1 ½ pounds ground beef
⅔ cup crushed saltine cracker crumbs
⅓ cup minced onion
1 egg
¼ cup milk
1 ½ teaspoons ground ginger
½ teaspoon salt
1 tablespoon olive oil
2 tablespoons cornstarch
½ cup packed brown sugar
1 (15 ounce) can pineapple chunks - drained, with juice reserved
⅓ cup white vinegar
1 tablespoon soy sauce
⅓ cup chopped green bell pepper

Steps:

  • In a large bowl, combine ground beef, cracker crumbs, onion, egg, milk, ginger and salt. Shape mixture by rounded tablespoonfuls into meatballs.
  • Heat olive oil in a large skillet over medium heat. Place meatballs in skillet and cook until evenly brown, and meat is no longer pink. Drain excess fat.
  • In a small bowl, combine the cornstarch, brown sugar, reserved pineapple juice, vinegar and soy sauce. Mix until smooth, then pour into the skillet with meatballs. Cook, stirring constantly, until mixture thickens and boils, about 5 minutes. Stir in the green pepper and pineapple chunks. Heat through.

1/4 teaspoon nutmeg
1 teaspoon salt
2 eggs

1 green pepper, bite sized chunks

Steps:

  • Blend together beef, eggs, 1 t cornstarch, onion, pepper, nutmeg, salt, and garlic.
  • Form into 1-inch balls.
  • Heat oil in skillet; brown meatballs on all sides, or bake in oven until browned.
  • In large saucepan add remaining cornstarch, soy sauce, vinegar, water, and brown sugar to pineapple juice.
  • Cook until thickened; stir constantly.
  • Add meatballs, fruit, and peppers.
  • Cook 5 minutes or until fruit is well heated.
  • For OAMC: make meatballs as directed and flash freeze. Transfer to a ziploc bag, label and put back into freezer. To serve prepare sauce as directed and add defrosted meatballs and heat through.

1/4 cup whole milk
1 1/2 pounds ground turkey, chicken, pork or a combination
3 cloves garlic, minced

3 cloves garlic, minced

Steps:

  • Make the meatballs: Preheat the oven to 500 degrees F. Grease 13-by-9-inch baking dish or mini muffin pan with cooking spray.
  • In a small bowl, stir together the breadcrumbs and milk. Let sit for 5 minutes.
  • In a large bowl, combine the ground meat, garlic, onion, egg, 1/2 teaspoon salt, 1/4 teaspoon pepper and the breadcrumb mixture, mixing with your hands just until combined. Using your hands, break off 2 or 3 tablespoons of the meat mixture at a time and roll it into a ball. Arrange the meatballs in a single layer in the prepared baking dish.
  • Bake the meatballs for 12 to 15 minutes or until they are cooked through. While the meatballs are baking, make the sauce.
  • Make the sauce: Add the olive oil to a medium saucepan set over medium-low heat. Once the oil it hot, add the garlic and cook, stirring, until golden brown.
  • Meanwhile, add the cornstarch and 1 tablespoon water to a small bowl and whisk to combine.
  • Whisk the pineapple juice, ketchup, brown sugar, soy sauce and cornstarch mixture into the saucepan. Bring the mixture to a boil and cook until the sauce is thick enough to coat the back of a spoon, 3 to 5 minutes.
  • Transfer the cooked meatballs to a large bowl, then add the diced pineapple. Add the prepared sauce and toss to combine. Serve immediately.

Steps:

  • Mix together ground beef, ginger, garlic powder, and pepper until well combined. Form into 1 1/2-inch meatballs.

I have taken these to potlucks alot, and have heard "These are the best sweet and sour meatballs I have ever had" many many times. This recipe makes a 6 qt crock pot full of meatballs, which is alot for smaller families so this recipe can be cut in half if you like..but we love them as leftovers in our house. This is a family favorite. I use this same sauce when I make sweet & sour chicken, pork, etc. Another version I make is porcupine meatballs by adding cooked rice to the meatball mixture...and serving over steamed white or brown rice. Enjoy!

MEATBALL MIXTURE
3 pound(s) lean ground beef
1 1/2 cup(s) bread crumbs, dry or cracker crumbs
1 cup(s) milk, add a lil' more if mixture seems too dry after mixing
3 large eggs, slightly beaten

1 1/2 teaspoon(s) salt

1 medium onion, grated or finely chopped

SWEET & SOUR SAUCE

4 fresh - bell peppers, 2 red & 2 green, seeded & cut into 3/4 " pieces
1 very large or 2 medium onions, peeled & cut in 3/4 " pieces
2/3 cup(s) cider vinegar
1/2 cup(s) soy sauce
3/4 cup(s) brown sugar, firmly packed
3/4 cup(s) granulated sugar
2 tablespoon(s) yellow mustard
1/3 cup(s) cornstarch dissolved in cold water

Steps:

