ORIGINAL WEIGHT WATCHERS ORANGE CRUMBED BAKED CHICKEN
Although another recipe for this has been posted, it has been altered. I found this in the Sacramento Bee and according to them is taken from WW and has not been altered. It is hard to believe this recipe is a low fat dish.

- Preheat oven to 350 degrees. Spray a nonstick baking sheet with nonstick cooking spray.
- In a small bowl, combine the orange juice, mustard and salt. On a sheet of wax paper combine the cracker crumbs, orange zest, shallot, and pepper. Brush the chicken on both sides with the mustard mixture then dredge in the crumbs, firmly pressing the crumbs to coat both sides. Place the chicken on the baking sheet.
- Bake 15 minutes, turn over and bake until cooked through. 15 to 20 minutes longer.

CROUTON CRUSHED CHICKEN TENDERS WITH ORANGE BARBEQUE SAUCE

- Preheat the oven to 375 degrees F.
- Cut the corner off of the bag croutons just enough to let the air escape. Place the bag onto a cutting board, cover with a kitchen towel and smash it with a rolling pin. Crush the croutons until coarse in texture.
- Set up a breading station with 3 pie plates or baking dishes. In 1 dish add the flour, and season it with poultry seasoning, and a generous pinch of salt and pepper. In the second dish mix together the egg and buttermilk. In the third dish add the crushed croutons, and the bread crumbs.
- Dip chicken tenders into the flour and shake of any excess. Then dip them into the buttermilk, and then into the bread crumb mixture making sure to thoroughly coat the tenders. Put the tenders on a baking sheet and bake for 10 to 12 minutes.
- Transfer to a platter and serve with the orange barbeque sauce.
- Orange Barbeque Dipping Sauce: Add all of the ingredients to a small bowl, and whisk together until well combined.

- 2. Arrange foil in a baking dish and spray with a little PAM.
- 3. In a large bowl, add the chili powder, bbq sauce,and orange marmalade. mix well and let it chill in the fridge for ten minutes.
- 4. Once its chilled, take your chicken and coat it with the sauce.
- 5. Arrange in baking dish and put in oven for forty five minutes to an hour. Just until the chicken is done on the inside.

- Pre heat oven to 220 degrees celcius.
- Wash and pat chicken dry. Combine flour, sesame seeds, paprika, per peri and baking powder in a clear plastic bag.
- Beat eggs and milk in a bowl.
- Pound garlic and salt in a pestle and mortar till fine.
- Rub this mixture all over chicken pieces.
- Dip chicken pieces in egg mixture and then shake them in plastic bag to coat them evenly with the flour mixture.
- Arrange chicken pieces in an oven proof baking dish, skin side up.
- Pour melted butter margarine and butter evenly over chicken pieces and bake in oven for 40min- 1 hour or until evenly browned and chicken is done.

- Preheat the oven to 350 degrees F. Line a cookie sheet with aluminum foil and spray the foil with cooking spray.
- Shake the hot sauce into the buttermilk and pour into a shallow dish. Place the cornflake crumbs in another shallow dish. Dip each piece of chicken in the buttermilk, and then roll it in the crumbs. Place the coated chicken pieces on the cookie sheet and sprinkle with salt and pepper.

CRUNCHY BAKED CHICKEN
This was one of my favorite recipes when I was in Weight Watchers. My teenage son also likes this very much and frequently still requests that I make it. I am posting it because I do not want to lose this recipe, and it had been misplaced for a few months and just found again today. This recipe is written for 1 person, but ingredients can be increased as needed.

- Thinly pare the rind from 1 orange, and cut the rind into thin strips.
- Grate the rind from the other orange, and squeeze the juice from both.
- Heat the oil in a frying pan, add the chicken pieces and brown on both sides.
- Remove from the pan and keep warm.
- Add the onion to the fat remaining in the pan and gently fry for 5 minutes.
- Drain off any fat, then add the Worcestershire sauce, water, tomato paste, orange rind (strips and grated) and juice. Bring to the boil and season lightly with salt and pepper.
- Line a shallow ovenproof dish or roasting pan with foil, leaving enough on either side to over lap in the middle. Place the chicken on the foil, spoon over the orange sauce, then cover wit h the foil, securing the edges by folding together.
- Bake at 180 C for 1 hour.
- To serve, spoon the juices over the chicken.
