My Creamy Walnut Coleslaw Recipe is a surefire winner for all your summer party side dish needs. It's crunchy and creamy with a tangy coleslaw dressing and so packed with flavor!

1 bag shredded coleslaw mix (OR 4 cups of shredded purple and green cabbage and carrots)
1 cup walnuts (roughly chopped)
¼ cup mayonnaise
¼ cup sour cream or plain Greek yogurt
2 tablespoons apple cider vinegar
1 tablespoons honey (or more to taste)
1 tablespoon whole grain or Dijon mustard (or more to taste)

Steps:

  • Whisk dressing ingredients together in a medium-sized bowl.
  • Stir in coleslaw mix and walnuts until coated.
  • Garnish with fresh parsley and extra walnuts if desired.

3/4 cup mayonnaise
3/4 cup buttermilk
4 to 5 tablespoons sugar
4-1/2 teaspoons lemon juice
3/4 teaspoon salt
1/4 to 1/2 teaspoon pepper
6 cups shredded cabbage (about 1 small head)
1-1/2 cups shredded carrots (2-3 medium carrots)
1/3 cup finely chopped red onion
1 cup coarsely chopped walnuts, toasted
3/4 cup raisins
2 medium apples, chopped

Steps:

  • Whisk together first 6 ingredients. In a large bowl, combine vegetables, walnuts and raisins; toss with dressing. Fold in apples., Refrigerate, covered, until serving.

3/4 cup walnut pieces
2 tablespoons apple cider vinegar
1 tablespoon dijon mustard
1 tablespoon sugar
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
2/3 cup sour cream
1 small or 1/2 large head green cabbage, finely shredded
3 tablespoons chopped fresh cilantro
3 tablespoons chopped fresh dill
3 tablespoons chopped fresh tarragon
8 scallions, chopped
2 cups seedless green grapes, chopped

Steps:

  • Preheat the oven to 350 degrees F. Spread the walnuts on a baking sheet and bake until lightly toasted, 5 to 7 minutes. Let cool, then coarsely chop.
  • Make the dressing: Whisk the vinegar, mustard, sugar, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Gradually whisk in the olive oil until well blended, then whisk in the sour cream.
  • Add the cabbage, cilantro, dill, tarragon, scallions, grapes and toasted walnuts to the bowl; toss to coat with the dressing. Cover and refrigerate 1 to 4 hours before serving.

1/2 large sweet onion, chopped
1 stalk celery, chopped
1/2 cup dried cranberries

1 1/2 teaspoons salt
1 1/2 teaspoons dry mustard

2 x 150g pots bio yogurt
4 tsp apple cider vinegar
2 tsp English mustard powder
4 spring onions , finely chopped
6 celery sticks (320g), finely chopped
400g and 210g cans chickpeas , drained
30g raisins
2 apples
12 walnut halves (35g), broken up
8 crisp lettuce leaves from an iceberg lettuce

Steps:

  • Boil the penne for 12 mins until al dente. Meanwhile, make a dressing by mixing the yogurt with the vinegar, mustard and spring onions.
  • Add the celery, penne, chickpeas and raisins to the dressing and stir until everything is well coated. If you're following our Healthy Diet Plan, chop 1 apple and add to half the salad with half the nuts and serve with half of the crisp lettuce leaves, either as a base or as wraps.
