2 cups uncooked glutinous rice
2 cups water
2 cups thick coconut milk
1 1/2 cups dark brown sugar or 1 1/2 cups shaved palm sugar

Steps:

  • Put rice and water in a rice cooker and cook until rice is done, about 60 minutes.
  • Put the coconut milk in a saucepan. Bring to a boil over medium heat.
  • Add the brown sugar or palm sugar and simmer, stirring constantly until mixture becomes thick, about 15 minutes.
  • Add the cooked rice and simmer, stirring constantly, until most of the liquid has been absorbed.
  • The mixture should still be slightly moist.
  • Press into a square pan, cut & enjoy!

1/2 cup quick oats
1/2 cup packed brown sugar
1/2 cup butter
2 (15 ounce) cans pumpkin
2 (12 ounce) cans evaporated milk
4 eggs
1 1/2 cups sugar
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon clove
1 teaspoon salt
1/2 cup packed brown sugar
1/2 cup chopped pecans
2 tablespoons butter, softened

Steps:

  • Mix first 4 ingredients until crumbly; press into greased 13x9 baking pan.
  • Bake at 350° for 20 minutes.
  • While the crust is baking: Beat all filling ingredients in lg bowl until smooth.
  • Pour into crust; bake for 45 minutes.
  • Topping: Mix the topping ingredients; sprinkle over filling and bake another 15 minutes until knife comes out clean.
