EASY FRUIT AND NUT GRANOLA



Easy Fruit and Nut Granola image

Number Of Ingredients 7

12 ounces old-fashioned rolled oats
12 ounces raw nuts, such as blanched almonds and walnuts
1/2 to 1 cup sugar, depending on desired sweetness
1/2 cup vegetable oil
1 tablespoon vanilla extract
1 to 2 teaspoons table salt
1 cup dried fruit, such as golden raisins and cherries

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the oats and nuts in a large bowl. In a separate mixing bowl, combine the sugar, oil, vanilla, salt and 1/4 cup water. Pour the liquid mixture over the oat mixture and stir until combined. Pour onto two baking sheets and spread evenly. Bake until golden brown, 25 to 30 minutes, stirring halfway through.
  • Pour the cooked oat mixture into a bowl and stir in the raisins and cherries. Let cool. The granola will keep in an airtight container at room temperature in a cool, dry place for up to 3 weeks.

She says of this recipe, "I grew up eating homemade granola that my mom made for us and have found that having a tart fruit in the granola gives it extra pizzazz. I enjoy the cranberry-walnut combination. Walnuts have healthy oils and are so good for us. The protein and fat combination of the nut helps to make the granola more filling, providing lasting energy. Granola takes a little while to bake and makes your entire house smell good. This is a good granola for breakfast." NOTE: Add fruit to granola only after the baking is done to avoid drying out the fruit and avoid making it tough to chew and less flavorful.

cooking spray or butter, for greasing pan
4 cups rolled oats
1 cup walnuts, coarsely chopped
1/2 cup sesame seeds
2 teaspoons orange zest, finely grated
1/4 cup evaporated cane juice, crystals
2 teaspoons sea salt, unprocessed
2/3 cup honey or 2/3 cup maple syrup
1/2 cup oil, expeller-pressed
1/2 cup dried cranberries
1/2 cup dried blueberries (optional)

Steps:

  • Preheat oven to 325°F Prepare a shallow 14x11-inch pan by greasing with cooking spray or butter.
  • In large bowl, thoroughly mix together oats, walnuts, sesame seeds, orange zest, sugar, and salt.
  • In a separate bowl combine the honey and oil. Pour over the dry ingredients. Thoroughly mix together and spoon into the prepared pan.
  • Bake for 30 minutes, turning the pan and stirring every 10 minutes, or until golden brown.
  • Remove from oven. Mix in the dried cranberries and blueberries, if using, and allow to cool.

HEALTHY GRANOLA

This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

1 tbsp vegetable oil
100ml clear honey
50ml maple syrup
500g jumbo rolled oats
100g flaked almond
50g pine nut
100g puffed rice
2 tbsp sesame seeds
50g each sultanas and raisins
85g each dried cranberries, dried cherries, chopped dried dates and chopped dried apricots
50g dried coconut shavings (find these at juliangraves.com and healthfood shops)
Greek yogurt and raspberries, to serve

Steps:

  • Heat oven to 160C/fan 140C/gas 3. Heat the oil, honey and maple syrup together in a pan. Mix the oats, almonds, pine nuts, puffed rice and sesame seeds in a large mixing bowl. Pour over the honey mix, stir well to coat, then tip onto a large baking tray. Bake for 15 mins until everything is golden and crisp.
  • Take the tray from the oven, leave to cool, then break up any big clumps. Mix together with the dried fruit and coconut shavings. Serve with Greek yogurt and fresh raspberries. The rest of the granola can be stored in a sealed jar and enjoyed over the next 2 weeks.

350g jumbo oats
1 heaped tsp cinnamon
125g mixed nuts
75g melted unsalted butter or coconut oil (for a vegan version)
70g maple syrup
125g mixed dried fruit

Steps:

  • Heat oven to 180C/160C fan/gas 4. Toss the jumbo oats with the cinnamon, mixed nuts and a pinch of salt in an oven tray. Stir through the melted unsalted butter or coconut oil and the maple syrup. Put in the oven for 35-40 mins or until golden brown, stirring halfway. Allow to cool down completely, then stir through the mixed dried fruit before storing (see tip, below). Serve with milk, yogurt or sprinkled on porridge.

