HOMEMADE BARBECUE SAUCE

Steps:
- Whisk together warm water, tomato paste and apple cider vinegar. This important step will help dissolve the tomato paste into the mixture.
- Add brown sugar, maple syrup, honey, and molasses and combine well. Add the spices and stir to incorporate.
- Bring to a simmer over medium to high heat. Stir continuously with a wooden spoon so it does not burn.
- Turn the heat down cook over medium to low heat until the mixture thickens. Continue to stir occasionally with a wooden spoon so the mixture does not burn.
- The sauce will thicken as it cools. To check the thickness, transfer a small amount to a small cup and place it in the freezer until cool.
- Place in a sterile jar or container and let cool completely. Keep in the refrigerator for up to 4 weeks. Or process in a water bath canner to make it shelf stable.

- In a large nonreactive saucepan, combine all the ingredients and bring to a boil, then turn off the heat and let cool to room temperature.
- Transfer the sauce to a container, cover, and refrigerate until ready to use.

- In a medium saucepan, stir together all of the ingredients: tomato sauce, tomato paste, apple cider vinegar, maple syrup, molasses, Worcestershire, smoked paprika, dry mustard, garlic, salt, black pepper, and cayenne pepper. Bring to a simmer over medium heat.
- Cover with a lid slightly ajar so that the pot is mostly covered to deter splattering, but steam can still escape and the sauce can reduce. Let cook, stirring occasionally, until the sauce thickens, about 10 to 15 minutes.
- Taste and adjust seasonings as desired. Enjoy immediately or let cool and store for later use.

MUSTARD & VINEGAR BARBECUE SAUCE
Though the first time I made this sauce, I was hesitant -- I mean, just LOOK at how much VINEGAR is in it! After "The Hasenpfeffer Incident" about 15 years ago, I've been extremely cautious of recipes that call for more than a few tablespoonsful of the stuff. But the lack of tomato sauce and the large amount of mustard intrigued me. After a while, that is...I had this gem sitting in my database for at least a year before I mustered (HA!) up the courage to serve it to my unsuspecting family. As it turned out, I had no reason for concern. I used it to baste chicken as I cooked it. They asked for seconds immediately, and for thirds, but alas, there were none. I was ordered to make chicken with this sauce again. And again. Since I do not currently have a grill, I used my grill pan, and cooked it over medium heat, covered with whatever lid I could find lying around that would sort of cover it, mostly. An added bonus of the grill pan is the sauce which collects in the bottom and caramelizes. They fight over who gets the pan scrapings! Plus, I had to explain what "caramelization" means, so the kids got a cooking lesson as well!

TOMATO BASED BARBECUE SAUCE
I was responsible for this recipe in class. It is not the typical BBQ sauce, but is out of this world. The list of ingredients may be long, but it is well worth it!! The will yield 1 qt of sauce, enough for 3-4 slabs of ribs or 4-6 chickens. It can also be canned. Just follow the instructions for canning high acid foods. This is also a mild sauce, but you may add 1/4 tsp. of cayenne pepper (or to taste) for a hotter sauce. The chiles used in this recipe are the large dried MILD red chiles called California or New Mexico chiles.

- Heat the oil in a large saucepan over medium high heat.
- Add the onion, garlic and ginger.
- Saute until the onion is translucent, about 5 minute.
- Add the tomatoes, oregano, chile pieces, vinegar, honey, and soy sauce.
- Stir to combine and lower the heat to medium low.
