BALSAMIC GRAVY



Balsamic Gravy image

Serve this rich gravy with our Roasted Pork Loin.

Yield Makes 1 1/2 cups

Number Of Ingredients 5

Dark liquid and browned bits reserved from Roasted Pork Loin
1 can (14.5 ounces) reduced-sodium chicken broth
1 tablespoon all-purpose flour
3 tablespoons water
1/2 teaspoon balsamic vinegar

Steps:

  • Pour off excess fat from roasting pan (reserving dark liquid and browned bits). Add chicken broth to pan; cook over medium-high heat, scraping up browned bits, until liquid has reduced by half, 5 to 7 minutes.
  • Meanwhile, in a small bowl, whisk flour with water.
  • Reduce heat to medium; whisk in flour mixture and balsamic vinegar until sauce is completely smooth and has thickened, 1 to 3 minutes.

Number Of Ingredients 6

1 stick (8 tablespoons) unsalted butter
1/2 cup all-purpose flour
3 to 4 cups chicken or turkey stock
Turkey pan drippings, fat skimmed off, optional
2 teaspoons Dijon mustard
Kosher salt and freshly ground black pepper

Steps:

  • Melt the butter in a medium heavy-bottomed Dutch oven or pot over medium heat. When the butter has begun to bubble, sprinkle in the flour and whisk continuously until fully mixed. Continue to cook, whisking often, until the roux smells toasty and is the color of peanut butter, 4 to 6 minutes.
  • Carefully pour in 3 cups stock, whisking constantly, until fully incorporated, making sure to whisk in the corners of the pot. Raise the heat slightly and bring to a boil, whisking often, about 3 minutes. Lower the heat and simmer, uncovered, whisking occasionally, until thick and glossy, 10 to 15 minutes. (The gravy will be very thick at this point.)
  • Set aside until ready to use, up to 4 hours, or refrigerate overnight.
  • To reheat: Heat the gravy in a heavy-bottomed pot over medium heat, whisking often, until warm. Whisk in 1 cup of additional liquid, using drippings, stock or a combination of the two, until the desired consistency is reached. Whisk in the additional liquid gradually, stirring after each addition.
  • To finish: Whisk in the mustard and taste for seasoning. Add salt and pepper to taste, being careful to avoid oversalting.

ROAST TURKEY WITH SHERRY WINE VINEGAR GRAVY

1 14- to 16-pound turkey
1/2 cup Sherry wine vinegar
1/4 cup orange juice
Currant Pecan Stuffing
6 tablespoons (3/4 stick) unsalted butter, room temperature
6 tablespoons all purpose flour
3 cups chicken stock or canned low-salt broth

Steps:

  • Preheat oven to 325°F. Rinse turkey inside and out. Pat dry. Transfer to roasting pan. Mix vinegar and orange juice in bowl. Pour over turkey. Spoon 5 1/2 cups stuffing into main cavity and 1 cup stuffing into neck cavity of turkey. Close cavities with skewers. Place remaining stuffing in casserole; cover. Season turkey with salt and pepper. Tuck wings under turkey. Tie legs together. Rub butter all over turkey. Cover with foil and roast 1 1/2 hours. Remove foil. Increase oven temperature to 350°F. Continue roasting until thermometer inserted into thickest part of thigh registers 175°F, basting occasionally with pan juices, about 2 hours 15 minutes later. (Bake stuffing in covered casserole alongside turkey for final 20 minutes and while preparing Sherry vinegar gravy.)
  • Transfer turkey to platter. Tent with foil. Pour turkey pan juices into bowl. Do not wash roasting pan. Degrease juices. Pour juices back into roasting pan and place atop stove. Bring to boil, scraping up any browned bits. Pour into heavy large saucepan. Whisk in flour. Add stock and boil until slightly thickened, stirring often, about 10 minutes. Season with salt. Pour gravy into sauceboat.

EASY ONION GRAVY

Add this simple onion gravy recipe to your repertoire. It's the perfect accompaniment to sausages and roasts with the deep flavours of beef stock, red wine and herbs

25g butter
1 tbsp olive oil
1 bay leaf
2 sprigs of thyme
4 onions, sliced (red or white, or a mixture)
1 tsp sugar
1 tbsp flour
200ml red wine
2 tsp red wine vinegar
500ml beef stock (or vegetable stock)

Steps:

  • Melt the butter with the olive oil in a large frying pan over a medium heat, add the bay leaf and thyme and cook for a min to infuse the flavours of the herbs. Add the onions and coat well in the butter and oil, sprinkle over the sugar and a big pinch of salt and slowly cook the onions down for 45-50 mins, stirring occasionally until sticky and caramelised.
  • Add the flour and stir well, coating all of the onions. Cook for a min then add the wine and vinegar, turn up the heat and reduce by half, so about 2 mins, whisking a little to ensure the flour doesn't lump at all. Pour in the stock, bring to the boil and cook for 6-8 mins, until the gravy is thick enough to coat the back of spoon. If you cook it a bit too much and it gets too thick, add a splash of water. Season well and serve.

MAKE-AHEAD GRAVY

Prepare this traditional accompaniment to roast dinner before the main event - use off-cuts and plenty of onion to add flavour and colour

1kg chicken wing , halved with kitchen scissors
the turkey neck, if you have it, cut into pieces
3 large carrots , chopped into chunks
2 onions , unpeeled and chopped
3 celery sticks, chopped
small handful thyme sprigs
2 tbsp sunflower oil
2 tsp golden caster sugar
1 tbsp tomato purée
4 tbsp plain flour
4 tbsp balsamic vinegar
1 vegetable stock cube

Steps:

  • Heat oven to 220C/200C fan/gas 7. Tip the chicken wings into a roomy roasting tin with the turkey neck (if using), carrots, onions, celery and thyme. Scatter over the sugar, toss in the oil and roast for 50 mins until brown and lightly charred.
  • Get the kettle on. Put the roasting tin on a low heat, stir in the tomato purée and flour, and cook until sticky. Splash in the balsamic vinegar, then pour over 1.5 litres water to just cover all the ingredients. Bring to a simmer. Crumble in the stock cube and use a potato masher to mash all the ingredients together to release the flavour.
  • Simmer everything for 20 mins until you have a tasty thickened gravy, then strain it through a sieve, pushing down hard on all the mushy veg. Cool and chill for up to 3 days, or freeze for up to 3 months.
  • Heat the gravy to serve, adding roasting juices from your turkey, if you like.
