Pork Chops:
2 small shallots, thinly sliced into rings
1/4 cup reduced-sodium soy sauce
2 tablespoons fish sauce (such as nam pla or nuoc nam)
2 tablespoons sugar
1/2 teaspoon Sriracha
4 1"-thick bone-in pork chops (about 2 1/2 pounds total)
Salad:
6 tablespoons vegetable oil, divided
4 small shallots, thinly sliced
Kosher salt
1 tablespoon unseasoned rice vinegar
1 teaspoon reduced-sodium soy sauce
1/4 teaspoon sugar
Freshly ground black pepper
4 cups trimmed purslane or arugula
1/2 pound seedless watermelon, rind removed, cut into pieces, thinly sliced
1/2 cup Pickled Watermelon Rind , thinly sliced

Steps:

  • Pork Chops:
  • Whisk shallots, soy sauce, fish sauce, sugar, and Sriracha in a shallow baking dish. Add pork chops and turn to coat. Cover and chill, turning occasionally, at least 1 hour.
  • Prepare grill for medium-high heat.
  • Remove pork chops from marinade, scraping off excess, and grill until cooked through, about 3 minutes per side.
  • Do ahead: Pork chops can be marinated 12 hours ahead. Keep chilled.
  • Salad:
  • Heat 4 tablespoons oil in a small saucepan over medium heat. Add shallots and cook, stirring occasionally, until golden brown and crisp, about 4 minutes. Transfer to paper towels to drain; season with salt.
  • Whisk vinegar, soy sauce, sugar, and remaining 2 tablespoons oil in a large bowl; season with salt and pepper. Add purslane, watermelon, and Pickled Watermelon Rind; season with salt and pepper and toss gently to coat.
  • Serve pork chops with watermelon salad topped with fried shallots.

2 tablespoons packed brown sugar
2 tablespoons low-sodium soy sauce
1 tablespoon fish sauce
2 tablespoons finely chopped fresh lemongrass (or 1 tablespoon grated lemon zest)
2 cloves garlic, grated
1 shallot, finely chopped
4 thin bone-in pork chops (about 4 ounces each)
1 cup jasmine rice
1 2-inch piece ginger, peeled and grated (about 2 tablespoons)
1/2 cup roughly chopped fresh mint
2 Persian cucumbers, diced
Kosher salt and freshly ground pepper

Steps:

  • Combine 1/4 cup water with the brown sugar, soy sauce, fish sauce, lemongrass, garlic and shallot in a shallow dish. Add the pork chops and turn to coat. Let marinate 15 minutes.
  • Meanwhile, cook the rice as the label directs, adding the grated ginger to the water.
  • Preheat the broiler. Remove the pork chops from the marinade; transfer to a broiler pan (reserve the marinade). Broil until the pork is charred and cooked through, 6 minutes. Transfer the marinade to a skillet; add 1/4 cup water and bring to a boil over high heat. Cook, stirring occasionally, until thickened, about 3 minutes.
  • Fluff the rice with a fork and stir in the mint and cucumber; season with salt and pepper. Serve the pork with the rice and pan sauce.

2 cups white distilled vinegar
3 tablespoons sugar
2 tablespoons kosher salt
2 cups julienned daikon radish (cut into strips or run through a mandoline)
1 cup julienned carrots
1/2 English cucumber, partially peeled in sections to leave some skin on, cut into half moons
1 cup mayonnaise
1 to 2 tablespoons Sriracha
1/2 teaspoon toasted sesame oil
2 tablespoons vegetable oil
1 large yellow onion, 1/4-inch dice (about 2 cups)
1 heaping tablespoon peeled and finely grated ginger
8 cloves garlic, minced
2/3 cup chicken stock
1/2 cup fish sauce
1/2 cup hoisin sauce
1/2 teaspoon ground black pepper
2 pounds ground pork
Six 8-inch hoagie rolls
2 fresh jalapenos, halved and thinly sliced
1 cup fresh cilantro leaves
1/2 cup salted roasted peanuts, chopped

Steps:

  • For the pickled vegetables: Heat the vinegar, sugar and salt in a small pot until the sugar and salt are dissolved. Pour the hot vinegar mixture over the daikon, carrots and cucumbers. Let steep for at least an hour.
  • For the spicy mayonnaise: Mix the mayonnaise, Sriracha and sesame oil together. Adjust the heat by either adding more Sriracha or mayonnaise.
  • For the pork: Heat the canola oil in a straight-sided skillet over medium heat. Add the onions and cook until slightly softened, 4 to 6 minutes. Add the ginger and garlic and cook another 2 minutes. Add 1/2 cup of the pickling liquid from the pickled vegetables and cook until reduced by half, 1 to 2 minutes. Add the chicken stock, fish sauce, hoisin sauce and black pepper and stir to combine. Simmer until reduced slightly and thickened, 10 to 15 minutes. Add the ground pork, breaking up the meat with the back of a wooden spoon or spatula, and cook until the pork is cooked through, 6 to 8 minutes.
  • For the sandwich build: Preheat the oven to 350 degrees F. Heat the rolls for 5 minutes, to crisp the crust and soften the interior. Slice the rolls open, but keep them hinged. Schmear desired amount of spicy mayo on the bottom roll, place some pork on top of that, top with some pickled vegetables, fresh jalapenos, cilantro leaves, and finish with the chopped peanuts. Grab with two hands, eat whole and close your eyes while enjoying this first class ticket to Saigon.

Steps:

  • Whisk shallot, brown sugar, fish sauce, vinegar, and pepper in a shallow dish. Using a fork, pierce pork chops all over (to allow marinade to penetrate faster) and add to marinade in dish. Turn to coat. Cover and let pork chops marinate at room temperature, turning occasionally, 20 minutes.
  • Remove pork chops from marinade, scraping off excess (reserve marinade for sauce). Heat oil in a large skillet over medium-high heat. Lightly season pork chops with salt. Cook until browned and cooked through, about 4 minutes per side. Let pork chops rest 10 minutes before serving.
  • Meanwhile, bring marinade to a boil in a small saucepan and cook until reduced to 1/4 cup, about 4 minutes. Serve pork chops with reduced marinade and lime halves.
  • DO AHEAD: Chops can be marinated 1 day ahead. Chill, turning bag occasionally.

4 pork loin chops with bone
4 eggs
2 teaspoons chopped garlic
1 tablespoon chopped onion
1 pinch salt and pepper
2 teaspoons fish sauce
1 teaspoon sugar
1 whole fresh chili pepper
1 tablespoon sugar
1/4 cup water
2 tablespoons fish sauce

Steps:

  • To prepare the pork chops: add the pork chops, garlic, onion, pich of salt, pepper, 2 tsp of fish sauce, 1 tsp of sugar. Cover and place in the fridge for at least 6 hours.
  • On medium heat, add 2 tbsp of vegetable oil.
  • Add the chops, cook for about 7 minutes each side.
  • To prepare the eggs: add a tbsp of vegetable oil.
  • Drop in four eggs.
  • Cook for 1 minutes.
  • To prepare the fish sauce: add 1tbsp of sugar, add one fresh chili, add 1/4 cup of water.
  • Stir well until sugar is dissolved.
  • Add 2 tbsp of fish sauce.
  • Stir again.
  • Enjoy.
