, then stir to combine. Set aside.
  • In a small bowl, use a fork to beat egg white until it is slightly frothy. Measure out 1 tablespoons of the beaten egg white and stir it into the cookie batter; discard remaining egg white or reserve for another use.
  • Drop half tablespoonful of the batter about 2-inches apart on the prepared baking sheet to make 12 cookies. Bake 8-12 minutes or until cookies look dry and are just beginning to color on top.
  • Slide sheet of foil and cookies off baking sheet and onto a flat surface. Let cookies cool completely. Peel cookies off foil.
  • To assemble sandwiches, set a cookie in the center of a dessert plate. Top with 1/4 cup of the ice cream, set a second cookie on top of the ice cream, then top that with another 1/4 cup of the ice cream. Set a third cookie on top.
  • As you assemble the sandwiches, place them in the freezer until ready to serve.
