Steps:
- In a small bowl, combine the vinegar, shallot, mustard, salt, and pepper. Gradually whisk in the oil to make a creamy dressing.
- Put all but a large handful of the spinach in a large bowl. Toss with most of the dressing. Add remaining spinach and continue tossing until well coated.
- Serve immediately topped with goat cheese and walnuts.

- In a large bowl, combine the greens, apples, raisins and grapes. In a small bowl, whisk the oil, vinegar, honey, lemon juice and garlic. Pour over salad and toss to coat. Sprinkle with walnuts and goat cheese.

Steps:
- Place walnuts in a single layer on a baking sheet.
- Bake at 350* for 8 to 10 minutes or until toasted.
- Melt butter in a large skillet over medium-high heat; add mushrooms, and saute 6 minutes or until tender.
- Stir in 2 tablespoons Honey-Balsamic Vinaigrette.
- Remove from heat, and let cool 15 minutes.
- Toss together arugula, apple, mushrooms, and desired amount of Honey-Balsamic Vinaigrette.
- Transfer to a serving dish, and sprinkle with toasted walnuts and goat cheese.
TWICE-BAKED GOAT'S CHEESE SOUFFLéS WITH APPLE & WALNUT SALAD
These fabulous soufflés are not as nervewracking to cook and serve as traditional ones, and can be prepared ahead

- Melt the butter in a large saucepan and use about 1 tbsp to grease 6 x 200ml soufflé dishes. Place the remaining butter back on the heat, then scatter over the flour and mix well. Cook for 5 mins, stirring constantly, then gradually whisk in the warm milk, a little at a time, until you have a thick, smooth mixture. Stir in the Parmesan, mustard and thyme, then set aside to cool slightly. Beat in the egg yolks, fold through the goat's cheese, season with salt and pepper, then transfer to a large bowl.
- In a clean bowl, whisk the egg whites until they just start to stiffen and hold peaks. Use a metal spoon to fold them into the cheesy mixture, in 3 additions.
- Heat oven to 200C/180C fan/gas 6. Spoon the mix into the soufflé dishes, then sit them in a roasting tin. Pour boiling water into the tin to reach halfway up the sides of the dishes. Bake the soufflés for 20-25 mins until they are risen and coloured. Remove the dishes and set aside for 10 mins. Run a knife around the edges, then turn out onto an ovenproof tray. The soufflés can now be kept covered in the fridge overnight or frozen for up to a month. Defrost fully before reheating as below. To make the Parmesan glaze, whisk the cream, Parmesan and egg yolk until combined.
- About 15 mins before you are ready to eat, heat oven to 200C/180C fan/gas 6. Drizzle the tops of the soufflés with the glaze. Bake for 10 mins, then finally flash under the grill until the tops are golden.
- Make the salad. Toss the salad leaves, apple, chives and walnuts. Mix the red wine vinegar and olive oil together, season, then dress the salad. To serve, place the soufflés in the centre of the plates and scatter salad around each.

CARAMELIZED ONIONS, APPLE, WALNUTS AND GOAT CHEESE PIZZA
Elegant, rich, creamy, and honestly not hard. Premade pizza dough and just a few ingredients make this a great appetizer or a great side to some roasted chicken or pork. I like to make this in a rectangle, but you can make this round and serve as pizza slices. What ever is easiest for you. This is a wonderful starter for a dinner party with friends. This served along a nice rich fall salad with roasted vegetables is a perfect first course. Roasted duck or cornish hens, a slow roasted pork roast with braised sweet potatoes in a maple bourbon sauce or a rich guinness beef stew. Fall flavors.

- Onions and Apples -- In a large non stick skillet on medium high heat, add the butter, olive oil, onions and start to caramelize. Cook about 5 minutes until they start to brown. Then add the apples, thyme, salt and pepper to taste and cook for approximately 20 minutes until the apples get very soft and brown and almost appear to melt "spreadable.".
- Crust -- I use a baking sheet for this and spray with Pam. Then spread out and lightly roll the pizza dough into a rectangle to fit in the baking pan. Make sure to press the dough out and then prick with a fork all over the crust. This will prevent the crust from "puffing up" or "bubbling" when you cook it. I mix the olive oil, garlic and pepper and brush over the top of the crust and cook at 425 for about 10-12 minutes until it gets slightly brown. Remove from the oven and slightly cool.
- Topping -- Spread the apple onion mixture over crust and garnish with the goat cheese and walnuts fine chopped.
- Broil -- I like to broil the pizza for just 3-5 minutes on the middle rack until the cheese starts to soften and melt.
- Serve -- Cut into squares and serve along side a salad or with any grilled dish. It is a great savory/sweet appetizer or starter dish.

- Pre-heat the oven to 350 and line a sheet tray with aluminum foil. Spread the diced apple and walnuts in an even, single layer on the tray and let them toast in the oven for about 5 minutes. The apples should just be a little soft and the walnuts fragrant but not burnt. When they are done let the tray cool for a minute, then add the crumbled goat cheese to it to just warm it slightly without melting it. Add the mixture to a large salad bowl with the spinach and toss it all together well.
- While the apple and walnuts toast up, quickly make the simple vinaigrette. Combine the balsamic, Dijon, shallot and salt together in a bowl and whisk them together well. Continue to whisk as you pour in the olive oil to bring the dressing together. This is an emulsion and after a while it will separate. That's ok, it just needs a good shake in a sealed bottle to bring it together again! Serve the salad immediately with the dressing and enjoy.
