Gremolata is an Italian condiment that typically contains garlic, parsley and lemon zest. Some versions contain capers, olives or other intensely flavored ingredients. This version is fragrant yet mild with a slight sweetness from the walnuts. Serve it with grilled meats, fish or vegetables.

Number Of Ingredients 6

1/2 cup California walnuts
1/2 cup parsley sprigs, lightly packed
1 medium lemon, zested
1/8 teaspoon minced or pressed garlic
1/8 teaspoon kosher salt
1/8 teaspoon ground black pepper

Steps:

  • Preheat oven to 350°F. Finely chop walnuts to the size of rice grains, to make about 1/3 cup. Place on a dry baking sheet. Bake 5-7 minutes until lightly toasted, stirring once or twice. Cool.
  • Rinse parsley and pat dry between sheets of paper towel. Finely chop to measure 1/4 cup. Place in a small bowl.
  • Remove yellow part of lemon zest with a zester or fine grater. Add to parsley.
  • Stir in cooled walnuts, garlic, salt and pepper.

Smokey Candied Carrots with Walnut Gremolata image

Number Of Ingredients 9

1 1/2 pounds baby carrots, cleaned, washed and trimmed
1/3 cup smoked sugar or smoked maple syrup
3/4 teaspoon kosher salt
1 tablespoon unsalted butter, at room temperature
1 cup toasted walnuts, chopped
1 cup Italian parsley leaves, chopped
2 teaspoons thyme leaves, chopped
1 teaspoon grated lemon zest
1/4 teaspoon kosher salt

Steps:

  • For the carrots: Place the carrots in a 10-inch saute pan. Add 1 1/2 cups water, the sugar or maple syrup and salt. Place the pan over high heat and bring to a boil, stirring occasionally with a rubber spatula to dissolve the sugar. Reduce the heat to medium-high and continue to simmer vigorously, stirring occasionally, until the liquid has thickened to a syrup and the carrots are fork tender, about 12 minutes. Stir in the butter. Remove from the heat and cool for 5 minutes before serving.
  • For the gremolata: Meanwhile, mix together the walnuts, parsley, thyme, lemon zest and salt in a medium bowl.
  • To serve, gently toss the carrots to coat them in the thickened syrup. Spoon them onto a platter and sprinkle with half of the gremolata. Serve the remaining gremolata on the side.

.25 cup finely chopped fresh mint
2 tablespoons extra-virgin olive oil
2 teaspoons grated lemon zest plus 1 Tbsp. fresh juice (from 1 lemon)
1 medium garlic clove, chopped (about 1 tsp.)
.5 teaspoon kosher salt
.5 teaspoon black pepper

  • Stir together all ingredients in a medium bowl until well combined.

The French serve seared endive as a side, but I've been enjoying this dish as the main event for lunch, with a nice slice of blue cheese or Roquefort accompanying it on the plate.

Number Of Ingredients 10

1/4 cup finely chopped walnuts (about 1 ounce)
2 tablespoons finely chopped parsley
2 teaspoons finely chopped lemon zest (from 1 lemon)
1/4 teaspoon fleur de sel
1 small garlic clove, finely minced (optional)
1 tablespoon extra-virgin olive oil
4 good-size heads Belgian endive, bottoms trimmed, cut in half lengthwise
Kosher salt
Black pepper
1 tablespoon walnut oil

Steps:

  • To make the gremolata, mix together walnuts, parsley, lemon zest, fleur de sel and garlic, if using. Set aside.
  • Heat olive oil in a medium or large skillet over medium heat. Place endive halves in the skillet, cut side down. They should not be touching one another. Season with kosher salt and pepper and cover pan loosely. Cook until golden brown on the cut side, 5 to 7 minutes. Remove from heat and transfer to a platter or to individual plates, cut side up.
  • Sprinkle a generous tablespoon of gremolata over each endive half. Drizzle with walnut oil and serve warm.
