1/2 cup butter
3/4 cup light brown sugar, lightly packed
2 eggs
1 1/2 cups all-purpose flour
2 teaspoons baking powder
2 cups walnuts, roughly chopped
1 cup dried cranberries or 1 cup dried cherries
1 teaspoon anise seed
2 teaspoons lemon zest

Steps:

  • Preheat oven to 325 degrees.
  • In bowl beat butter and sugar with hand mixer until pale and fluffy. Beat in eggs until well combined.
  • In small bowl whisk together flour and baking powder, walnuts, dried cranberries, anise and lemon zest. Add to butter mixture and mix well.
  • Shape dough into a large log, about 4" x 12". Arrange on a parchment-lined baking sheet and bake in center of preheated oven until golden, approximately 30 minutes.
  • Let cool for 15 minutes and slice into 1/4-inch thick slices (diagonally for longer cookies or straight across for smaller).
  • Return biscotti to baking sheet, cut side down, and bake for an additional 10 minutes. Flip to other side and bake 10 minutes longer or until completely dry.

1 cup butter, room temperature
2 ½ cups white sugar
2 teaspoons vanilla extract
8 eggs
7 teaspoons baking powder
8 cups all-purpose flour
2 teaspoons anise extract
3 teaspoons anise seed
1 cup chopped walnuts
2 egg yolks, lightly beaten

Steps:

  • Preheat oven to 375 degrees F ( 190 degrees C ).
  • In a large bowl, cream together butter and sugar Gradually add the vanilla and eggs while mixing. Sift together the flour and baking powder; stir into the egg mixture. For plain biscotti, do not add anything else (see Cook's Note). Stir in the anise extract and anise seed. Add walnuts if desired.
  • Wet or grease your hands and shape dough out into 4 logs as long as your baking sheet will allow. Pat each one to about 3/4 inch in height, and 3 inches wide. Brush with beaten egg yolks.
  • Bake in the preheated oven for 15 minutes, until golden brown. Slice logs at an angle, cutting pieces into 1/2 to 3/4-inch wide cookies. Place slices back onto the cookie sheet, standing upright, if possible; leave a gap between the slices. Return to the oven and bake until cookies are dry and lightly toasted, about 10 minutes more.

1 cup walnuts
1 teaspoon anise seed
3 1/4 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3 large eggs
1 cup sugar or 1 cup Splenda sugar substitute
1/2 cup butter, melted
1/4 cup canola oil
1 teaspoon lemon, rind of, grated
2 tablespoons fresh lemon juice

Steps:

  • Heat oven to 350°F, with one rack positioned in the center and one directly below; toast walnuts and anise seeds just until golden, 4 to 5 minutes, cool and chop together on a cutting board.
  • In a large bowl, whisk together flour,baking powder and salt.
  • In a separate bowl whisk together remaining ingredients (eggs, sugar, butter, oil,lemon peel,lemon juice) until smooth.
  • Stir egg mixture into flour mixture, then stir in walnuts and anise seeds; (Dough will be soft, that's okay).
  • Divide dough in half, lightly grease a large cookie sheet; with floured hands, shape dough into two 14x2-1/2-inch logs,slightly rounded in center; Bake on center rack until firm to the touch,30 minutes;let cool 20 minutes, (Leave oven on).
  • Transfer logs to a cutting board; with serrated knife,gently cut logs on a angle into 1/2-inch-thick slices; lay slices on 2 ungreased cookie sheets, bake until biscotti are lightly browned around edges, 10 minutes.
  • Flip biscotti over on cookie sheet reversing positions when you put them back in the oven; bake 10 minutes more, transfer biscotti to wire racks to cool.

