Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Time 45m

Number Of Ingredients 10

1/3 cup plus 3/4 cup sugar
3 tablespoons cornstarch
1/8 teaspoon fine salt
1 1/2 cups whole milk
2 cups heavy cream
2 large egg yolks
2 tablespoons unsalted butter
1 teaspoon pure vanilla extract
2 pounds strawberries, hulled and cut into 1/4-inch slices
8 ounces frozen Belgian waffles, toasted and cut into 1 1/2-inch pieces

Steps:

  • Place a fine-mesh sieve over a medium heatproof bowl. In a medium saucepan, whisk together 1/3 cup sugar, cornstarch, salt, milk, 1/2 cup cream, and egg yolks. Cook over medium-high, whisking constantly, until thickened and bubbling, 6 minutes. Reduce heat to medium-low and cook, whisking, 1 minute. Pour through sieve into bowl. Stir in butter and vanilla until combined. Press plastic wrap against surface of pudding to prevent a skin from forming and refrigerate 3 hours (or up to 3 days).
  • Toss strawberries with 1/2 cup sugar; let sit until fruit has released some juice, 20 minutes. Using an electric mixer, beat 1 1/2 cups cream and 1/4 cup sugar on medium-high until stiff peaks form, about 2 minutes.
  • In a large bowl or trifle dish, layer half the waffles, strawberries, pudding, and whipped cream; repeat. Cover trifle with plastic wrap and refrigerate at least 2 hours (or up to 1 day).

STRAWBERRY SHORTCAKE TRIFLE

Strawberry Shortcake Trifle image

Provided by Valerie Bertinelli

Categories     dessert

Time 6h40m

Yield 12 servings

Number Of Ingredients 17

2 sticks (1 cup) unsalted butter, at room temperature, plus more for the pan
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 1/2 cups granulated sugar
5 large eggs
1/4 cup heavy cream
2 teaspoons vanilla
One 12-ounce jar strawberry preserves
2 pounds strawberries, trimmed and halved
1 tablespoon lemon juice
Sugar, optional
16 ounces cream cheese, at room temperature
2/3 cup confectioners' sugar
3 1/2 cups heavy cream
1 tablespoon fresh lemon juice
1 teaspoon vanilla

Steps:

  • For the pound cake: Preheat the oven to 350 degrees F. Butter a 9-by-5-inch loaf pan.
  • Whisk the flour, baking powder and salt together in a medium bowl.
  • In a large bowl, combine the butter and sugar, and beat with an electric mixer on high speed until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition. After the last egg, continue to beat on high speed for 5 minutes. Beat in the heavy cream and vanilla. Add the flour mixture and beat on low until just incorporated.
  • Spoon the batter into the prepared loaf pan and bake until a wooden pick inserted into the center comes out clean, about 1 hour 10 minutes. Cool the pound cake in the pan for 10 minutes, then turn it out onto a rack to cool completely. (The pound cake can be made up to 2 days ahead; store at room temperature, well wrapped.)
  • For the strawberries: Heat the strawberry preserves in a medium saucepan over medium-high heat until just warm. Add the strawberries and 1/4 cup water, and bring to a simmer; simmer until the strawberries are just beginning to soften, about 5 minutes. Stir in the lemon juice. Add a little sugar to taste if desired. Cool completely. (The strawberries can be made up to 1 day ahead; refrigerate in an airtight container.)
  • For the cream layer: In a large bowl, beat together the cream cheese and confectioners' sugar with an electric mixer until very smooth and light. Add a little bit of the cream, and beat to loosen. Beat in the remaining cream, a little at a time, until the mixture just holds stiff peaks, stopping occasionally to scrape the bottom of the bowl with a rubber spatula. Beat in the lemon juice and vanilla.
  • To assemble the trifle: Cut the pound cake into 1 1/2-inch cubes. Spoon a little more than a quarter of the cream into the bottom of a trifle bowl. Top with a third of the pound cake, followed by a third of the strawberries and their juices. Repeat the layers, starting with cream, then cake, then strawberries. Top with the remaining cream and a few strawberries. Cover and refrigerate at least 4 hours and up to overnight.