  • Preheat oven to 400 degrees. Line a large cookie sheet with foil. Mix all meatball ingredients together and form into 1 1/4 inch balls. Bake on cookie sheet for 30-35 minutes or until done and browned.
  • While meatballs are baking, prepare the vegetables and mix all the sauce ingredients together. In a large dutch oven, add all sauce ingredients except vegetables & cornstarch. Bring to a boil and reduce heat.
  • Add meatballs, cover and simmer for 20 minutes, adding a little water if needed. Add carrots, onion, peppers, water chestnuts and pineapple tidbits. simmer for 10-15 minutes or until veggies are crisp tender.
  • Stir in cornstarch and cook for a few minutes until sauce is thickened. If too thick add a little water. If too thin add a little more dissolved cornstarch. Cook until thick enough. Serve over steamed rice. Enjoy!
  • This recipe makes a large dutch oven full of meatballs. It can be cut in half or thirds for smaller families. You can also cook this in a slow cooker but it is harder to get the veggies to not get overdone. I usually cook this on the stove top and then put in the slow cooker on warn if serving it on a buffet or at a pot luck.

1/2 cup loosely packed brown sugar
1/2 cup rice wine vinegar
1/4 cup ketchup
1 tablespoon low-sodium soy sauce
2 1/4 cups pineapple juice
1 tablespoon cornstarch
One 25-count bag All-Purpose Meatballs (still frozen is fine), recipe follows
1 tablespoon sriracha hot sauce
1 cup drained small pineapple chunks
Steamed long-grain rice, for serving
2 tablespoons sliced green onions, for garnish
5 pounds ground beef
1 1/2 cups plain breadcrumbs
1/2 cup milk
1/4 cup heavy cream
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons grainy mustard
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
4 large eggs
2 tablespoons olive oil

Steps:

  • In a large skillet over medium-high heat, add the brown sugar, vinegar, ketchup, soy sauce and 2 cups of the pineapple juice. Bring to a boil.
  • Make a slurry by mixing the cornstarch into the remaining 1/4 cup pineapple juice, whisking to get out all the lumps. Whisk the slurry into the skillet and add the All-Purpose Meatballs. Bring to a simmer and add the sriracha. Cover and cook until the sauce is thickened and the meatballs are heated through, 8 to 10 minutes. Stir in the pineapple chunks.
  • Serve over steamed rice, garnished with green onions.
  • To make the meatballs, combine the ground beef, breadcrumbs, milk, cream, parsley, mustard, salt, black pepper, red pepper flakes and eggs in a large mixing bowl. Mix together well with your hands. Scoop out 1-tablespoon portions and roll them into balls with your hands. Place the meatballs onto parchment-lined baking sheets and put the baking sheets in the freezer for 5 to 10 minutes for the meatballs to firm up.
  • To brown the meatballs, heat the olive oil in a heavy pot or large skillet over medium-high heat. Add the meatballs in batches, making sure not to overcrowd the pot. Cook, turning the meatballs to make sure they brown all over, 5 to 7 minutes per batch. Drain on paper towels.
  • Freezer instructions: Put the cooked meatballs in a single layer on baking sheets and put into the freezer. When frozen, divide them into freezer bags, 25 per bag, and return them to the freezer. Yield: 125 meatballs.

WAIKIKI-STYLE MEATBALLS

These sweet and sour meatballs are always a hit at parties. My mom sometimes takes shortcuts and uses pre-made meatballs from a bag, which, after spending a few hours in the slow cooker, taste fine. I like these best when they are made completely from scratch! Ground turkey works too, but doesn't hold its shape as well. To turn into a meal, heat rice to serve with the dish. The serving size refers to this dish as a main meal, but when served as an hors d'oeuvre, easily can feed 10 to 13 people. Sometimes I do not add the cornstarch into the sauce, and just allow it to boil for a bit longer, but the cornstarch really does yield the best result.

1 pinch salt
1/3 cup vinegar

rice, for guests (I use the 5 minute type)

Steps:

  • Mix together hamburger, cracker crumbs, eggs, milk, salt. (I usually add ketchup, Regular BBQ sauce for added flavour, use what ever you like.)
  • Shape mixture into meatballs and cook in the oven, in a single layer on a cookie sheet with sides, at 350 degrees Fahrenheit for about 20 minutes, depending on the size of your meatballs.
  • While the meatballs are cooking, mix together corn starch and brown sugar in a small bowl.
  • Drain the syrup from the pineapple and add to corn starch and brown sugar, stirring really well.
  • Add vinegar and soy sauce.
  • Mix until smooth.
  • Pour mixture into sauce pan and cook over medium heat, stirring constantly, until mixture thickens and begins to boil.
  • Reduce heat.
  • While waiting for the meatballs to finish cooking, cook the rice.
  • As soon as the meatballs are cooked, drain them and add them to sauce on stove.
  • Add pineapple.
  • Place rice on plate and cover with the meatballs and sauce.
  • Serve immediately.