2 cups white sugar
1 cup butter, softened
4 eggs
4 ½ cups all-purpose flour
4 teaspoons baking powder
¾ teaspoon salt
⅓ cup brandy
1 ½ teaspoons anise extract
1 teaspoon vanilla extract
1 cup almonds
2 tablespoons anise seed

Steps:

  • Preheat oven to 350 degrees F. Line 2 cookie sheets with parchment paper or foil.
  • In large mixing bowl, beat sugar and butter until light and fluffy. Add eggs one at a time, beating well after each addition. Combine brandy, anise extract and vanilla in a small bowl or measuring cup. In a medium bowl, combine flour, baking powder and salt. Alternately add dry ingredients and brandy mixture to the butter mixture, beginning and ending with the dry ingredients. Stir in the almonds and aniseed.
  • Drop dough by spoonfuls onto prepared sheet, forming two 2 x 13-inch long strips on each sheet. Smooth dough into logs with moistened fingertips.
  • Bake about30 to 35 minutes or until golden and firm to the touch. Place cookie sheets on racks and cool completely. Reduce the oven temperature to 300 degrees F.
  • Cut cooled logs on the diagonal into 3/4-inch thick slices using a serrated knife. Place slices on cookie sheets.
  • Bake for about 20 minutes, turning after 10 minutes, until dry and slightly brown. Remove to a rack and cool.

2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 cup sugar
1/2 cup (1 stick) unsalted butter, room temperature
1 teaspoon grated lemon zest
1/4 teaspoon salt
2 large eggs
3/4 cup pistachios, coarsely chopped
2/3 cup dried cranberries
12 ounces good-quality white chocolate, chopped
Red and green sugar crystals, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a heavy large baking sheet with parchment paper. Whisk the flour and baking powder in a medium bowl to blend. Using an electric mixer, beat the sugar, butter, lemon zest, and salt in a large bowl to blend. Beat in the eggs 1 at a time. Add the flour mixture and beat just until blended. Stir in the pistachios and cranberries.
  • Form the dough into a 13-inch long, 3-inch wide log on the prepared baking sheet. Bake until light golden, about 40 minutes. Cool for 30 minutes.
  • Place the log on the cutting board. Using a sharp serrated knife, cut the log on a diagonal into 1/2 to 3/4-inch-thick slices. Arrange the biscotti, cut side down, on the baking sheet. Bake the biscotti until they are pale golden, about 15 minutes. Transfer the biscotti to a rack and cool completely.
  • Stir the chocolate in a bowl set over a saucepan of simmering water until the chocolate melts. Dip half of the biscotti into the melted chocolate. Gently shake off the excess chocolate. Place the biscotti on the baking sheet for the chocolate to set. Sprinkle with the sugar crystals. Refrigerate until the chocolate is firm, about 35 minutes.
  • The biscotti can be made ahead. Store them in an airtight container up to 4 days, or wrap them in foil and freeze in resealable plastic bags up to 3 weeks.

ANISE-ALMOND BISCOTTI

3 1/4 cups all purpose flour
1 tablespoon baking powder
1/3 teaspoon salt
1 1/2 cups sugar
10 tablespoons (1 1/4 sticks) unsalted butter, melted
3 large eggs
1 tablespoon vanilla extract
2 teaspoons aniseed, ground
1 cup whole almonds, toasted, coarsely chopped
1 large egg white

Steps:

  • Position rack in center of oven and preheat to 350°F. Line baking sheet with parchment paper. Sift flour, baking powder and salt into medium bowl. Mix sugar, melted butter, 3 eggs, vanilla extract and ground aniseed in large bowl. Add flour mixture to egg mixture and stir with wooden spoon until well blended. Mix in almonds.
  • Divide dough in half. Using floured hands, shape each dough half into 13 1/2-inch-long, 2 1/2-inch-wide log. Transfer both logs to prepared baking sheet, spacing apart. Whisk egg white in small bowl until foamy; brush over top and sides of each dough log.
  • Bake logs until golden brown (logs will spread), about 30 minutes. Cool logs completely on sheet on rack, about 25 minutes. Maintain oven temperature.
  • Transfer logs to work surface; discard parchment paper. Using serrated knife, cut logs on diagonal into 1/2-inch-wide slices. Arrange slices, cut side down, on same baking sheet. Bake 12 minutes. Turn biscotti over; bake until just beginning to color, about 8 minutes. Transfer to rack and cool. (Can be prepared 1 week ahead. Store in airtight container at room temperature.)

