Steps:
- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 2-quart saucepan, heat 3 cups of the broth to boiling over high heat. Add rice; reduce heat to medium-low. Cover; simmer about 20 minutes or until liquid is absorbed.
- Meanwhile, drain pineapple juice into 2-cup measuring cup; add remaining 1/2 cup broth to make 1 1/4 cups. In another 2-quart saucepan, mix pineapple liquid, sugar, cornstarch, gingerroot, vinegar and soy sauce. Heat to boiling over high heat. Cook about 2 minutes, stirring constantly. Remove from heat. Stir in bell peppers and pineapple.
- Cut chicken into 2 1/2x1-inch strips. Spread rice in baking dish; arrange chicken strips over rice. Pour pineapple mixture over chicken and rice.
- Cover dish with foil. Bake about 45 minutes or until chicken is no longer pink in center and mixture is bubbly.

WAIKIKI BEACH CHICKEN AND PINEAPPLE
The sauce for this dish is somewhat like a sweet and sour sauce, but has a brighter flavor and is easier to make. I have made this many times and always gets rave reviews. Rumor has it this dish was once on the menu at a popular restaurant on Waikiki Beach.

Steps:
- Preheat oven to 400°F and spray a 9x13 baking pan or dish with cooking spray.
- Set aside.
- Trim any visible fat from chicken breasts and dry thoroughly with paper towels.
- Coat chicken with flour, shaking off any excess.
- Place chicken in prepared dish and place in oven while preparing sauce.
- Drain juice from pineapple into a medium saucepan and set pineapple chunks aside.
- Add the vinegar, sugar, soy sauce, ginger, and bouillon cube to saucepan.
- Combine cornstarch and water and blend until smooth.
- Add to saucepan and bring to boil over medium-high heat, whisking slowly to dissolve sugar.
- Boil for two minutes, whisking vigorously.
- The sauce should thicken and turn clear after boiling for about 1 minute or so.
- Pour sauce over chicken and lower oven temperature to 350°F.
- Bake for 20 minutes.
- Meanwhile, remove stem and seeds from green pepper and remove white veins.
- Slice into rings and set aside.
- Distribute pineapple chunks and pepper rings evenly over chicken and bake 20 more minutes.
- To serve, place about 2/3 cup rice on plate and top with a chicken breast.
- Top with plenty of the pineapple and pepper rings and drizzle a generous amount of the sauce over all.
- Serve at once.
- NOTE: Be sure to use Heinz apple cider vinegar, not a store brand in the sauce.
- Using any other brand will make the sauce foam up and boil over in addition to having a poor flavor.

- Remove to a shallow roasting pan.
- Arrange pieces skin side up.
- Sprinkle with salt and pepper.
- Prepare sauce: Drain pineapple syrup into a 2 cup measuring cup.
- Add water to make 1 1/4 cups.
- Mix in cornstarch to dissolve.
- In medium saucepan combine sugar, syrup with cornstarch, vinegar, soysauce, ginger and bouillon cube.
- Bring to a boil for 2 minutes.
- Pour over chicken.
- Bake uncovered for 30 minutes.
- Add pineapple slices and peppers.
- Bake 30 minutes more.
- Serve with rice and enjoy!