INDIVIDUAL STRAWBERRY TRIFLES

Individual Strawberry Trifles image

Provided by Giada De Laurentiis

Time 25m

Yield 2 servings, plus extra

Number Of Ingredients 9

1 quart fresh strawberries, halved
1/3 cup aged balsamic vinegar
3 cups heavy cream
2 teaspoons vanilla extract
1/4 cup confectioners' sugar
1 (1 pound) fresh pound cake
1/3 cup amaretto liqueur
2 amaretto cookies, for garnish
Mint, for garnish

Steps:

  • In a small shallow casserole dish, toss the strawberries with vinegar and let stand at room temperature for 15 to 20 minutes. After the strawberries have marinated, check for sweetness, adding sugar if desired.
  • In a large bowl using an electric mixer, whisk the cream to soft peaks. Add the vanilla and confectioners' sugar. Whip until stiff peaks. Set aside.
  • Using a serrated knife, slice pound cake lengthwise into 1/2-inch thick slices. You will only need 2 slices. Using a 2-inch cookie cutter, cut out 2 circles from each cake slice. Line up 2 high ball glasses (about 2 to 2 1/2 inches in diameter and 4 1/2 to 5 inches high) and place 1 cake circle in the bottom of each. Brush cakes with amaretto liqueur. Add 2 tablespoons of marinated strawberries and spread evenly. Using a different tablespoon, add a large dollop of whipped cream and spread evenly. Add a second layer of cake, pressing down lightly. Brush with amaretto liqueur. Add 2 tablespoons of marinated strawberries and spread evenly. Top with a large dollop of whipped cream, spreading evenly. Cover each glass with plastic wrap and keep in the refrigerator until serving. Use remaining cake, cream and strawberries to create a more humble trifle dish.
  • Cover trifles with plastic wrap and refrigerate for at least 2 hours so that the flavors can marry.
  • About 15 minutes before serving, take trifles out of the refrigerator so that they can warm slightly. Grate a generous shower of amaretto cookie over top and garnish with a mint sprig.

STRAWBERRY TRIFLE

Strawberry Trifle image

Adorable little individual-sized servings of creamy strawberry trifle.

Provided by Patricia Heaton

Categories     dessert,Party Favourites,Spring

Time 22m

Yield 6 servings

Number Of Ingredients 14

2 tsp unflavored gelatin
1 lb(s) frozen strawberries, thawed
¼ cup sugar
2 ½ cups whole milk
½ cup sugar
¼ cup cornstarch
1 pinch kosher salt
2 Tbsp unsalted butter
1 Tbsp vanilla extract
¾ of a 14-oz angel food cake, cut into ½-inch cubes
¾ cup heavy cream
1 Tbsp sugar, confectioner's
1 tsp orange extract or 2 Tbsp cream sherry
Mint sprigs, for garnish

Steps:

  • For the strawberries: Put the gelatin in a medium mixing bowl. Bring 1/2 cup water to a boil in a small pot, then pour it over the gelatin, whisking until smooth. Add the strawberries and sugar, mixing and coarsely mashing until the most of the strawberries are broken up. Refrigerate until the mixture is cold and slightly thickened, about 1 hour.
  • For the custard: Combine the milk, sugar, cornstarch and salt in a medium saucepan. Bring to a simmer over medium-high heat, whisking constantly; simmer, whisking, until thick, 2 minutes. Stir in the butter and vanilla, then strain through a fine-mesh sieve into a bowl. Cover the surface directly with plastic wrap or wax paper, and refrigerate until cool.
  • To assemble: Put a layer of angel food cake cubes in the bottom of six tumblers; be careful not to press down too hard. Divide half of the strawberry mixture among the tumblers. Follow with half of the custard over the strawberry layer. Repeat all three layers.
  • Beat the cream with the confectioner's sugar until it holds soft peaks. Add the orange extract. Spoon whipped cream on top of the trifles. Garnish with mint sprigs.

FANTASTIC STRAWBERRY-BANANA TRIFLE

Fantastic Strawberry-Banana Trifle image

This is one of the best trifles, angel food cake, fruit, and then a delicious light whipped fluff in between the layers, this is SO DELICIOUS!!!! This can be completely prepared well in advance and refrigerated until serving which makes this the perfect dessert to serve to guests. You can change the fruit to whatever you like and use whatever flavor pudding mix you like, you could use a chocolate angel food cake instead of the white. Make certain to soak the banana slices in the pineapple juice for about 5-8 minutes so they will not turn brown. This can really be layered anyway you desire, you will get rave reviews when you serve this to family or friends!

This trifle is much lighter than traditional trifles but equally as good. It uses yoghurt and fresh fruits providing a much healthier version. You can substitute the cream topping for a low fat version. The frozen ready whipped cream works quite well with this recipe too.