1 cup walnut halves, broken in half
1 cup dried cranberries

Steps:

  • Position rack in bottom third of oven and preheat to 325°F. Generously coat heavy large rimmed baking sheet with nonstick spray. Stir 1/2 cup sugar and syrup in heavy small saucepan over low heat until sugar dissolves, occasionally brushing down sides with wet pastry brush. Pour into large bowl; cool to lukewarm. Whisk in egg whites, extracts, and spices. Add oats, nuts, and remaining 1/4 cup sugar; toss well.
  • Spread mixture in even layer on prepared baking sheet. Bake 35 minutes. Using metal spatula, turn granola over (bottom will be brown). Bake 10 minutes. Sprinkle cranberries over; bake until dry, about 10 minutes longer. Cool granola completely in pan.

1/2 cup all-purpose flour
1/2 cup brown sugar, packed
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
3 tablespoons vegetable oil
1/4 cup orange juice
3 tablespoons pure maple syrup
1/4 cup diced dried apricot
1/4 cup diced dried cranberries
1/2 cup chopped nuts (your preference)

Steps:

  • Preheat oven to 300°F Line a baking sheet with aluminum foil and spray with vegetable spray.
  • Combine the oats, flour, sugar, cinnamon, ginger, oil, orange juice, maple syrup and nuts in a mixing bowl. Place on the prepared baking sheet and bake for 35 minutes, tossing once to prevent burning. Add the dried fruit.
  • Store in airtight containers for up to 1 month.

CINNAMON WALNUT GRANOLA

Got this from a nutritionist friend of mine. It has flax seed, and walnuts are good for you - the only nut that has omega 3's. Sometimes I'll also add a cup of sunflower seeds. My daughter loves it and a 8 yo friend was over and tried it. His comment: "This is tasty!" I gave the recipe to his mom and she made it for a school function and it was a hit! I use rolled oats, but you could use quick oats too. I use this on top of fruit and yogurt for a healthy breakfast.

1/2 cup honey

1 tablespoon vanilla

Steps:

  • Preheat oven to 275°F In big bowl, combine oats, raisins, nuts and flaxseed.
  • In microwavable bowl, blend together brown sugar, oil, honey and cinnamon.
  • Cook on high in microwave until mixture starts bubbling. Remove, add vanilla and stir.
  • Pour over oat mixture and mix well.
  • Thinly spread on baking sheet(s). Bake for 15 minutes.
  • Stir, return to oven for addt'l 15 minutes or until oats are toasted.
  • Cool thoroughly. Store in airtight container.
  • I keep in fridge if not eaten right away. You could also pack into a pretty container and give as a Christmas gift.

1/4 cup packed light-brown sugar
2 tablespoons vegetable oil, such as safflower
1/2 cup dried fruit, such as dried cherries, dates, raisins, or a mixture, halved or chopped if large

Steps:

  • Preheat oven to 300°F. Lightly coat a 9-by-13-inch baking pan with cooking spray. Add oats, wheat germ, and walnuts, stirring to combine. Spread in an even layer and toast until mixture is lightly browned, about 25 minutes, stirring halfway through. Remove from oven.
  • Raise oven temperature to 350°F. Stir together apple juice, brown sugar, and oil. Pour over oat mixture; stir to combine, and spread evenly in pan. Bake until oats are crisp, about 30 minutes, stirring halfway through.
  • Let cool in pan, about 25 minutes; toss with dried fruit. Granola can be stored up to 1 month in the refrigerator in an air-tight container.
  • Wholesome Addition
  • Apple juice adds sweetness and allows you to cut back on the usual amount of sugar. Because juice from frozen concentrate is thicker than bottled juice, it makes a better coating for the granola, helping it crisp in the oven without requiring much oil.