- Marukame Udon & Tempura. 2310 Kuhio Ave. Open 7am – 10pm. A Waikiki institution, for as long as I have been coming to Waikiki Marukame Udon (aka Marugame Udon) has been serving up delicious bowls of house made udon noodles with all the trimmings.
- Steak Shack. 2161 Kalia Rd. Opens 10am – 7pm. You simply cannot get a better location on Waikiki Beach. You are literally about 5 steps from the sand and a few short more to the crystal clear water.
- Musubi & Bento Iyasume. 334 Seaside Ave. Open 7am – 9pm. This little hole in the wall joint is one of my favourite Waikiki cheap eats. Musubi & Bento Iyasume serves a heap of different Musubis, bento boxes and Japanese style curries.
- The Street Food Hall By Michael Mina. 2330 Kalakaua Ave. Opens 8am – 10pm. The Street Food Hall is located on the ground floor of the International Market Place in the heart of Waikiki.
- Mi Almita Cantina. 2311 Kuhio Ave. Open 10am – 10pm. Eat your fill of tacos for just USD$2 each at Mi Almita Cantina between 12pm – 5pm. As an added bonus, you can wash them down with a USD$4 Margarita.
- Makai Market Food Court Ala Moana Center. 1450 Ala Moana Ave. Various opening hours with most between 9am & 10am to 9pm. We headed over to the Makai Market Food Court at the Ala Moana Center after enjoying one of Oahu’s best sunsets at the nearby Ala Moana Beach Park.
- Food Court Royal Hawaiian Center. 2201 Kalakaua Ave. Opens 10am – 10pm. The food hall at the Royal Hawaiian Center is no where near as big as the one at Ala Moana Center, but it is truckload more convenient for those staying in the centre of Waikiki.
- ABC Deli. 205 Lewers St. Opens 6.30am – Midnight. You can’t miss the ABC Stores when you are in Waikiki. They are literally on just about every block. While each has different offings most sell sandwiches and wraps, fruit and a small selection of hot food.
- Waikiki Yokocho. 2250 Kalakaua Ave. Opens 11am – Midnight. Waikiki Yokocho is a Japanese food hall located on the lower ground floor of the Waikiki Shopping Plaza.
- Pai’s Deli. 2335 Kalakaua Ave. Opens 8.30am – 5pm. Pai’s Deli is located inside the Outrigger Waikiki Beach Resort and offers freshly made sandwiches, smoothies and salads.

- Tropical Shave Ice at Island Vintage Shave Ice. Shave ice is a must-try in Hawaii! Conveniently located in Downtown Waikiki near the beach walk and shops, Island Vintage Shave Ice is a little piece of paradise on a busy sidewalk.
- Tonkatsu Sandwich at Tonkatsu Ginza Bairin. Tonkatsu, a classic Japanese dish, is extremely popular in Hawaii. It’s a breaded, deep-fried pork cutlet and when done properly, it should be juicy on the inside and crispy on the outside.
- Hula Pie at Duke’s Waikiki. Duke’s is a legendary Hawaii establishment with restaurants all over the state (they’ve even expanded into Florida and California).
- Teppanyaki at Tanaka of Tokyo Central. I’m a huge fan teppanyaki (also called hibachi) and Tanaka of Tokyo Central is hands down the best teppanyaki experience I’ve ever had.
- Kalua Pork at Helena’s Hawaiian Food. Helena’s Hawaiian Food is as authentic as you can get in the Waikiki area. While it’s not technically in Waikiki, it’s just a short drive and well-worth it if you can get there!
- Udon Noodles at Marukame Udon. Ever since I was diagnosed with a gluten allergy (read more about it here), one of the foods I miss the most is fresh, hand-pulled Japanese noodles like the ones at Marukame Udon.
- Fish Tacos at Hula Grill Waikiki. FISH TACOS YUM! Enough said. Hula Grill is located right on the beach and has some of the best fish tacos I’ve ever tasted.
- Garlic Teriyaki Edamame at Doraku Kaka’ako Izakaya and Sushi. I’m a huge fan of Asian fusion cuisine. Unfortunately, Asian fusion cuisine does have a bad reputation among many of those who are used to the more traditional interpretations of Asian dishes.

- Hula Grill. First off, one of our favorite restaurants in Hawaii, Hula Grill. We’ve dined at this restaurant multiple times and would go back again and again!
- Marukame Udon. Whenever we get a chance to stay in Waikiki, dining at Marukame Udon is a must! If you like udon and Japanese food, this place will not let you down.
- Herringbone. We’ve dined at Herringbone a few times and it’s divine! It’s located in the International Marketplace which offers a lot of parking. The ambiance at Herringbone is amazing, it’s a great place for group lunch or dinner.

- Arancino Di Mare. During our staycation, we were looking for a great Italian place and this happened to be around the area. Arancino has a few restaurants in Waikiki and it’s very popular!
- Yauatcha. Dim Sum to the next level! Yauatcha offers a high-end spin on Chinese food. We took the whole family for lunch here after our wedding ceremony and the service was incredible!
- Sansei Seafood Restaurant. There’s nothing but great things about this restaurant. Sansei is located at Waikiki Beach Marriot on the 2nd floor. This is another sushi spot that is not to miss in Waikiki.
- Tanaka of Tokyo. While we haven’t dined at this restaurant, yelp has it highly rated! One of our friends used to work here and he even said the food was delicious.