My great-great-aunt Josie created this recipe and handed it down through the family. The anise seed and anisette give it an authentic Italian flavor. A bit labor intensive, but they are so worth it! Great for dunking in tea or coffee, or just munching on. I double the recipe and give them out for Christmas every year.

½ cup vegetable oil
2 tablespoons anisette liqueur

  • Beat sugar and eggs in a large bowl with an electric mixer until smooth. Mix in walnuts, oil, anisette liqueur, brandy, and anise seeds. Fold in flour and baking powder until dough comes together. Cover with plastic wrap and chill, about 3 hours.
  • Preheat oven to 375 degrees F (190 degrees C). Grease 2 baking sheets.
  • Remove dough from refrigerator. Use greased hands to shape half the dough into a 1 1/2-inch-wide log on a baking sheet. Repeat with remaining dough on second baking sheet.
  • Bake in the preheated oven, switching baking sheets halfway through, until dough is pale golden and a toothpick inserted in the centers comes out clean, 17 to 20 minutes. Remove from oven and cool until easily handled, about 5 minutes.
  • Transfer logs to a cutting board and slice into 1-inch pieces at a 45-degree angle using a sharp or serrated knife. Arrange slices on their sides on the baking sheets.
  • Bake again in the preheated oven, flipping slices over halfway through, until lightly browned, about 14 minutes.

1 cup walnuts, coarsely chopped
1 orange, zest of
1/2 lemon, zest of
1/4 teaspoon baking soda
1 teaspoon baking powder
2 eggs
1 egg yolk
2 -3 teaspoons orange extract
4 ounces butter, melted

Steps:

  • Preheat oven to 350 degrees F In a large bowl, combine all of the dry ingredients (first 7 ingredients on list above).
  • In a small bowl slightly beat eggs& egg yolk together, and add to the dry ingredients along with the extract& the melted butter.
  • Mix by hand with a wooden spoon or with hands.
  • If dough is too stiff, add some juice from the zested orange.
  • Turn dough out onto work surface; knead lightly and form into two logs.
  • Place logs on lightly greased cookie sheet& flatten slightly.
  • Brush logs with beaten egg white.
  • Bake 30 minutes; let cool completely, then slice each log diagonally into 1" slices with serrated knife, using a sawing motion.
  • Stand the slices on the cookie sheet and return to the oven.
  • Bake an additional 7-10 minutes or until crisp.

My family loves anise and they love biscotti. This is a biscotti recipe that starts with a mix and it is pretty easy to do. I made anise walnut flavor but you can use a lemon mix and lemon extract with a lemon glaze, or orange mix, orange extract and a chocolate or orange glaze, or maybe a white mix and almond extract, crushed...

1 box yellow cake mix
5 eggs
2 t anise extract (yes 2 tablespoons)
3/4 c oil
1 c chopped walnuts
favorite vanilla frosting with anise extract blended in

Steps:

  • 1. Pour cake mix in large bowl
  • 2. Add oil
  • 3. Add all five eggs
  • 4. Mix by hand until blended. Add extract and walnuts
  • 5. Now beat with mixer on high for about 2 minutes
  • 6. Pour into jelly roll pan sprayed with non stick spray. (Mixture is kind of thick)
  • 7. Bake in preheated oven at 325 degrees for 25 to 30 minutes. (it will be slightly pulling away from edge of pan and a nice golden color)
  • 8. Remove from oven and allow to cool
  • 9. Once cool slice with knife vertically and then horizontally into size desired. Turn oven temp up to 350 degrees
  • 10. Now remove from jelly roll pan gently and place cut side down on UNGREASED cookie sheet, Bake for about 6 to 8 minutes per side. (flip over and bake other side)
  • 11. Cool slightly and then frost or drizzle with anise icing. Store in tightly sealed container at room temp once biscotti are completely cooled.
  • 12. Read my notes for other flavor variations on this crisp on the outside and softer in the center flavorful cookie.
