SPICED RAISIN WALNUT PIE
This pie is delicious! It turned out just as I had imagined...just the right amount of spice...I loved raisin pie,raisin filled cookies, so decided to make one...if you liked raisins...you will love this pie...and the added walnuts that float to the top, reminds me so much of pecan pie, with it's ooey gooey yumminess! I hope...

- 1. In a large bowl, beat the eggs. To the eggs add the salt, sugar, spices, corn syrup, melted butter. Beat until well blended.
- 2. Stir in the walnuts and raisins. Pour into prepared pie shell. Bake in a 375 degree oven for 40 to 50 minutes or until its set. Remove from oven and cool completely before serving.
- 3. Enjoy! Its delicious!

- Preheat oven to 350°. Cut unpeeled lemon into 8 wedges; remove seeds. Place wedges in a food processor; process until finely chopped. Transfer to a large bowl; stir in walnuts, raisins, spreadable fruit, coconut and cinnamon., Place 1 sheet of phyllo dough on a parchment-lined baking sheet; brush with butter. Layer with remaining phyllo sheets, brushing each layer. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.), Spoon filling onto center of phyllo, leaving a 2-in. border on all sides. Fold edges of phyllo over filling, leaving center uncovered. Brush folded edges with butter. Bake 30-35 minutes or until golden brown. Using parchment, carefully slide galette onto a wire rack to cool slightly. If desired, serve with whipped cream.

- Preheat the oven to 375 degrees F. Spray a 12-cup muffin tin with nonstick cooking spray.
- Cut the pie crust into 12 pieces and press them evenly into the bottoms and up the sides of the muffin cups to form a crust.
- In a medium bowl with an electric hand mixer, beat together the butter and sugar until fluffy. Add the eggs, pumpkin pie spice, and vanilla and mix well. Stir in the raisins and walnuts. Spoon the mixture evenly into the crusts.
- Put the muffin tin onto a baking sheet and bake until the filling is set, 18 to 20 minutes. Remove the pan from the oven and allow to cool for 10 minutes. Carefully unmold the tarts, put them onto a rack, and let them cool to room temperature.
FANTASTIC RAISIN-COCONUT PIE
This is one of my favorite pie recipes, it's buttery fantastic, and the filling always bakes out perfectly, this recipe makes two pies, good thing cause you will be eating one yourself lol! You can use a frozen pie crust for this, but still prebake for 8 minutes. If you are a cinnamon-lover then use the 4 teaspoons. I promise, you will love this pie!!!! Prep time does not include making the pie crusts.

- Set oven to 400 degrees.
- Line two 9-inch pie plates with pastry, flute as desired.
- Prick holes all over the pastry using a fork.
- Bake for 8 minutes; cool on wire racks.
- Place the raisins in a saucepan and cover with water, bring to a boil, then remove from heat; set aside.
- In a mixing bowl cream butter with both sugars.
- Beat in eggs, vanilla and cinnamon until thoroughly combined.
- Drain the raisins, then stir into the creamed mixture along with nuts and coconut (the mixture with look slightly curdled).
- Evenly divide the mixture between the two crusts.
- Place the pies on a baking sheet.
- Bake at 350 degrees (bottom oven rack) for 30-35 minutes or until set.
- Cool and top with whipped cream or ice cream.
- DELICIOUS!

- Crack the eggs over a large bowl. Add the brown sugar, salt, melted butter and corn syrup and whisk together until well-blended.
- Stir in the vanilla, orange zest and nutmeg, then stir in the nuts and raisins.
- Pour the filling into the pie crust.
- Place the pie in the oven and bake until the filling is set, 35 to 40 minutes; the pastry should be golden brown and a knife inserted in the center should come out clean. Remove the pie and cool it on a wire rack. Serve slightly warm or cool.

- In a medium-to-large bowl, sift the flour, sugar and salt together. Using a pastry blender, a big serving fork or the tips of your fingers, cut in or pinch or squeeze the shortening until the mixture resembles a bowl of sweet peas. Tossing the mixture quickly and lightly with a fork, sprinkle in the cream or milk 1 tablespoon at a time until 3 tablespoons are added to the dough. If the dough is still dry and won't come together, add the remaining tablespoon. (It's better to err on the side of not having enough liquid than to have too much; you don't want a soupy crust.) Continue tossing until the dough holds together when lightly pressed.
- With lightly floured hands, loosely gather up the dough into a flat ball, place it in a bowl, and cover with plastic wrap. Refrigerate until you are ready to roll out the crust, at least 30 minutes but no longer than overnight.
- Prepare a clean surface for rolling out the dough. Sift enough flour over the surface to prevent the dough from sticking to it. Lightly flour your hands and a rolling pin. Place the chilled dough on the surface and roll the dough into a circle, working from the center to the edges. Starting at the center, roll straight up to the edge, turn the dough slightly and roll straight up to the edge. Repeat the process -- turning the dough and rolling -- until the dough has formed a circle that's slightly larger than the pie dish (make a 12-inch circle for a 9-inch dish). Be careful to keep the dough as even as possible, between one-fourth- and one-eighth-inch thick.
- Place the pie plate upside-down over the rolled out dough. Using a small knife, cut a circle around the plate, leaving a 1-inch border of dough around the plate. Set aside the scraps. Remove the pie plate. Gently fold the crust in half, then gently into quarters. Delicately pick up the crust and place it in the pie plate so the center point of the crust is positioned in the center of the plate. Unfold the dough and press it firmly into position in the plate. Trim the excess dough from the edge, except for a half-inch flap of dough around the edge. Crimp the edge of the pie, then place the prepared pie crust in the refrigerator until needed.

- In a medium saucepan, combine brown sugar, water, cornstarch and stir to well to dissolve the cornstarch. Add orange juice, orange zest, lemon juice and raisins. Stir ingredients together over medium heat until mixture begins to bubble and thickens. Cook for 1 minute. Remove from heat. Stir in walnuts. Set mixture aside to cool.
- Add pie crust to a 9’’ pie plate. Pour cooled filling inside. Cover with second pie crust. Seal the edges and flute or crimp if desired.
- Use a pastry brush to lightly brush egg white over the top crust of the pie. Sprinkle a little sugar lightly on top.
- Bake at 400 degrees F for 35-40 minutes. Check the pie around the 30 minutes mark and if it’s reached desired brownness you can place a piece of aluminum foil on top during the last 10 minutes of cooking.
